TOMATO-FREE PIZZA
We started making this when my husband had to go on his kidney diet. We make it often now because it is very versatile, simple, and tasty. All of the ingredients in the sauce and toppings are adjustable or can be substituted or omitted.

Steps:
- For the dough:.
- Dissolve yeast in warm water.
- Stir in remaining ingredients.
- Beat about 20 strokes, then allow to rest covered about 5 minutes.
- Roll out in a pizza pan, building up crust along the edges.
- For the sauce:.
- Combine all ingredients.
- Brush on top of dough, including crust.
- For the toppings:.
- Scatter all but mozzarella onto crust evenly.
- Top with shredded mozzarella.
- Bake at 400°F for about 11-12 minutes. Pizza is done when crust is golden and cheese is melted.

PIZZA WITH FRESH TOMATOES AND BASIL

- Position 1 oven rack in the center and the second rack on the bottom of the oven and preheat to 450 degrees F. Sprinkle the cornmeal over 2 rimless baking sheets. Roll out each piece of Pizza Dough into a 10 to 11-inch-diameter round. Transfer 1 dough to each prepared baking sheet.
- Drizzle 2 teaspoons of oil over each Pizza Dough. Sprinkle the mozzarella over the Pizza Dough, dividing equaling and leaving a 1-inch border around each pizza. Arrange the tomato slices in a single layer over the cheese. Sprinkle with the Parmesan. Arrange basil leaves on top, drizzle with a little more olive oil and sprinkle garlic all over. Bake the pizzas until the crusts are crisp and brown on the bottom and the cheese is melted on top, about 15 minutes. Drizzle 1 teaspoon of oil over each pizza. Sprinkle with basil for garnish and salt. Cut the pizza into wedges and serve immediately.
- Mix the warm water and yeast in a small bowl to blend. Let stand until the yeast dissolves, about 5 minutes. Mix the flour and salt in a food processor to blend. Blend in the oil. With the machine running, add the yeast mixture and blend just until the dough forms. Turn the dough out onto lightly floured surface and knead until smooth, about 1 minute. Transfer the dough to a large oiled bowl and turn the dough to coat with the oil. Cover the bowl with plastic wrap and set aside in a warm draft-free area until the dough doubles in volume, about 1 hour. Punch the down dough and divide into 2 equal balls. (The dough can be used immediately or stored airtight in the refrigerator for 1 day.)
TOMATOLESS PIZZA
This pizza is a baked version of a cream cheese summer pizza... packaged pizza dough, covered with a spread of cream cheese, sour cream and dill, topped with a skillet of onions, garlic, red pepper, baby spinach and mushrooms baked together

- Preheat the oven to 375 degrees F (190 degrees C).
- Unroll the pizza dough onto a greased baking sheet. Press out to cover the entire sheet. In a medium bowl, mix together the sour cream, cream cheese and dill until smooth. Spread evenly over the crust.
- Heat the olive oil in a skillet over medium heat. Add the onion, mushrooms, garlic and red bell pepper; cook and stir until onion is tender but the pepper is still crisp, about 4 minutes. Stir in baby spinach at the end of cooking. Spread this mixture over the top of the pizza.
- Bake for 15 minutes in the preheated oven, or until the crust is golden at the edges. Cut into squares to serve.

BASIC NOMATO SAUCE (TOMATO FREE TOMATO SAUCE)
This recipe comes from the Interstitial Cystitis Network site at www.ic-network.com/bev/april00. We enjoy it just as much in spaghetti and enchiladas as tomato sauce. One batch makes the equivalent of 2 larges cans of tomato sauce (4 cups) so I use half the batch and freeze the other half in a freezer bag for next time. I find that I have to add about 25 percent more spice than I did when I used tomatoes.

