TOMATO AND FENNEL SOUP

2 tablespoons vegetable oil
1/2 pound (about 2 medium) fennel bulbs, chopped, fronds discarded
3 celery ribs, chopped
1 onion, chopped
2 cloves garlic, chopped
1/4 cup Pernod liqueur (optional)
1/2 bunch fresh dill, stems removed (1/4 cup trimmed)
1 tablespoon celery seeds
1/2 teaspoon cracked black pepper
2 quarts vegetable stock
3 pounds ripe tomatoes, or 3 cups canned peeled whole plum tomatoes, coarsely chopped
1/4 cup (1/2 stick) unsalted butter (optional)
Salt to taste

Steps:

  • In a large pot, heat the oil over medium heat. Add the fennel and cook, stirring, until it starts to soften, about 5 minutes. Add the celery, onion, and garlic. Cook, stirring, 5 minutes longer to allow the flavors to blend together. Carefully add the Pernod. (Caution! It could flame up.) Add the dill, celery seeds, and pepper. Add the vegetable stock and tomatoes, and bring the mixture to a boil. Reduce the heat to a simmer and let simmer for 40 minutes.
  • Remove the pot from the heat. Process the soup, in batches, in a blender or food processor fitted with the metal chopping blade until smooth. Add the butter, if desired, and stir until melted. Taste and check the seasoning, adding salt if needed.

1 1/2 tablespoons olive oil
1 onion, chopped
1 large fennel bulb, chopped, some fronds reserved
1 teaspoon sea salt, plus more to taste
fresh ground black pepper
2 (48 ounce) cans diced fire-roasted tomatoes
1 1/2 cups vegetable broth
1 cup fresh blood orange juice plus grated blood orange, zest of
ground red pepper
1 cup drained yogurt, creme fraiche (optional) or 1 cup sour cream (optional)

Steps:

  • Heat the olive oil in a large Dutch oven; add the onion and fennel, sprinkled with a big pinch of salt and pepper to taste. Cook over medium heat, stirring often, until soft and golden but not brown, 20 minutes.
  • Add the tomatoes and their juice, broth, blood orange juice and a pinch of ground red pepper. Lower heat to a simmer; cook covered until the fennel is entirely soft and the tomatoes have released their juice and turned dark, about 30 minutes.
  • Allow the soup to cool slightly; puree until smooth in a blender in batches or with an immersion blender. Return the soup to the heat; heat to a simmer. Taste; adjust seasoning with additional salt and pepper if needed. Add a touch more broth if it seems too thick.
  • Serve in shallow bowls garnished with a pinch of grated zest, a spoonful of the yogurt and sprigs of fennel fronds.
  • Per serving: 198 calories, 19% of calories from fat, 4 g fat, 1 g saturated fat, 3 mg cholesterol, 33 g carbohydrates, 6 g protein, 1,684 mg sodium, 5 g fiber.

2 tablespoons extra virgin olive oil
1 medium fennel bulb, trimmed, cored & chopped (about 12 oz.)
2 tablespoons feathery fennel leaves, chopped (save for garnish)
4 medium shallots, finely chopped
1 small carrot, finely chopped (about 2 oz.)
28 ounces canned tomatoes, undrained
1/2-1 cup vegetable broth
salt
pepper

Steps:

  • Heat the oil in medium stockpot over medium-low.
  • Add fennel, shallots and carrot, cook until very soft but not brown, stirring occasionally.
  • This will take about 15 minutes.
  • Add tomatoes and 1/2 cup broth, bring to boil over high heat.
  • Reduce heat and simmer gently for 15 minutes (uncovered), stirring occasionally.
  • Transfer to blender or food processor in batches (I used an immersion blender right in the pan), and process until smooth.
  • Adjust the seasonings, and add more veggie broth if necessary to achieve your desired consistency.
  • Serve hot, garnished with the chopped fennel leaves.
  • This soup reheats well.

2 tablespoons olive oil
1 bulb fennel, chopped
½ onion, chopped
1 celery stalk, chopped
1 clove garlic, minced
1 (14.5 ounce) can diced tomatoes
1 cup low-sodium chicken broth
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large saucepan over medium-high heat. Cook and stir fennel, onion, celery, and garlic in the hot oil until tender, about 10 minutes.
  • Pour tomatoes and chicken broth over vegetable mixture and simmer for 4 minutes. Remove saucepan from heat and add basil and parsley. Cool soup slightly.
  • Pour soup into a blender no more than half-full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth.

The childhood pleasure of tomato soup with a side of grilled cheese had been enshrined in my mind since I'd last had it, decades ago. A tart, bright tomato soup and a crispy sandwich with an oozing interior: no wonder they are an iconic match. This recipe, spiked with fennel and Pernod, is livelier and more sophisticated than your usual tomato soup. It has a more complex flavor, too, with the fennel bulb adding a pronounced sweetness, along with a very gentle licorice flavor brought out by the Pernod. Serve with slim croutons seasoned with fennel seeds and topped with Brie. (Here's a helpful tutorial on how to cut up fennel.)

