1/4 cup KRAFT Zesty Lime Vinaigrette Dressing, divided
2 cups cherry tomatoes, halved
1 fully ripe avocado, mashed
1 tsp. ground black pepper

Steps:

  • Heat broiler.
  • Brush bread slices evenly with 1 Tbsp. dressing.
  • Broil, 4 inches from heat, 2 to 3 min. on each side or until lightly toasted on both sides.
  • Toss tomatoes with remaining dressing in medium bowl.
  • Spread toast slices with avocado; top with tomatoes and pepper.

1/2 loaf baguette
Olive oil, for brushing
Kosher salt and freshly ground black pepper
1 cup grape or cherry tomatoes, cut in half
1 tablespoon honey
1 tablespoon olive oil
1 tablespoon red wine vinegar
Kosher salt and freshly ground black pepper
1 cup ricotta cheese
1 tablespoon extra-virgin olive oil
1/2 teaspoon garlic powder
Kosher salt and freshly ground black pepper
8 leaves fresh basil, cut into chiffonade

Steps:

  • For the crostini: Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • Cut the baguette into thin slices and put them on one of the prepared baking sheets. Brush the bread with olive oil, then sprinkle with salt and pepper to taste. Bake until they are golden brown and crunchy, about 15 minutes.
  • For the roasted tomatoes: In a medium bowl, mix together the tomatoes, honey, olive oil and red wine vinegar and season with salt and pepper. Put the mixture on the other prepared baking sheet and bake until the tomatoes start to color and shrivel, about 25 minutes.
  • For the ricotta: In a medium bowl, mix together the ricotta, olive oil and garlic powder until well combined. Season with salt and pepper.
  • When the crostini are cooled slightly, spread the ricotta cheese mixture over the top of each piece, and then top with the roasted tomatoes, drizzling any extra juices over the top. Garnish with the chiffonade of basil.

½ small red onion, finely chopped
8 medium tomatoes (about 500g), coarsely chopped and drained
2-3 garlic cloves, crushed
6-8 leaves of fresh basil, finely chopped
30ml balsamic vinegar
60-80ml extra virgin olive oil
1 loaf crusty bread

Steps:

  • In a large bowl, mix the onions, tomatoes, garlic and basil, taking care not to mash or break up the tomatoes too much. Add the balsamic vinegar and extra virgin olive oil. Add salt and pepper to taste. Mix again. Cover and chill for at least an hour. This will allow the flavours to soak and blend together.
  • Slice the baguette loaf diagonally into 12 thick slices and lightly toast them until they are light brown on both sides. Serve the mixture on the warm slices of bread. If you prefer the mixture at room temperature, remove from the fridge half an hour before serving.

1 to 2 tablespoons finely sliced fresh mint
4 Kalamata or other brine-cured black olives, pitted and chopped

Steps:

  • Preheat oven to 350°F.
  • Arrange tomatoes, cut sides up, in a shallow baking dish just large enough to hold them in 1 layer. Drizzle with 2 tablespoons oil and season with salt and pepper. Scatter garlic around tomatoes, then roast in middle of oven until tomatoes are tender and skins are wrinkled, about 1 hour. Cool, then transfer tomatoes to a plate, reserving garlic and oil in baking dish.
  • While tomatoes are cooling, put bread slices on a baking sheet and brush lightly on both sides with additional oil. Bake in middle of oven until golden, 15 to 18 minutes.
  • Peel roasted garlic cloves and mash to a paste with oil and juices from baking dish. Spread paste on toasts, then top each toast with a tomato half, cut side up.
  • Serve crostini topped with mint and olives.

2 tablespoons cilantro, fresh chopped

Steps:

  • Rub garlic clove on each slice of hot baguette. This will add a perfect light garlic essence without being "in your face" or oily. This technique is actually one of my favorites to use with crostinis or toasted sandwiches.
  • Mix together tomato, avocado, cilantro, lime juice, and olive oil. Season to taste with salt and pepper.
  • Scoop spoonfuls of the tomato/avocado mixture onto the garlic rubbed crostinis.
  • Serve and enjoy!

