1 cup all-purpose flour
1/4 cup packed light brown sugar
1 cup pecans, chopped
1/2 cup butter, melted
2 (8 ounce) packages cream cheese, softened
1 cup granulated sugar
3 eggs
1 teaspoon vanilla or 1 teaspoon almond extract
fresh berries, and
mint leaf, for garnish

Steps:

  • Preheat oven to 350 degrees F.
  • Combine flour, brown sugar, pecans, and butter in bowl.
  • Press dough into an ungreased (I grease pan as bars tend to stick if you do not) 13 by 9 by 2-inch pan.
  • Bake for 12 to 15 minutes or until lightly browned.
  • For filling, beat cream cheese and granulated sugar together in a bowl until smooth, using a handheld electric mixer; add eggs and extract; beat well. Pour over crust.
  • Bake for 20 minutes.
  • Cool completely.
  • Cut into squares before serving.
  • Decorate tops with berries and mint leaves.

This is from the book, The Lady & Sons Savannah Country Cookbook by Paula Deen. This cake looks wonderful! I love cheesecakes in 9x13's, and the fact that it's made with a cake mix makes it look really quick and easy. I can't wait to try this.

1 (18 3/4 ounce) package yellow cake mix
4 eggs
1/4 cup vegetable oil
2 (8 ounce) packages cream cheese, at room temperature
1 (14 ounce) can sweetened condensed milk
2 teaspoons grated lime zest
1/3 cup fresh lime juice
1 teaspoon vanilla
1 (8 ounce) container Cool Whip or 2 cups heavy cream, whipped with
1/2 cup sugar, until stiff
lime slice, for garnish

Steps:

  • Preheat oven to 300 degrees.
  • Reserve 1/2 c dry cake mix.
  • In large bowl, combine remaining cake mix, 1 egg, and oil.
  • Mix well (mixture will be crumbly).
  • Press evenl in bottom and 1 and 1/2 inches up sides of greased 13x9 inch pan.
  • In same bowl, beat cheese until fluffy.
  • Beat in condensed milk until smooth.
  • Add remaining eggs and reserved cake mix and beat 1 minute at medium speed.
  • Stir in lime zest, lime juice and vanilla.
  • Pour into prepared crust.
  • Bake for 50 - 55 minutes or until center is firm.
  • Cool to room temperature.
  • Chill thoroughly.
  • Spread Cool Whip over top.
  • Cut into squares to serve.
  • Garnish with lime slices.

I love this yummy little oatmeal cookie packed with nuts and raisins and a wonderful combination of spices and then topped with a drizzle of brown butter glaze. It is another of my favorite Paula Deen (FoodTV) recipes. If you can keep yourself from eating them all the day you make them, they are even better the next day (stored tightly wrapped).

1/2 cup butter, softened (1 stick)
1/2 cup vegetable shortening
1 1/2 cups packed light brown sugar
2 eggs
1/2 cup buttermilk
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon ground ginger
1 teaspoon freshly ground nutmeg
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon ground allspice
2 1/2 cups quick-cooking oatmeal
1 cup raisins
1 1/2 cups chopped walnuts or 1 1/2 cups pecans
1 teaspoon pure vanilla extract
1/2 cup butter
2 -3 cups sifted powdered sugar (see note below)
1 teaspoon vanilla extract
3 -4 tablespoons water

Steps:

  • Preheat oven to 350°F Lightly grease cookie sheets. With electric mixer cream together butter, shortening and sugar in a bowl until fluffy. Add eggs and beat until mixture is light in color. Add buttermilk (it will appear a little curdled at this stage, don't worry).
  • Sift together flour, baking soda, salt, baking powder, ginger, nutmeg,cinnamon, cloves and allspice; stir into creamed mixture. Stir in oatmeal, raisins, walnuts and vanilla, blending well. (Dough will be soft and sticky).
  • Drop by rounded teaspoons onto cookie sheet. (I use a small cookie dough scoop that looks like an ice cream scoop--makes this job easy and ensures uniformly rounded cookies).
  • Bake for 12 to 15 minutes. Oven temperatures and size of cookies you make vary, so check your first batch at least by 9 to 10 minutes.
  • For Brown Butter Glaze: In a small saucepan, melt butter over medium heat, then continue to cook, stirring occasionally until butter is a golden brown.
  • Remove pan from heat and stir in the powdered sugar and vanilla. Stir in enough water to make the icing of drizzling consistency. Drizzle over warm cookies.
  • *Cook's Note: Paula Deen's original recipe calls for 3 cups of sifted powdered sugar. I found that to be too much. I also found it easier to bake all of the cookies and line them up closely on cooling rack, then make glaze and drizzle cookies all at one time. You get a more consistent glaze this way as it tends to harden as it cools.

