4 tablespoons unsalted butter
1 tablespoon minced bacon (about 1/2 ounce)
1 Spanish onion, chopped
1 carrot, chopped
1 stalk celery, chopped
4 cloves garlic, minced
5 tablespoons all-purpose flour
5 cups chicken broth, homemade or low-sodium canned
1 (28-ounce) can whole, peeled tomatoes (with liquid), roughly chopped
3 parsley sprigs
3 fresh thyme sprigs
1 bay leaf
1 cup heavy cream
1 3/4 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • Heat the butter in a large soup pot over medium-high heat. Add the bacon and cook, stirring, until crisp and most of the fat has rendered, about 1 minute. Using a slotted spoon, transfer the bacon to a paper towel-lined plate and set aside. Lower the heat to medium, add the onion, carrots, celery, and garlic and cook, covered, stirring occasionally, until soft and fragrant, about 8 minutes.
  • Stir in the flour and cook, stirring, for 3 minutes. Pour in the broth and tomatoes and bring to a boil while whisking constantly. Tie the parsley sprigs, thyme, and bay leaf together with a piece of kitchen twine and add to the pot. Lower the heat and simmer for 30 minutes. Remove from the heat and allow to cool.
  • When the soup base is cool, remove and discard the herb bundle. Working in batches, transfer the mixture to a blender and puree until smooth. Using a sieve over a large bowl, strain the tomato puree. Return the puree to the pot and reheat over medium heat.
  • Whisk the heavy cream and salt into the soup and season with pepper to taste. Divide among warm soup bowls, garnish with the crispy bacon, and serve immediately.

Two 28-ounce cans whole tomatoes, drained of their juices
1 tablespoon olive oil
1 tablespoon light brown sugar
4 carrots, peeled and chopped
2 shallots, quartered
Salt and freshly cracked black pepper
3 tablespoons unsalted butter
1/2 teaspoon crushed red pepper
2 cloves garlic, minced
1 tablespoon tomato paste
2 tablespoons dry sherry
One 28-ounce can crushed tomatoes
1 to 2 cups chicken stock
1/4 cup heavy cream

Steps:

  • Preheat the oven to 400 degrees F.
  • In a mixing bowl, combine the drained whole tomatoes, olive oil, light brown sugar, carrots and shallots, and toss to coat. Season the vegetables with salt and pepper. Place the vegetables on a silicone or parchment-lined baking sheet and roast until caramelized, about 30 minutes.
  • Heat a soup pot over medium heat. Add the butter and cook until foaming. Add the crushed red pepper and garlic and saute for 1 minute. Add the tomato paste and cook for 1 to 2 minutes. Then add the sherry. Cook until all the liquid has evaporated and the alcohol has cooked off, 1 to 2 minutes. Add the roasted vegetables, crushed tomatoes and 1 cup chicken stock. Season with salt and pepper and bring to a simmer. Let simmer for 15 minutes.
  • Add the heavy cream and, using an immersion blender, puree the soup until uniform in texture. Add more chicken stock to adjust the consistency to how you like it.

1/4 cup onions, finely diced
1/4 cup celery, finely diced
1 cup oil
1 cup all-purpose flour
2 (16-ounce) cans whole peeled tomatoes
1/2 tablespoons chicken bouillon powder
1 quart heavy cream
1 teaspoon Italian seasoning
1 teaspoon black pepper

Steps:

  • In a medium stock pot, saute onions and celery in oil until tender. Stir in the flour with a heat resistant spatula, and mix until fully incorporated. Puree the tomatoes and add to flour mixture. Stir in the bouillon powder, heavy cream, Italian seasoning and pepper and cook on medium heat. Stir frequently for 10 to 15 minutes.

1/2 cup butter (1 stick)
1 medium onion, diced
2 (14 1/2 ounce) cans tomatoes (diced or pureed)
2 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon baking soda
1 teaspoon dried thyme
2 cups fresh orange juice
1/2 cup cream (heavy or whipping)

Steps:

  • Sautee onions in butter, in soup pot until transparent.
  • Add canned tomatoes with their juice, salt, pepper, baking soda and dried thyme.
  • Bring to boil, then reduce heat and simmer uncovered for 15 minutes.
  • Add orange juice and cream, heat through and serve, hot.