1 tablespoon extra-virgin olive oil (plus more for brushing)
Sea salt and freshly ground pepper
1 tablespoon fresh thyme (plus more for garnishing)
8 slices baguette (cut diagonally into 1/2 inch thickness)
1 garlic clove
2 ounces honey Chèvre goat cheese

Steps:

  • Preheat the oven to 375°F degrees. Place the tomatoes in a shallow baking dish, drizzle with olive oil and sprinkle with salt, pepper and thyme; toss to combine.
  • Adjust the tomatoes so they are cut side up, and roast until the tomatoes soften and slightly shrink, about 40-45 minutes.
  • Place the baguette slices on a wired baking sheet, brush with olive oil, sprinkle salt and pepper, and bake in the oven until golden brown, about 10 minutes.
  • Rub the crostini with garlic and then divide the goat cheese between the crostini. Top with one slice of roasted tomato, drizzling any extra juice over the top. Garnish with fresh thyme and serve immediately.

1 loaf French bread, such as ficelle or demi-baguette, thinly sliced on the diagonal
4 1/2 teaspoons extra-virgin olive oil, plus more for brushing
1 1/2 pounds assorted fresh garden and cherry tomatoes
1/2 teaspoon coarse salt
Pinch of freshly ground pepper
1/2 cup loosely packed fresh basil leaves, plus small sprigs for garnish
1/4 cup loosely packed fresh chervil
1 tablespoon red-wine vinegar

Steps:

  • Heat a grill or grill pan or preheat oven to 350 degrees. Place bread on grill or on a baking sheet in the oven; toast until golden on both sides, turning once. Transfer to a serving platter, and lightly brush one side of each slice with oil.
  • Roughly chop or slice tomatoes, and place in a large bowl. Add the salt and pepper, and toss to combine. Add basil and chervil, and drizzle with the oil and vinegar. Gently toss again. To serve, spoon tomato mixture over bread, and garnish with basil sprigs.

My Mom, Karen, brought these to a party at my house once and they were delicious. I'm not sure where she got the recipe from, but it's a keeper! She made it lower fat, but you can use regular fat ingredients. Enjoy!

1 cup light mozzarella cheese, shredded
1/2 cup half fat mayonnaise (I use Hellmann's)
2 roma tomatoes, seeded and diced small
1 teaspoon dried oregano, crumbled
1/2 teaspoon dried basil, crumbled
1/2 teaspoon fresh ground black pepper
1 -2 garlic clove, finely chopped
1 whole grain baguette, cut into 18 - 24 1/4-inch slices

Steps:

  • Combine all ingredients except for the baguette slices, until well blended. Spread cheese mixture evenly on one side of each baguette slice.
  • Place slices, cheese side up, on a grill topper (a nonstick flat grate that has many holes). Grill, with lid down, over low heat on barbeque for 3 to 5 minutes, or until bread is is lightly toasted and cheese is melted.
  • These can also be baked in the oven at 350F or broiled, until lightly browned.

  • For the tomatoes, up to an hour before you're serving, combine the shallots, garlic, and vinegar in a medium bowl. Set aside for 5 minutes. Whisk in the remaining 1/3 cup olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper. Add the tomatoes, stir gently, and set aside for 10 minutes. Stir in the basil and taste for seasonings.
  • To assemble the crostini, spread each slice of bread with a generous amount of whipped feta. With a slotted spoon, place the tomatoes on top. Put the crostini on plates and scatter with the pine nuts. Sprinkle with extra basil and serve.

  • Preheat the oven (or a gas grill*) to 450 degrees Fahrenheit. Line a large, rimmed baking sheet with parchment paper for easy clean-up, if desired. If your baking sheet is smaller than mine, you may need to make the toast in two batches.
  • Slice your baguette on the diagonal into pieces no wider than ½-inch. I can usually fit 20 to 24 slices on my large baking sheet; you might have some bread left over. Lightly brush both sides of each slice with olive oil (this will require about 2 to 3 tablespoons oil).
  • Place the slices in a single layer on your prepared baking sheet and bake them on the middle rack for 6 to 9 minutes, until they’re crisp and nicely golden on top. Sprinkle the toasts lightly with salt. Transfer the toasts to a serving platter, if desired, and use as desired.

  • Bring a large pot of water to a boil. Cut a small cross at the base of each tomato then add to the boiling water and simmer for 1-2 minutes.
  • Prepare a bowl of ice water and once the skins on the tomatoes start to shrivel, remove them from the boiling water with a slotted spoon and place into the bowl of ice water.
  • The skins will start to slip off and you can easily remove them. Discard the skins and place the tomatoes in a large jar along with your preferred herbs, garlic and chilli.
  • Combine olive oil, salt and pepper and mix well. Pour the marinade over the tomatoes. Seal the jar and gently tilt to cover the tomatoes in marinade. Allow to marinade for at least 30 minutes.
