TOMATO PIE

Tomato Pie image

This classic Tennessee pie might have a cheesy top, but the juicy tomato center keeps it surprisingly fresh. Don't let its simplicity fool you: this pie will be a smash hit in your house, just as it is all over the South.

Provided by Food Network Kitchen

Categories     main-dish

Time 4h30m

Yield 6 servings

Number Of Ingredients 8

3 to 4 ripe tomatoes (about 3 pounds), thinly sliced into 1/4-inch rounds
1/2 small sweet onion, thinly sliced
Kosher salt and freshly cracked black pepper
1 rolled 9-inch pie crust, store-bought or homemade
1 cup freshly grated sharp Cheddar
1 cup freshly grated mozzarella
1 cup mayonnaise
1/2 cup fresh basil leaves, torn, plus small leaves for garnish

Steps:

  • Arrange the tomato and onion slices in a single layer on a paper towel-lined baking sheet and sprinkle with salt. Let sit for 1 to 2 hours.
  • Preheat the oven to 350 degrees F.
  • Fit the pie crust into a 9-inch pie plate and crimp the edges. Prick the bottom and sides with a fork. Line the crust with aluminum foil and fill with pie weights or dried beans. Bake until the edges of the crust are just golden, 20 to 25 minutes. Remove the foil and weights and continue to bake until the bottom of the crust is dry and brown, another 15 to 20 minutes. Cool completely.
  • Mix together the Cheddar, mozzarella and mayonnaise in a medium bowl. Season with 1/2 teaspoon salt and a few cracks of black pepper.
  • Transfer the tomatoes and onions to a dry paper towel and pat dry. Liberally season the tomatoes with cracked black pepper. Arrange a third of the tomatoes in a single layer in the pie crust, overlapping slightly. Sprinkle a third of the basil over the tomatoes and top with a third of the onions. Repeat twice with the remaining tomatoes, basil and onions. Spread the mayonnaise mixture over the top of the onions.
  • Bake until the topping is golden brown and bubbling, 30 to 35 minutes. Let cool completely. Garnish with basil leaves. Serve at room temperature.

TOMATO AND ONION TART (GOURMET MAGAZINE)

Tomato and Onion Tart (Gourmet Magazine) image

This recipe is from Gourmet Magazine (May 1995). It is relatively simple and makes a beautiful looking and delicious savoury pie. You can use the Recipe #274312 or, to save time, a prepared pie crust. You can omit the olives if you prefer.

Provided by blucoat

Categories     Savory Pies

Time 1h40m

Yield 8-10 serving(s)

Number Of Ingredients 7

2 large onions, sliced thin (about 1 1/2 pounds)
2 tablespoons olive oil
1 (12 inch) pastry dough, for a single-crust tart
1/2 lb monterey jack cheese (about 2 cups) or 1/2 lb gruyere cheese, shredded (about 2 cups)
1/2 lb plum tomato, cut into 1/2-inch wedges
1/2 lb medium yellow tomatoes (about 2) or 1/2 lb plum tomato, cut into 1/2-inch wedges
1/4 cup nicoise olive, pitted (optional)

Steps:

  • In a large heavy skillet cook onions with salt to taste in oil, covered, over moderate heat, stirring occasionally, until softened, about 20 minutes. Remove lid and cook onions, stirring occasionally, until golden and any liquid evaporates. Remove skillet from heat to cool onions slightly. Preheat oven to 375°F.
  • On a lightly floured surface with a floured rolling pin roll dough into a 14-inch round (about 1/8 inch thick). Fold round in half and transfer to a 12-inch tart pan with a removable fluted rim or a 12-inch quiche dish. Unfold dough, easing to fit, and trim overhang to 3/4 inch. Fold overhang toward center and press against side of pan or dish. Spread onion mixture over dough and top with cheese. Arrange tomato wedges and olives in concentric circles over cheese and season with salt and pepper.
  • Bake tart in middle of oven 1 hour, or until pastry is golden, and cool on a rack. Remove rim of pan if necessary. Serve tart warm or at room temperature.

Steps:

  • Saute the onions in the olive oil, garlic, fresh herbs and butter until they are cooked through.Add the tomatoes and cook through a little - add the dash of white wine - this will help cook the tomatoes a bit quicker and add a nice bit of sugar to the brew. When you are happy with the tomato and onion mix (by happy I mean if you would pop it on a piece of bread and eat it then and there) then it is ready to put into a nice oven proof dish and put the topping on to bake.If you have a blender put the crunchy topping ingredients in and give them a rough chop - don't over process so that they look like bread crumbs - we want it nice and chunky. If you don't have a blender - just chop up roughly with a knife and then mix the oil through with your hands - this makes sure it is covered all over with oil.Pop the dish in the oven at 180C or BBQ for about 10 minutes until golden brown on top. This can be done the day before and then simply put in the oven to reheat/cook - just leave in a little longer to heat up all the tomato mix.

VIDALIA TOMATO PIE

Vidalia Tomato Pie image

I found tomato onion pies in 2 cooking magazines, and put them together to make this outstanding side dish! This is very filling, and goes well with just about any meat you make it with. It is also a nice for brunch along side breakfast meats and egg dishes. This pie is anything but bland, with big sweet onion and tomato flavor. It is good with other flavors of cheese too. I sometimes buy cheese blends, or mix cheddar with mozzarella. If you can't find Vidalias, use a Texas Sweet or Walla Walla Sweet onion. If your tomatoes are still too juicy after chopping, place them in a colander to drain while you chop the onions and cook the bacon. This will keep your crust from getting soggy on the bottom. If your oven browns the edges of pie crust too quickly, wrap the edges of pie crust with foil before baking.
