Salt and pepper
1 pound dry pasta (I'm using spaghetti)
1/4 cup olive oil
1 stick (8 tablespoons) unsalted butter
12 cloves garlic, sliced
2 pounds shrimp, peeled and deveined
1 cup liquid (I'm using white wine)
2 lemons, juiced
2 tablespoons chile flakes, optional
2 tablespoons chopped fresh parsley, optional

Steps:

  • Bring a pot of water to a boil and add 2 tablespoons salt . Add the spaghetti, give it a stir and cook until al dente according to the package instructions.
  • Meanwhile, heat a large saute pan over medium heat. Add the oil, butter, garlic and a pinch of salt and sweat the garlic for 2 minutes. Add the shrimp, season with salt and pepper and cook, stirring, 1 minute. Add the wine, lemon juice and chile flakes if using and cook until the shrimp are just cooked through, 3 to 5 minutes.
  • Reserve some of the pasta water, then drain the spaghetti. Add the spaghetti and a little of the reserved pasta water to the pan with the shrimp and toss to combine. Toss in the parsley if using and serve.

SIMPLE GARLIC & BUTTER SHRIMP WITH SPAGHETTI (SHRIMP SCAMPI)



Simple Garlic & Butter Shrimp with Spaghetti (Shrimp Scampi) image

1 lb of good quality, fresh or frozen RAW shrimp (shelled, deveined, cleaned with the tail left on)
2 tbsp extra virgin olive oil
3 tbsp good quality butter, like Kerrygold
3 to 5 cloves of garlic, minced
1 tbsp finely chopped parsley (fresh is best, if not use frozen or 1/2 tsp of dried)
salt and pepper
dash of white wine or water from the cooked pasta
1 lb spaghetti (I highly recommend De Cecco- it makes a huge difference)

Steps:

  • Cook the spaghetti as directed on the box. While it is simmering, make the shrimp and sauce.
  • Rinse, then dry the shrimp in paper towel.
  • Place the olive oil and 1 tbsp of the butter in a sauté pan over medium high heat. Add the minced garlic and cook for about 2 minutes, then add the parsley.
  • Turn the heat up, then add the shrimp.
  • The shrimp will only need to cook for about 4 or 5 minutes, so as soon as they turn pink, turn them over and make sure they are evenly cooked. Season with a little salt and pepper.
  • Add a little white wine (or water from the pasta that's cooking), and the other 2 tablespoons of butter.
  • Stir well and remove from heat. Cover to keep warm until the pasta is ready.
  • Drain the pasta and place in a bowl with the shrimp and sauce added on top. Stir to coat the pasta.
  • Serve immediately.

1 small to medium onion
EVOO
4 tablespoons butter
3 large cloves garlic
Salt
1 teaspoon Calabrian chili paste OR 1/2 teaspoon crushed red pepper flakes
1 cup vodka
1 can (28 ounces) Italian crushed tomatoes
A few leaves of basil, torn, plus a few to serve
1 pound penne rigate pasta
1 pound large raw shrimp, deveined and tails removed
1 lemon
1/4 cup Pernod or white vermouth
A handful flat-leaf parsley, finely chopped
1 cup heavy cream
A handful freshly grated Parmigiano-Reggiano cheese, plus some to pass at table, optional ( -- and controversial to some Italians)

Steps:

  • Place a large pot of water on the stove for pasta. Also put up a deep skillet for sauce and a nonstick skillet for shrimp.
  • Gather your ingredients.
  • Peel and finely chop the onion.
  • In a large deep skillet, heat EVOO, a turn of the pan. Add 2 tablespoons butter and when it foams add the onions. Stir to soften while you peel and chop the garlic. Add 2 cloves of chopped garlic to onions and season with salt. Stir in 1/2 teaspoon of chili paste or about 1/4 teaspoon of red pepper flakes. Add vodka and reduce by half, 2 to 3 minutes. Add tomatoes and tear in a few leaves of basil. Reduce heat and simmer sauce, 10 minutes.
  • Season pasta water with a fat tablespoon of salt, add penne and cook 1 minute less than package directions, about 8 minutes. Have a mug or measuring cup on hand.
  • Add shrimp to a medium bowl and toss with remaining garlic. Thinly slice a lemon and toss with shrimp.
  • In the second skillet, heat EVOO, 2 turns of the pan, over medium-high and melt in 2 tablespoons butter. Add the shrimp mixture and toss 2 to 3 minutes; shrimp should be pink and opaque. Add a splash of Pernod or vermouth, the remaining red pepper flakes, a little salt and parsley; toss. Turn off heat.
  • Add cream to sauce and stir. Add shrimp to sauce, bring back to a bubble and turn off heat.
  • Reserve about 1/2 cup of starchy salty water and drain pasta or transfer to sauce with a spider. Toss pasta with sauce and grated cheese, using water to loosen as necessary.
  • Transfer pasta to large serving bowl or to individual shallow bowls to serve.

2 shallots, finely diced

Cook and stir shallots, garlic, and red pepper flakes in the hot butter and oil until shallots are translucent, 3 to 4 minutes.   • Pour white wine and lemon juice into skillet and bring to a boil while scraping the browned bits of food off of the bottom of the skillet with a wooden spoon. Melt 2 tablespoons butter in skillet, stir 2 tablespoons olive oil into butter mixture, and bring to a simmer. Toss linguine, shrimp, and parsley in the butter mixture until coated; season with salt and black pepper. Drizzle with 1 teaspoon olive oil to serve.

