3 cups water
3 1/2 cups sugar
1 vanilla pod, split lengthwise
2 tablespoons lemon juice
8 peaches
3 cups raspberries
1/4 cup confectioners' sugar
1 tablespoon lemon juice
1 large tub vanilla ice

Steps:

  • Put the water, sugar, lemon juice, and vanilla pod into a wide saucepan and heat gently to dissolve the sugar. Bring the pan to the boil and let it bubble away for about 5 minutes, then turn the heat down to a fast simmer.
  • Cut the peaches in half, and if the stones come out easily then remove them, if not then you can get them out later. Poach the peach halves in the sugar syrup for about 2 to 3 minutes on each side depending on the ripeness of the fruit. Test the cut side with the sharp point of a knife to see if they are soft, and then remove them to a plate with a slotted spoon.
  • When all the peaches are poached, peel off their skins and let them cool (then you can remove any remaining stones). If you are making them a day in advance then let the poaching syrup cool and then pour into a dish with the peaches. Otherwise just bag up the syrup and freeze it for the next time you poach peaches.
  • To make the raspberry sauce, liquidize the raspberries, confectioners' sugar, and lemon juice in a blender or a food processor. Sieve to remove the pits and pour the puree into a jug.
  • To assemble the Peach Melba, allow 2 peach halves per person and sit them on each plate alongside a scoop or 2 of ice cream. Spoon the raspberry sauce over each.

A classic peach Melba is a dessert of poached peach halves and raspberry sauce with vanilla ice cream, invented by the French chef Auguste Escoffier, and named after the Australian soprano Nellie Melba. This not-so-classic version calls for sliced ripe peaches instead of cooked peach halves. Look for the best vanilla ice cream, with real vanilla, or make your own. Easy to assemble, it's a lovely, refreshing and elegant dessert, perfect for when peaches and raspberries are in season.

1 cup ripe red raspberries, plus more for garnish
2 tablespoons plus 2 teaspoons granulated sugar
6 ripe, sweet freestone peaches
A few drops of lemon juice
1 quart vanilla ice cream

Steps:

  • Make the raspberry sauce: Put 1 cup raspberries and 2 tablespoons sugar in a blender and whiz to liquify. Pour through a fine-meshed strainer and into a medium bowl. Keep cool.
  • Using a paring knife, peel and halve the peaches. Slice the halves into half-moon pieces about 3/8-inch thick. Transfer to a bowl. Add 2 teaspoons sugar and a few drops of lemon juice to taste. Toss to coat.
  • To serve, arrange peach slices in the bottom of 6 dessert bowls. Top each serving with a scoop or 2 of vanilla ice cream. Splash raspberry sauce over each portion. Garnish with a few raspberries if you wish.

150ml double cream
½ tsp vanilla extract
40g icing sugar
½ glass champagne or prosecco, to serve (optional)
3 scoops vanilla ice cream (the best quality you can afford)
2 peaches , cut into wedges
75g raspberries
1 tbsp almond flakes , toasted, to serve
75g raspberries
1 tbsp caster sugar
1 lime , juiced

Steps:

  • Put a sundae glass or bowl in the freezer to chill. To make the sauce, put the raspberries, sugar and lime juice in a blender, and blitz to a purée, loosening with a splash of water if necessary. Set aside. Meanwhile, whip the cream with the vanilla and icing sugar until it holds its shape, then transfer to a piping bag fitted with a star-shaped nozzle, if you like.
  • Pour the champagne or prosecco (if using) into the chilled glass, then neatly layer balls of ice cream, peach wedges, raspberries, raspberry sauce and cream, finishing with a big swirl of cream on the top. Scatter with the toasted almonds and serve straight away with two spoons.

