TOMATO RICE SOUP
This is an elegant version of the old-fashioned tomato and rice soup, studded with fresh seafood. If you want a simpler dish, omit the seafood. If you are lucky enough to have a garden full of fresh tomatoes, you can substitute them for the canned variety. Use about 1 and 1/2 pounds ripe tomatoes, cored and chopped.

Steps:
- Heat oil in a large saucepan over medium heat. Add the onion, celery, and carrot; cook and stir vegetables until they begin to soften, approximately 2 to 3 minutes. Add rice and cook, stirring until rice is evenly coated in oil, 1 to 2 minutes. Stir in undrained tomatoes, chicken broth, and salt and pepper. Bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
- Rinse the scallops, and if large cut scallops in half. Stir the scallops into soup, and cover. Continue to simmer until the rice is tender and the scallops are opaque, approximately 5 to 10 minutes.
- Season to taste with salt and pepper. Stir in the basil, and serve.

Steps:
- In a large pot over medium high heat, cook ground beef and onions, breaking up larger ground beef pieces, until beef is thoroughly cooked and no longer pink. Drain off fat.
- Stir in tomatoes, beans, and broth; bring to a simmer over medium-high heat. When mixture begins to bubble, add vegetables and rice. Allow to come back to a simmer; reduce heat to medium for a gentle simmer.
- Cook until rice is tender and vegetables are warmed through, about 8 minutes.

TOMATO-RICE SOUP, ITALIAN STYLE
This is a hearty recipe that is a lunch-time favorite, especially with a grilled cheese sandwich. When tomatoes are over-abundant in my garden, I use fresh tomato puree - my preferred method. This is an adaptation of a recipe found in The Encyclopedia of Creative Cooking by Charlotte Turgeon, published in 1984.

- If using fresh tomatoes, use a food mill or press them through a colander. Set aside.
- Melt butter in large sauce pan. Saute onion and celery until the onion is clear and celery is soft.
- Combine tomato puree or ready-cut tomatoes, broth, and onion-celery mixture in blender. Blend until smooth. Push through a medium seive to remove any remaining celery strings. Pour back into sauce pan. Add seasonings and uncooked rice. Simmer for 1 to 1-1/2 hours until rice is tender and soup has thickened somewhat.
- NOTE: if using white rice, reduce cooking time to 20-30 minutes.
- Serve garnished with parmesan cheese.

- Lower the temperature and simmer for about 60 - 75 minutes or until the liquid is reduced to about half of the original amount.

TOMATO, RICE AND ITALIAN SAUSAGE SOUP
I hope you enjoy this soup, which I've been making for what seems like forever!! 10/09 NOTE: This recipe is my original one, made when the kids were little and didn't like too much spice. Now I sometimes doctor it up adding garlic, red pepper flakes, or whatever. This soup is very forgiving, so do your own thing! I originally did not add the sugar quantity in the recipe, so have now corrected this.

- Saute bacon and onion together until lightly browned. Drain off fat.
- In soup pot, add peeled and diced fresh tomatoes or break up canned tomatoes. Add sugar, then bacon/onion mixture. Simmer for 10 minutes.
- Meanwhile, in separate pan cook sausage covered in water for 15 minutes. Drain, then cut into slices.
- Place sausage in soup pot with bacon/tomato mixture. Add beef stock or broth and oregano, then bring to a rolling boil.
- Stir in rice. Cook over medium heat uncovered until approximately 10 minutes until rice is tender, adding additional broth if needed.
- Remove from heat then stir in parmesan cheese and butter. Salt and pepper to taste.
- Put in serving bowls and sprinkle on minced fresh parsley. Additional parmesan cheese may also be sprinkled on.
TOMATO RICE SOUP WITH GARLIC AND CANNELLINI BEANS
This is an adaptation from a delicious soup from Veganomicon. Their soup uses olive oil instead of butter and has no cauliflower. They also use roasted garlic. Both versions are delicious, filling and quick to make.

- Melt the butter in a stock pot over medium head and add the onion. Saute for about 5 minutes and then add the herbs, salt, bay leaves and rice. Saute for 2 minutes.
- Add the tomatoes and water and bring to a boil. Lower the heat to a simmer and simmer for about 20 minutes, stirring occasionally.
- After 20 minutes add the cauliflower and cook until just tender, about 5 minutes.
- Add the beans and the garlic and continue cooking for about 5-8 minutes or until the cauliflower is tender and the garlic has lost its rawness.
- Serve with a grilled cheese sandwich for a special treat:-).

TOMATO & RICE SOUP

- Heat the oil in a large saucepan and add the onion, carrot and celery, then cook gently until softened. Add the sugar and vinegar, cook for 1 min, then stir through the tomato purée. Add the chopped tomatoes or passata, the vegetable stock, and any brown rice, if using, then cover and simmer for 10 mins. If you are using wild rice, add this and simmer for 10 mins more. Finally, add any white rice you're using, and simmer for a final 10 mins until the rice is tender.
- Just before serving, sprinkle over some chopped parsley and season to taste. Divide into bowls and add a swirl of pesto to each, if you like.