7 tablespoons unsalted butter
2 medium fennel bulbs, cleaned and thinly sliced, fronds chopped and reserved
1 large onion, halved, peeled and thinly sliced
2 teaspoons coarse kosher salt
4 garlic cloves, finely chopped
1/2 teaspoon chile powder
3 tablespoons Pernod
2 28-ounce packages or cans chopped tomatoes packed in purée (such as Pomì)
1 cup chicken stock
1 teaspoon black pepper
6 baguette slices
1 teaspoon fennel seeds
3 ounces Brie, thinly sliced

Steps:

  • Melt 6 tablespoons butter in a large pot over medium heat. Add fennel, onion and 1/2 teaspoon salt. Toss to combine. Reduce heat to medium-low. Partly cover and cook, stirring occasionally, until vegetables are very tender, about 20 minutes. Stir in garlic and chile powder; cook 1 minute. Stir in Pernod and cook until almost completely evaporated, about 3 minutes.
  • Pour in tomatoes, 1 1/2 cups water and the stock. Bring to a simmer and cook gently, uncovered, for 30 minutes. Season with 1 1/2 teaspoons salt and the black pepper. Purée soup in batches using a blender or immersion blender until smooth.
  • Transfer soup back to pot over medium heat; simmer until slightly thickened, 5 to 10 minutes more. Scrape down sides and bottom of pot occasionally. Remove from heat and cover to keep warm.
  • Heat oven to 350 degrees. Spread bread slices on a large baking sheet. Bake until light golden, about 10 minutes.
  • Toast fennel seeds in a small skillet over medium heat until fragrant and lightly colored, 2 to 3 minutes. Melt in remaining 1 tablespoon butter.
  • Adjust oven temperature to broil and position rack 6 inches from heat. Brush toasts with fennel-seed butter and top with Brie. Return to oven and broil until bubbly and golden, 1 to 3 minutes (check every minute or so to see that they are not burning). Ladle soup into bowls and top with a cheese crouton. Garnish with fennel fronds.

The acidity of the tomatoes witll retard the cooking of the vegetables, so be sure they are very tender before adding them. Include the fennel trimmings in the stock, they'll enrich the flavor. Adapted from the Fields of Greens restaurant in San Fransisco.

1 quart vegetable stock
2 cups canned tomatoes
1/2 teaspoon fennel seed
1 tablespoon extra virgin olive oil
1 large yellow onion, diced (about 2 cups)
salt
1 teaspoon anise seed, ground
4 garlic cloves, finely chopped
2 medium carrots, diced (about 1 cup)
2 medium fennel bulbs, quartered lengthwise, cored, thinly sliced (about 2 cups)
1/2 cup dry sherry
2 lbs fresh tomatoes, peeled, seeded, and pureed (about 3 cups or 1 28 oz. can tomatoes with juice, pureed)

sugar
parmesan cheese, grated
1 -2 tablespoon extra virgin olive oil, as needed
2 garlic cloves, finely chopped
1/4 French baguette, thinly sliced

Steps:

  • Add the 2 cups canned tomatoes and 1/2 teaspoons fennel seed to the vegetable stock and keep warm over low heat.
  • Heat the olive oil in a soup pot and add the onions, 1/4 teaspoons salt, anise and the ground fennel. Saute over medium heat until the onions are soft, then add the garlic, carrots, and sliced fennel. Cover the pan and cook the vegetables until very tender, about 5 minutes.
  • Remove the lid, add the sherry and cook for 1-2 more minutes, until the pan is nearly dry.
  • Add the tomato puree, 1 quart stock, and 1/4 teaspoons salt; cover and cook over low heat for 30 minutes.
  • Season to taste with salt and pepper. Add a few pinches of sugar if the soup tastes a little acidic.
  • Serve with Garlic Croutons;.
  • Garlic Croutons:.
  • Preheat the oven to 375*F.
  • Combine the olive oil and garlci. Lay the slices of baguette on a baking sheet and brush them lightly with the garlic oil.
  • Bake for about 8 minutes, until the croutons are crisp and lightly browned.

It has a beautiful, soft and subtle anise flavor that really shines in this soup. The richness of the lobster and the tart orange really bring it all together.

1 tablespoon extra virgin olive oil
1 small onion, diced small
2 garlic cloves, thinly sliced
2 fennel bulbs, thinly sliced (reserve some fronds for garnish)
2 yukon gold potatoes, peeled and cut into chunks
1/4 cup dry white wine
2 tablespoons Pernod
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
4 cups vegetable stock
1/2 cup heavy cream
1 small lobster tail
1/4 cup unsalted butter
1/2 lemon, juice of
2 blood oranges, juice of (reserve two segments for garnish)
1/2 lemon, juice of
2 tablespoons honey

Steps:

  • Heat oil in a large Dutch oven or medium soup pot over medium heat. Add the onion and garlic and sweat them for 3 minutes. Add the fennel and sweat 5 minutes, until it begins to get tender. Add the potatoes, wine and Pernod and simmer to reduce the liquid until it is nearly gone. Season with salt and pepper. Add the vegetable stock, bring to a boil, and then reduce heat and simmer for 40 minutes.
  • Meanwhile, put the cream in a small heavy-bottomed saucepot over medium heat. Simmer to reduce until it has thickened and has rich nutty flavor. Set aside.
  • While the soup simmers, prepare the Blood Orange Reduction. Whisk together the blood orange juice, lemon juice and honey in small non-reactive saucepot. Simmer over medium heat to reduce to a syrup, about 15 minutes. Remove from heat and set aside.
  • Transfer soup in batches to a blender and process until smooth (or use a stick blender in the pot). Pass each batch through a mesh sieve, pushing it through with a rubber spatula. Discard solids. Return the soup to the saucepot over medium heat. Whisk in the reduced cream and adjust seasoning to taste. Keep the soup warm while preparing the lobster.
  • Bring a medium saucepot of salted water to a boil. Add the lobster tail and boil for 2 minutes, just enough to be able to remove the meat from shell, not to cook through. Put the tail in an ice bath to stop cooking. Remove the meat from the shell and cut the tail in half, rinsing if necessary. Slice the lobster into bite size pieces.
  • Melt the butter in the saucepot. Whisk in the lemon juice, salt and pepper. Add the lobster pieces and poach over low heat until just cooked through, about 2 minutes.
  • Ladle hot soup into bowls. Add poached lobster pieces to each serving. Drizzle the soup with blood orange reduction and garnish with orange segments and fennel fronds.
