MARGHERITA PITA PIZZAS

- Place pita breads on an ungreased baking sheet; brush with oil. Top with garlic, 1 cup cheese, tomatoes, garlic powder and remaining cheese; sprinkle with Italian seasoning. , Bake at 425° for 10-12 minutes or until cheese is melted. Top with basil.

- Heat grill to medium-low heat.
- Grill pitas 30 sec.; turn. Top with pizza sauce, cheese and tomatoes.
- Cook 2 to 3 min. or until cheese is melted and bottoms are golden brown.

ROASTED TOMATO AND BASIL PIZZA
This Mediterranean-style pizza is a wonderful change to everyday pizza. It's a great summertime dish to make when basil and tomatoes are in season. Althought you can use prepared pesto, I normally make my own which has quite a hint of lemon in it. Do not substitute dried basil - it just won't work. This would also make a great appetizer if sliced in very thin wedges.

- Preheat oven to 375 degrees.
- Slice plum tomatoes into 1/4" thick slices.
- Arrange on lightly greased cookie sheet.
- Drizzle with olive oil and balsamic vinegar.
- Season with salt and pepper.
- Bake for 45 minutes.
- When tomatoes are ready, spread pesto on pizza crust.
- Top with sliced bocconcini and roasted tomatoes.
- Bake for 7- 9 more minutes.
- Then, remove pizza from oven and sprinkle with chopped basil and then parmesan.
- Return to oven for 2-3 more minutes.
- (Place pizza directly on middle rack of oven for a crispy pizza; place on pizza pan for a more chewy pizza.) Serve.
INDIVIDUAL PESTO FETA PITA PIZZA
These little delights are easy and out of this world delicious! The pita pocket makes a lovely, crispy crust. I make one of these and pop it into my toaster oven and in about ten minutes have a "gourmet-style" lunch. Fantastic for cutting into quarters and serving as party appetizers too. Note: The tomato, pesto and feta cheese amounts are approximate - put on as much or little of each as you want.

Not sure where I got this but it makes a light lunch or quick snack. Sometimes I even have it for breakfast. I prefer whole wheat pita but feel free to use white.

- Preheat grill/broiler.
- In a small bowl, combine tomato, olive oil, oregano, basil, salt and pepper and set aside.
- Carefully slice open the pita so that you have two rounds and place on a baking sheet, cut side up.
- Spread each pita round with 1-2 tablespoons of ricotta cheese.
- Spread half of the tomato mixture onto each round.
- Place under the grill until heated and the pita starts to brown, about 5 minutes.
- Enjoy!

PITA PIZZAS, GREEK STYLE
These light, tasty Mediterranean pizzas are perfect for summertime cuisine! The basics of pita, tomato, basil, feta and garlic are the mere canvas for this tasty Grecian treat!

- First, preheat oven to 375°F.
- Depending on number of guests will determine exact amount of pitas and ingredients.
- Figure 1-2 pizzas per person,(depending on how hungry everyone is)!
- Preparation includes: peeling/roasting garlic and onion. Chopping/washing spinach. Slicing tomatoes (1/4" thick the most).
- First, take one to two peeled garlic cloves per pita and slice into thin pieces. Place on baking sheet. Chop red onion into small, sugar cube size pieces and place on other side of baking sheet. Drizzle olive oil over both garlic and onion pieces and place in oven at 375 degrees. Check every one to two minutes until lightly browned on edges. The purpose of roasting brings out the nutty flavor of the garlic and the caramelizing of the onion.
- Place 2-3 handfuls of spinach in a microwavable bowl with a little bit of water in bottom of dish. Cook for one minute to a minute and a 1/2 until soft and dark green.
- Take small leafs off oregano sprigs and wash with fresh basil.
- Lightly brush pita breads with olive oil. Place thinly sliced roma tomatoes over entire pita. Sporadically place spinach over tomato with bits of roasted garlic and onion. Scatter pieces of oregano over pitas with artichoke hearts, roasted vegetables and kalamata olives. Add dashes of salt and pepper (capers are optional).
- Place on oven rack directly (foil on the rack below prevents food from dripping on oven directly). Check after 5-7 minutes.
- Cook until edges of pita are lightly browned.

- Heat oven to 200C/180C fan/gas 6 and put a baking sheet inside to heat up. Spread each pitta with 1 tsp purée. Top with the tomatoes, shallot, chorizo and cheddar.