This is a quick and easy shrimp dish. It takes less than 1/2 hour from start to finish! You can even eliminate the spaghetti and eat just with the shrimp. Be sure to have plenty of Italian bread to mop up the extra scampi sauce! You can even serve over plain white rice. This also freezes very well. Just defrost in a refrigerator, reheat and serve over freshly made pasta! This recipe serves about 4 people and can easily be doubled or tripled to make more. If you like more shrimp, add more...it will not affect the taste!

1 lb extra-large shrimp, peeled and deveined
3/4 cup extra virgin olive oil
3/4 cup unsalted butter
3/4 cup white wine
15 minced garlic cloves

Steps:

  • In a large saucepan add the Olive oil and butter together over a medium heat until all the butter is melted.
  • Add 1/2 the garlic to the saucepan and simmer for about 3 minutes till the garlic starts to get transparent. (make sure your heat is not too high, you don't want the garlic to brown at all, it will create a very bitter taste).
  • After 3 minutes add the white wine to the mixture. If using gas heat, make sure to remove the pan from heat before adding the wine to avoid fire. Stir mixture and allow to cook together for 4 minutes.
  • Add the shrimp and rest of garlic to mixture and stir together. after about 3 minutes, flip over the shrimp to make sure both sides cook evenly. Cook for another 3 or 4 minutes.
  • After all the shrimp are cooked and the mixture is mixed thoroughly remove from heat and add the parsley and cheese. Stir it all together and serve over cooked pasta. I allow people to add their own salt and pepper to taste as the italian cheese has a very salty taste! Enjoy!

4 tablespoons butter

2 shallots, finely diced

1/2 cup dry white wine
Juice of 1 lemon

Steps:

  • For the pasta, put a large pot of water on the stove to boil. When it has come to the boil, add a couple of tablespoons of salt and the linguini. Stir to make sure the pasta separates; cover. When the water returns to a boil, cook for about 6 to 8 minutes or until the pasta is not quite done. Drain the pasta.
  • Meanwhile, in a large skillet, melt 2 tablespoons butter in 2 tablespoons olive oil over medium-high heat. 1/2 medium onion, finely diced
1 pound peeled and deveined large shrimp (16/20 count)
2 lemons, halved

4 dashes hot sauce (I used tabasco), or more to taste

8 ounces angel hair pasta
1/2 cup grated Parmesan

  • Boil water for the pasta and have it ready.
  • Melt the butter and heat the olive oil in a large skillet over medium heat. Add the garlic and onions and cook until the onions are translucent, 2 to 3 minutes. 2 lemons, zested and juiced
5 tablespoons olive oil
1 teaspoon red pepper flakes

1/4 onion
3/4 pound thin linguini
2 tablespoons butter

  • In a bowl, combine the garlic, zest and juice of 1 lemon, olive oil, red pepper flakes, salt and pepper, to taste, and the shrimp. Set aside.

  • Heat a skillet over high heat. Add the shrimp and cook until they turn pink and start to caramelize, about 3 minutes. Remove the shrimp from the pan to a plate and add the remaining marinade. Let cook a few minutes then add about 1 cup of shrimp stock and about 1/2 cup pasta water. Continue to cook until sauce reduces by half. Add the zest and juice of the remaining lemon, the butter and the parsley and stir to combine. Adjust seasoning with salt and pepper, to taste. Add in the shrimp and pasta and toss to combine with the sauce. Turn out into a serving bowl and serve immediately.

This will blow you away. The first time you serve this, you'll be ok because they don't know how great it's going to be. The second time you serve this, you better put it on the table and get out of the way FAST cause they are going to knock you down trying to get to it. It's a recipe that I have developed through years of making it over and over and over. This is the best version I have been able to create. NOTE: This recipe is to be used with 1/2 pound of spaghetti. If you are using 1lb of spaghetti, double the recipe because there won't be enough sauce for a full pound. If you are doubling it, don't double the lemon juice or it'll be too tart, just bump it up to 3 Tbsp. and only bump the lemon pepper up to 3/4 tsp or it will be too salty for some people. MANGIA!

Just let them soak in there, doing the backstroke through the sauce while the spaghetti finishes cooking. Stir them around a couple of times while you're waiting.
  • Drain the spaghetti and put it in the serving bowl, pour the shrimp and all the sauce over top and sprinkle the entire 1/2 cup (or more) of parmesan over the top and serve.
  • Pass more romano cheese at the table. Is there ever enough cheese on there?

1/4 teaspoon lemon, zest of, grated
1 drop Tabasco sauce
8 ounces zucchini, shredded (approx. 2 cups)
8 ounces spaghetti, cooked
lemon wedge, to garnish (to garnish)
1 1/2 lbs shrimp, cleaned

Steps:

  • Clean shrimp and pat them dry.
  • Set aside.
  • Melt the margarine in a skillet over medium heat.
  • Stir in the green onion, olive oil, garlic, lemon juice, and salt, and cook until bubbly.
  • Add the shrimp and cook, stirring constantly, until the shrimp turn pink, about 2 minutes.
  • Stir in the parsley, lemon zest and tabasco.
  • Remove the shrimp with a slotted spoon to a bowl.
  • Add the zucchini and stir fry over heat until tender, about 2 minutes.
  • Serve about 1/2 cup of zucchini, 1/2 cup of shrimp over the spaghetti.
  • Garnish with lemon wedges if desired.
  • Serve.