3 tablespoons butter, cut into pieces
4 peaches, sliced
Pinch salt
1 teaspoon lemon juice
3 tablespoons brown sugar
1/4 teaspoon ground cinnamon
Pinch nutmeg, to taste
1/2 pint raspberries
1 pint vanilla ice cream

Steps:

  • Lightly crush gingersnap cookies and add to food processor. Crumb the cookies with pulse setting of the processor.
  • Heat the butter to melt in a medium skillet over medium heat. Add the peaches to the skillet and season with salt, add lime juice and saute to soften the slices 6 to 7 minutes. Sprinkle in brown sugar and toss to coat. Season peaches with cinnamon and nutmeg. Spoon peaches into dessert cups and top with small scoops of ice cream, top with ginger crumbles.

3 cups fresh or frozen raspberries
⅓ cup white sugar
1 tablespoon lemon juice
1 tablespoon water
⅛ teaspoon balsamic vinegar
2 cups white sugar
2 cups water
2 tablespoons lemon juice
1 vanilla bean, split lengthwise
3 peaches, halved and pitted
6 scoops vanilla ice cream
¼ cup sliced almonds

Steps:

  • Combine raspberries, 1/3 cup sugar, 1 tablespoon lemon juice, water, and balsamic vinegar in a saucepan over medium heat. Bring to a simmer and cook until sugar dissolves and berries collapse, 2 to 3 minutes. Remove from heat and strain into a bowl. Cool to room temperature, cover and refrigerate until thoroughly chilled.
  • Combine 2 cups sugar, 2 cups water, 2 tablespoons lemon juice, and split vanilla bean in a large saucepan and bring to a simmer over medium heat.
  • Place peach halves with cut sides up in the syrup and simmer until tender, 5 to 8 minutes per side, basting with the syrup occasionally. Remove from heat and allow to cool in the syrup. Transfer to a bowl, cover, and refrigerate until thoroughly chilled, about 4 hours.
  • Remove peach skins and serve each peach half on top of a scoop of ice cream in a bowl. Spoon the raspberry sauce over the top. Garnish with toasted, slivered almonds.

Nectar of the gods! I made this for an upcoming ice cream competition and it's going to clean house! Truly decadent, Raspberries, peaches and cream--be still my heart. If you want to be truly wicked add chocolate shavings and/or substitute chocolate syrup for the fruit spread. Beautiful natural color. Cook time is freeze time.

3 large sweet peaches, peeled and pitted (1 1/4 lb)
1/4 peach nectar
2 tablespoons lemon juice
1/4 teaspoon salt
3/4 cup sugar
2 large eggs
2 tablespoons flour
1 cup milk
1 cup whipping cream
1 cup raspberries
1 cup chopped peach
1 cup raspberries
1/2 cup raspberry spreadable fruit (warmed or mixed with 2 tbsp water to thin)

Steps:

  • Puree peaches and raspberries with nectar, lemon juice, and salt; set aside.
  • Beat sugar and eggs till smooth; set aside.
  • Simmer milk in medium saucepan.
  • Slowly beat hot milk into egg mixture.
  • Put this mixture back into saucepan over low heat stirring constantly until slightly thickened.
  • Strain if any lumps.
  • Coll slightly then mix in cream and puree.
  • Chill, overnight if needed.
  • Stir.
  • Freeze in ice cream machine.
  • Fold in peaches and berries.
  • Swirl in fruit spread.
  • DO NOT OVERMIX--should see streaks.
  • Freeze in freezer until firm.

6 medium firm-ripe peaches (2 1/4 lb)
1 1/3 cups sugar
2 cups water
1 (1-inch) piece vanilla bean
For raspberry sauce
1 (12-oz) package frozen raspberries (not in syrup), thawed
1/2 cup sugar
1/3 cup water
2 teaspoons fresh lemon juice
Accompaniment: 2 pt superpremium vanilla ice cream

Steps:

