A recipe from my Timeless Recipes cookbook. A rich crab & artichoke stuffed portobello. This would be a great entertaining dish to wow your guests!

1/2 cup balsamic vinegar
1/4 cup extra-virgin olive oil
1/2 teaspoon garlic, minced
salt and pepper
6 -8 portabella mushrooms, stems removed
1 lb crabmeat
1 (14 ounce) can water-packed artichoke hearts, quartered
1/2 cup cream cheese, softened
1/4 cup mayonnaise
1 lemon, juice of
1 tablespoon Worcestershire sauce
4 plum tomatoes

Steps:

  • Combine the balsamic vinegar, olive oil, garlic, salt and pepper in a bowl and mix well. Marinate the mushrooms in the vinegar mixture for 20 minutes. Combine the crab meat, artichoke hearts, cream cheese, mayonnaise, lemon juice, worcestershire sauce, salt and pepper in a bowl and mix well. Remove the mushrooms from the marinade and discard the marinade. Grill the mushrooms over hot coals until they begin to get soft. Place them stem side up on a baking sheet. Cut each tomato into 5 slices and arrange on top of the mushrooms. Divide the crab mixture evenly and place firmly on top of the tomatoes. Bake at 350 degrees for 15-20 minutes or until the mushrooms are tender and the stuffing is heated through. Prep time includes marinating time.

These mushrooms were created to impress my boyfriend when we first started dating. These are now his absolute favorite.

3 slices bacon
½ (8 ounce) package cream cheese, softened
2 tablespoons grated Parmesan cheese
3 drops Worcestershire sauce
2 dashes ground black pepper
1 pound mushrooms, stems removed
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Place the bacon in a large, deep skillet and cook over medium-high heat, turning occasionally, until crisp and evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate; crumble the drained bacon into a bowl. Stir in the cream cheese, 2 tablespoons Parmesan cheese, Worcestershire sauce, and pepper until evenly mixed. Spoon the filling into the mushroom caps and place into an 8x8-inch baking dish. Sprinkle with the remaining 2 tablespoons of Parmesan cheese.
  • Bake in the preheated oven until the mushrooms are tender and the filling is golden brown, 25 to 30 minutes.

Number Of Ingredients 13

6 large portabella mushrooms, stems removed
1/4 cup 2% low-fat milk or 1/4 cup soymilk
1/2 cup breadcrumbs
1 tablespoon butter
1/4 cup red onion, minced
1/2 cup red bell pepper, minced
1 lb lump crabmeat
2 tablespoons parsley, plus some for topping
1 teaspoon Old Bay Seasoning
2 teaspoons baking powder
1 tablespoon Worcestershire sauce
1 egg, slightly beaten
6 lemon wedges

Steps:

  • Preheat the oven to 375 degrees.
  • In a mixing bowl, combine milk and breadcrumbs and set aside. In a small fry pan, heat the butter and saute the onions and bell peppers until tender. Remove from stove and let cool a bit.
  • With a small spoon, remove the gills of the Portobello mushrooms until they are smooth inside. Place them in an oiled baking dish. Pick through the crab making sure there are no shells. Put the onions, bell peppers, crab meat, parsley, Old Bay seasoning, baking powder, Worcestershire sauce and egg into the bowl with the bread crumbs and milk. Toss gently to combine leaving nice chunks of crab intact. Fill the Portobello mushrooms with the crab mixture. Loosely cover the baking dish with aluminum foil and bake for 35 minutes. Remove from the oven. Top each stuffed Portobello with chopped parsley and serve with a wedge of lemon.