SAVORY TOMATO-FREE PULLED PORK PIZZA WITH CARAMELIZED ONIONS AND

- Place frozen bread dough in refrigerator the night before you make this to lessen wait time.
- 5 hours before you are ready to eat, place the thawed bread dough on a pizza pan cooking spray (or greased, buttered, etc.). You can cover the dough with a towel, if you like, and set aside to rise. I like garlic, so, I sprinkle some garlic powder all over the loaf. Your choice.
- 3 hours should be ample time for the dough to have risen to double its original size. Punch down the dough and spread it out in the pizza pan about 1 hour, should not be more than 1.5 hours. (Though temperature will affect rise time. Warmer means faster.).
- Preheat oven to 375°F Place risen dough on pizza pan into oven for about 15 minutes. You want to want to remove it just as the crust starts to brown. When removed, raise the oven temperature to 400°F
- While the crust is baking, place 2 tablespoons of Olive oil in a skillet on Medium to Medium-High, add the sliced onion and diced bell pepper to the skillet. You could add the mushrooms here too, if you like. Add garlic powder (or fresh garlic) and salt to taste. Cook for about 15 minutes, until onions become shiny and translucent.
- If your cheese is not already shredded, you can do so while the vegetables are caramelizing. Once shredded, combine the cheeses to make a blend.
- Prepare the gravy.
- Allow the crust rest for about five minutes before assembling pizza. Don't forget to raise the temperature of the oven to 400°F.
- Using a spoon or a spatula, spread the Ricotta cheese evenly onto the toppings area of the pizza.
- Spread 1/2 gravy evenly over the Ricotta. Don't worry about sogginess, the crust.has been pre-baked and the Ricotta acts as a barrier protecting the crust. Do avoid letting the gravy pool up in the center (Pizza's weak point). Set aside remaining gravy to pour over pizza slices when served.
- Spread the pork over the gravy.
- Sprinkle the blend of shredded cheeses over the pork.
- Scatter the onion and bell pepper (and mushrooms, if you are including them) atop the cheese.
- Place the pizza in the oven and bake at 400F for 10 to 15 minutes (until crust is brown, cheese is thoroughly melted and some browning is beginning to occur on the toppings). Allow pizza to cool down for 5 minutes before slicing (makes for cleaner slices).
- Serve with gravy poured over the top and a fork. Delicious.

GLUTEN-FREE PIZZA
Make our gluten-free version of a classic pizza. The base is easy, spread over rich homemade tomato sauce, then finish with buffalo mozzarella and fresh basil

- Heat the oven to 220C/200 fan/gas 7 and put two baking sheets inside.
- Make the sauce: heat the oil in a small saucepan and cook the onion with a generous pinch of salt for 10 mins over a low heat until softened. Add the chopped tomatoes, purée and sugar and bring to a gentle simmer. Cook, uncovered, for 25 - 30 mins or until reduced and thick, stirring regularly. Blitz the sauce with a hand blender until smooth. Season to taste and stir through the basil. Allow to cool a little.
- Make the dough: mix the flour, sugar, baking powder, salt and xanthan gum in a large mixing bowl. Make a well in the centre and pour in 250ml warm water and the olive oil. Combine quickly with your hands, to create a thick, wet, paste-like texture, adding an extra 20ml warm water if the dough feels a little dry. Store in an airtight container or covered bowl in the fridge for up to 24 hours before using. Lightly flour two more baking sheets. Split the dough into two and flatten with your fingers into 20 - 25cm rounds on the sheets.
- Finish the bases with a thin layer of the sauce and torn up mozzarella. Place the baking sheets on top of the hot baking sheets in the oven and cook for 8 -10 mins or until crisp around the edges.

EASY TOMATO PIZZAS
These colourful, flavour-packed pizzas are low-fat and delicious too

- For the dough, put the flour, yeast and 2 tsp salt into a large bowl and mix. Make a well. Mix the oil and water in a jug, then tip into the bowl. Use a wooden spoon to work the liquid into the flour - it will seem pretty wet. Set the bowl aside for 15 mins. Leaving the dough like this will save you from lengthy kneading later.
- Turn the dough onto a well-floured surface, flour your hands, then knead it very gently for about 2 mins until it is fairly even, soft and bouncy. Return the dough to the bowl, cover with oiled cling film, then let it rise in a warm place (or in the fridge overnight) until doubled in size.
- When ready to cook, heat oven to 240C/220C fan/gas 9 or as hot as it will go, then put a baking sheet in on a high shelf. Dust another sheet with flour. Split the dough into 8, then roll 3 balls thinly into rough circles. Lift onto the floured sheet. Smear over a thin layer of the sauce, scatter over a few slices of tomato, season, then add sliced goat's or grated Parmesan cheese if you want to. Slide the sheet on top of the heated sheet. Bake for 12 mins or until golden and crisp and the tomatoes are starting to caramelise around the edges. Top with any fresh toppings, then drizzle with more olive oil to serve.