  • Poach peaches:
  • Cut a shallow X in bottom of each peach with a sharp paring knife and immerse fruit in a 4-quart heavy pot (preferably wide) of boiling water 30 seconds, then transfer with a slotted spoon to a bowl of ice and cold water to stop cooking. Transfer peaches to a cutting board and peel, starting with cut end, then cut in half, discarding pits.
  • Combine sugar and water in cleaned pot. Halve vanilla bean lengthwise with a paring knife and scrape seeds into pot, then add pod and bring mixture to a boil, stirring until sugar is dissolved. Add peaches, pitted sides down, to sugar syrup, then reduce heat and poach, covered, at a bare simmer 6 minutes. Turn peaches over and continue to poach, covered, until tender, 5 to 6 minutes more.
  • Cool peaches in poaching liquid in pot, uncovered, 1 to 1 1/2 hours.
  • Make raspberry sauce while peaches cool:
  • Force raspberries through a fine-mesh sieve into a bowl, pressing hard on solids.
  • Combine sugar and water in a small heavy saucepan. Cover pan (so condensation will wash any sugar crystals down side of pan) and bring to a boil, then remove lid and boil 2 minutes.
  • Immediately stir sugar syrup into raspberry purée and cool to room temperature, about 1 hour. Stir in lemon juice. 3Serve peaches over ice cream and drizzled with sauce.

1 cup, plus 2 tablespoons sugar
Juice of 1 lemon
4 firm ripe freestone peaches, halved and pitted
1 cup raspberries
Vanilla ice cream, for serving

Steps:

  • In a medium saucepan, combine 1 cup sugar and 2 cups water. Bring to a simmer, and cook, stirring occasionally, until sugar has dissolved. Add lemon juice and peaches. Simmer until peaches are tender when pierced with the tip of a knife, about 10 minutes. Remove from heat, and let stand until room temperature. Carefully remove skins from peaches, and discard. Transfer to a bowl, and refrigerate until chilled.
  • Place raspberries in a fine sieve set over a small bowl. Using a rubber spatula, pressing on the raspberries to extract as much juice as possible; discarding solids. Add remaining 2 tablespoons sugar to raspberry juice, and stir until the sugar is dissolved. Serve chilled peaches with vanilla ice cream and raspberry sauce.

I found this in my newspaper. It is originally from "The Perfect Scoop" by David Lebovitz. It is the ultimate taste of summer, melding peach ice cream with a fresh raspberry swirl.

1 1/3 lbs peaches (about 4 large peaches)
1/2 cup water
3/4 cup sugar
1/2 cup sour cream
1 cup heavy cream
1/2 teaspoon vanilla extract
3 drops fresh lemon juice
1 1/2 cups raspberries (plus more for garnish)
3 tablespoons sugar
1 tablespoon vodka

Steps:

  • First peel the peaches. Cut an X at the bottom then lower them into a pot of boiling water for about 20 seconds. Using a slotted spoon, transfer them to a collander and shock them with cold water. Let them cool and the skin will peel right off.
  • Cut the peaches in half, remove the pits and cut them into chunks. Cook them with the water in a medium, nonreactive saucepan over medium heat, covered, stirring once or twice, until soft and cooked through, about 10 minutes.
  • Remove from heat, stir in the sugar and then cool to room temperature. Remove about 1/4 of the peaches and cut them into slightly smaller chunks and reserve. Puree the rest of the peaches and their liquid in a blender or food processor with the sour cream, heavy cream, vanilla and lemon juice until almost smooth. Add the reserved peaches back in and chill the mixture thoroughly, preferably overnight, in the refrigerator.
  • Freeze in your ice cream maker according to directions.
  • An hour or so before churning the ice cream, make the raspberry swirl by mashing the raspberries together with the sugar and vodka with a fork until they're juice but with nice-sized chunks of raspberry remaining. Chill until ready to use.
  • When you remove the peach ice cream from the ice cream machine, layer it in a container with spoonfuls of the chilled raspberry-swirl mixture. Freeze until ready to serve. It will get really hard after about 3 hours, so you may want to let it warm up a little for ease of scooping. Garnish with fresh raspberries.