You don't need a whole basket of vine-ripened tomatoes to make a delicious tomato bisque. We're going to use canned tomatoes. Rice makes this soup silky, not starchy.

1 cup diced onion
½ cup diced celery
1 pinch salt
3 cloves garlic, chopped
1 (32 ounce) container chicken broth, or more as needed
1 (28 ounce) can crushed San Marzano tomatoes
½ teaspoon paprika
1 pinch freshly ground black pepper, or to taste
1 pinch cayenne pepper, or to taste
3 tablespoons uncooked jasmine rice
1 teaspoon white sugar, or to taste
½ cup heavy whipping cream
salt and freshly ground black pepper to taste
2 tablespoons thinly sliced fresh basil leaves, divided
2 tablespoons heavy whipping cream, divided

Steps:

  • Heat olive oil in a large pot over medium heat; cook and stir onion and celery with a pinch of salt until onion is translucent, 5 to 8 minutes. Stir in garlic and cook until fragrant, about 1 minute.
  • Pour chicken broth and tomatoes into onion mixture. Bring to a simmer and season with paprika, black pepper, and cayenne pepper. Turn heat to low and stir rice into soup; skim foam occasionally and simmer until rice and vegetables are very tender, 35 to 45 minutes. Add sugar.
  • Blend soup with an immersion blender in the pot until smooth. Whisk 1/2 cup cream into soup and adjust levels of salt, cayenne pepper, black pepper, and sugar. If soup is too thick, add more broth; if soup is too thin, cook, stirring often, until reduced and slightly thickened, about 10 minutes. Ladle into warmed bowls; garnish each bowl with a drizzle of cream and top with about 1 teaspoon chopped basil.

1 1/2 cups reduced-sodium chicken broth
3 tablespoons honey
1 1/2 teaspoons coarse salt, more to taste
1/4 teaspoon finely ground black pepper, more to taste
1/3 cup heavy cream
2 tablespoons chopped fresh flat-leaf parsley (optional)

Steps:

  • In a medium pot, heat the oil.
  • Add the onion and cook over medium heat, stirring frequently, until tender and lightly browned on the edges, about 7 minutes.
  • Add the garlic and thyme; stir until fragrant, about 1 minute.
  • Add the tomatoes, broth, honey, salt, and pepper.
  • Bring to a boil over high heat.

2 medium onions, chopped
2 large garlic cloves, minced
4 tablespoons butter
1 (28 ounce) can whole tomatoes
1 (46 ounce) can tomato juice
2 bay leaves
1 (8 ounce) package cream cheese
1 pint light cream
salt and pepper
lemon juice

Steps:

  • Saute the onions and garlic in the butter until soft.
  • Add the tomatoes, tomato juice, and bay leaves; simmer for 20 minutes.
  • Remove from heat and let cool.
  • Drain the tomatoes, reserving the juice, and puree them in a blender or food processor with the cream cheese.
  • Mix the puree with the reserved juice.
  • Add the light cream and season to taste with salt, pepper, and lemon juice.

This recipe came from one I already had, I just put my own twist on it. It is excellent whether served warm or chilled, and works for a dinner, a side or anything in between. My measurements are all subject to my own taste. Feel free to mess with them a little.

6 tablespoons extra virgin olive oil
1/2 teaspoon minced garlic
1/2 chicken bouillon cube, crushed (you can put in a zip-lock bag and hammer)
1/2 bunch fresh cilantro, stems cut off & chopped (basil may be sliced and substituted)
1 (10 ounce) carton grape tomatoes, sliced in half
1 (3 ounce) can sliced olives
1 (16 ounce) package penne or 1 (16 ounce) package penne rigate
3/4 cup parmesan cheese (or as desired)

Steps:

  • boil the pasta and set aside.
  • in a large pot, mix olive oil, garlic & 1/2 of the bouillon "dust" over medium heat.
  • when mixed well and warm, add pasta and stir. shut off the burner. *if pasta is dry, add another shot of the olive oil.
  • add the grape tomatoes, olives and cilantro. mix together.
  • add the parmesan to a cooled down pan, when ready to serve. you don't want it to melt.
  • done!