1/4 c brown sugar, firmly packed
1 c chopped pecans
1 stick butter, melted
2 - 8 oz packages of cream cheese
1 c granulated sugar
3 eggs
1 tsp vanilla extract
fresh berries, and mint

Steps:

  • 1. Preheat oven 350F Mix crust: flour, brownd sugar, pecans and butter mix well. Press dough into an ungreased 13x9 inch pan. Bake for 12-15 minutes or until lightly browned.
  • 2. For filling: beat cream cheese and sugar together in a bowl with a hand mixer until smooth, add in vanilla and eggs blind well. Pour into crust, bake for 20 minutes. Cool completely.

I like to add other seafood and fish to make it even more hearty or just because I'm a meat lover. Some times I'll add corn kernals or mini cob on the cob.Serve over rice (a SC favorite) or pasta.

2 tablespoons butter
1 onion, chopped
1 green bell pepper, chopped
1 tablespoon chopped garlic (2-3 cloves)
2 cups sliced smoked sausage
4 large boneless chicken breasts, diced
4 cups chicken broth
1 (28 ounce) can diced tomatoes
2 cups cut okra
1 teaspoon dried thyme
2 bay leaves
1 teaspoon file powder
salt and pepper

Steps:

  • In a 5 quart pot combine the flour and butter and cook over medium heat, stirring constantly, until the roux has a brown to a light chocolate color.
  • Add the onion, pepper, and garlic and saute for 2 minutes.
  • Add the sausage, chicken, broth, tomatoes, okra, thyme, bay leaves, and cayenne, and simmer over low heat for 45 to 50 minutes.
  • Add the file powder and salt and pepper to taste.
  • Remove and discard the bay leaves.
  • Serve the gumbo over rice. For an extra special pot of gumbo, throw in some peeled before adding the file.

12 miniature peanut butter cups

1 teaspoon pure vanilla extract or 1 teaspoon almond extract
2 eggs

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Place a paper cupcake liner in each cup of a standard muffin pan.
  • To make crust, in a bowl, combine graham cracker crumbs, sugar and melted butter until crumbs are moistened.
  • Press some crust into the bottom of each muffin cup.
  • Put 1 peanut butter cup into the center of each crust.
  • Beat cream cheese with a handheld electric mixer until fluffy.

This recipe was on Paula's Food TV show. They are to die for! I made these because my partner will not eat anything with cream cheese in it. I thought I would actually have cookies to eat the next day. I was so wrong. I made a double batch and only had 3 cookies in all. I did not find these to be Gooey. More delicate and cake like. Be sure not to over bake. *Prep time includes 2 hour chilling time. *NOTE - On her show she did add oil...I don't know the amt. I added no oil the 4 times I have made these and I don't feel its needed...My hips agree :) UPDATE: I have also used FF Cream Cheese with good results. Any flavor cake mix works well! Please also note that the directions do state that dough will be very stiff. I use my stand mixer with no problems. Please use caution if using a hand mixer.

  • Beat in egg. Then add in the vanilla.

  • Cover and refrigerate 2 hours until firm enough to roll into balls.
  • Roll the chilled dough into tablespoon sized balls.
  • Roll in confectioner's sugar.
  • Place on an ungreased cookie sheet, 2 inches apart.
  • Bake 12 minutes.
  • (The cookies will remain soft and look somewhat under-baked.).
  • Allow to slightly cool and very carefully remove to wire racks to cool. (they are very delicate and tend to fall apart easily).
  • Cool completely. Sprinkle with more confectioners sugar if desired.
