1/2 cup butter
1 cup sugar
1 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup milk
3 cups peaches, sliced
1/2-1 cup brown sugar, for topping
1/2 cup chopped pecans (optional)

Steps:

Melt butter until slightly brown Pour into an 8-by-12-inch baking dish.
Mix sugar, flour, baking powder, salt, and milk.
Pour into melted butter.
Do not stir.
Cover top of batter with peaches.
Do not mix.
Cover top of peaches with brown sugar.
Bake at 350 degrees for 40 to 45 minutes or until golden brown.

This recipe is adapted from an old community cookbook from Oklahoma. It is different from traditional cobblers because it doesn't have a biscuit or pastry crust. It has a sugar cookie-type crust and the filling has a meringue-like texture. This is delicious served warm with vanilla ice cream.

Ingredients

1 cup all-purpose flour
5 tablespoons powdered sugar
1/2 cup margarine, melted
2 eggs
1 1/2 cups granulated sugar
1/3 cup flour
3/4 teaspoon baking powder
1 teaspoon vanilla
1/4 teaspoon salt
1 teaspoon cinnamon
4 cups peeled sliced fresh peaches

Steps:

Preheat oven to 350ºF.
In a small bowl, combine the 1 cup flour and powdered sugar. Add the melted margarine and stir until well mixed. Pat this mixture into the bottom of a greased 9x13" baking dish. Bake for 15 minutes. Remove from oven.
In a medium bowl, beat the eggs until foamy. Add the granulated sugar, 1/3 cup flour, baking powder, salt, vanilla and cinnamon; mix well. Spoon mixture over the baked crust. Spread the peaches over the top.
Return to oven and bake for approximately 1 hour. If top starts to brown too quickly, loosely cover with foil.
Serve warm with vanilla ice cream.

1/4 teaspoon cinnamon
cups 2 1/2 to 3 peaches, peeled and sliced
3/4 stick butter
3/4 cup all-purpose flour
1/4 teaspoon salt
2 teaspoon s baking powder
3/4 cup milk

Steps:

Preheat oven to 350 degrees F. Mix 1 cup of sugar with cinnamon, add to peaches. Set aside.
Melt butter in bottom of 1 1/2 quart casserole dish. Combine the remaining sugar, flour, salt, baking powder, and milk. Add to melted butter in casserole dish, along with other ingredients.
Bake 1 hour, and serve with vanilla ice cream!!!
