I was looking for a tomatillo salsa recipe for canning & couldn't find one that suited our Taste so, I came up this this one. Everyone that has tried it likes it. We have a lot of tomatillos in the garden, so I wanted a way to use them.

6 cups tomatillos, chopped
3 cups onions, chopped
3 jalapeno peppers, chopped
6 garlic cloves, chopped
1/2 cup cilantro, chopped
1/2 cup lemon juice
2 teaspoons cumin
1 tablespoon salt
1 teaspoon black pepper

Steps:

  • Combine all ingredients in a large pot & stir frequently over high heat until mixture boils.
  • Reduce heat.
  • Simmer 20 minutes.
  • Ladle into pint jars.
  • Leave 1/2 inch head space.
  • Adjust lids, process in a hot water bath for 20 minutes.
  • Be sure to wear gloves when chopping peppers as they will burn fingers.
  • Also, have good ventilation when cooking--I have found this to be true when cooking ALL salsa.
  • I use a food processor for chopping.
  • If you want it hotter use more jalapeños & you can use more or less cumin, as cumin makes it hot, BUT gives a good flavor.

TOMATILLO SALSA

This is a standard Mexican salsa that you find everywhere in Mexico. Tomatillos have a natural acidic and fresh note that gives them a little sparkle. (They keep that sparkle even after they're cooked.) Tomatillo salsa is a natural with the flavors of grilled meat, but it is a great do-ahead, have-on-hand salsa to freshen up anything off the grill or out of a skillet.

1 pound fresh tomatillos
1 large Spanish onion (about 12 ounces), cut into large chunks (about 3 cups)
3 cloves garlic
1/2 packed cup coarsely chopped cilantro leaves
1/2 jalapeno (seeds and all if you like heat)
1/2 lime, juiced
Kosher or fine sea salt

Steps:

  • Pull the husks from the tomatillos and wash them under cool water until they no longer feel sticky. Cut them into quarters and put them into the work bowl of a food processor. Add the onion and garlic and process until smooth. Add the cilantro, jalapeno and lime juice and process until the jalapeno is finely chopped.
  • Scrape the mixture into a small saucepan. Season lightly with salt and bring to a boil over medium heat. Cook, stirring occasionally, until most of the liquid is boiled off and the salsa looks relish-y, about 15 minutes. Cool before using. The sauce can be refrigerated for up to 1 week. If refrigerated, you may want to add a little salt and/or lime juice to the salsa before serving.

SALSA VERDE: GREEN TOMATILLO SALSA

8 ounces (5 to 6 medium) tomatillos, husked and rinsed
Fresh hot green chiles, to taste (roughly 2 serranos or 1 jalapeno), stemmed
5 or 6 sprigs fresh cilantro (thick stems removed), roughly chopped
Scant 1/4 cup finely chopped onion

  • Whether you choose the verdant, slushy, herby freshness of the all-raw tomatillo salsa or the oil-colored, voluptuous, sweet-sour richness of the roasted version, tomatillos are about brightening tang. The buzz of the fresh hot green chile adds thrill, all of which adds up to a condiment most of us simply don't want to live without.
  • For the All-Raw version: Roughly chop the tomatillos and the chiles. In a blender or food processor, combine the tomatillos, chiles, cilantro and 1/4 cup water. Process to a coarse puree, then scrape into a serving dish. Rinse the onion under cold water, then shake to remove excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.
  • For the Roasted version:
  • Preheat a broiler.
  • Roast the tomatillos and chiles on a baking sheet 4 inches below a very hot broiler until darkly roasted, even blackened in spots, about 5 minutes. Flip them over and roast the other side, 4 to 5 minutes more will give you splotchy-black and blistered tomatillos and chiles. In a blender or food processor, combine the tomatillos and chiles, including all the delicious juice that has run onto the baking sheet. Add the cilantro and 1/4 cup water, blend to a coarse puree, and scrape into a serving dish. Rinse the onion under cold water, then shake to remove the excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.

ROASTED TOMATILLO SALSA

2 pounds fresh tomatillos, husked and well rinsed
2 fresh jalapeno peppers
1 medium white onion, quartered
4 tablespoons olive oil
4 cloves garlic, unpeeled
1/2 cup loosely packed fresh cilantro leaves
Juice of 1/2 lime
Kosher salt

Steps:

  • Preheat the oven to 450 degrees F.
  • Add the tomatillos to a baking sheet along with the jalapenos and onion wedges. Toss with 1 tablespoon of the olive oil and roast about 7 minutes. Turn the vegetables, add the garlic and roast until everything is slightly softened and charred, another 7 to 8 minutes. Set aside to cool.
  • Peel the garlic and remove the stems and seeds from the jalapenos. Add the roasted vegetables to the bowl of a food processor and pulse until still slightly chunky but well combined. Add the cilantro, lime juice and 1 teaspoon salt and pulse until incorporated. With the processor running, stream in the remaining 3 tablespoons olive oil until the salsa is slightly runny but not smooth. At this point you can season with additional salt if desired.
  • Serve with chips or as a salsa for tacos and burritos.

Steps:

  • Place tomatillos, onion, garlic, and chile pepper into a saucepan. Season with cilantro, oregano, cumin, and salt; pour in water. Bring to a boil over high heat, then reduce heat to medium-low, and simmer until the tomatillos are soft, 10 to 15 minutes.
  • Using a blender, carefully puree the tomatillos and water in batches until smooth.

Home-canned tomatillo salsa.

4 green peppers ((sweet, such as bell))
6 jalapeno peppers
1 kg tomatillos (fresh, chopped. 6 cups / 2 lbs. Measured after prep))
350 g onion ((chopped, white. 2 cups / 3/4 lb. Measured after prep))
4 cloves garlic
150 ml white wine vinegar ((5% or higher. 2/3 cup / 5 oz))
1 tablespoon salt ((OR non-bitter, non-clouding salt sub))
1 teaspoon ground coriander
1 teaspoon ground cumin
1/4 teaspoon ground black pepper
50 g coriander ((aka cilantro. Finely chopped fresh. About 3/4 cup packed. 2 oz.))
10 g parsley ((fresh, finely chopped. 1/2 cup / .5 oz))
4 tablespoons lime juice ((60 ml / 2 oz))

Steps:

  • Start heating oven to 240 C / 475 F.
  • Get a large, rimmed baking sheet and line it with tin foil. Don't grease or spray. Set aside.
  • Wash, stem and seed all the peppers.
  • Place on baking sheet cut side down.
  • Bake until charred -- about 30 minutes.
  • Meanwhile, remove and discard the husks from the tomatillos. Wash well.
  • Chop the tomatillos, add to large pot.
  • Add the ingredients down to and including the black pepper to the pot.
  • Wash and chop the cilantro and the parsley, set aside.
  • When peppers are done, remove from oven, and let cool until peppers can be safely handled.
  • Chop peppers and add to pot.
  • Turn stove top heat on, and bring pot to a boil, covered.
  • Then lower the heat to medium, and simmer for 5 minutes.
  • Uncover the pot, and let simmer until it thickens with a lot of the water driven off -- about 30 minutes.
  • Add cilantro, parsley, lime juice. Stir.
  • Simmer 3 more minutes to heat through.
  • Ladle hot salsa into hot jars.
  • Leave 2 cm (1/2 inch) headspace.
  • Debubble, adjust headspace.
  • Wipe jar rims.
  • Put lids on.
  • Process in a water bath or steam canner.
  • Process jars for 20 minutes; increase time as needed for your altitude.

Canning roasted tomatillo salsa is a great way to preserve the abundance of tomatillos from the garden. Enjoy with your favorite Mexican recipes.

8 pounds tomatillos (husks removed)
4 medium white onions (cut into wedges)
4 jalapeño chiles (or serrano peppers)
6 cloves garlic (peeled)
1 cup fresh lime juice (or bottled lime juice)
1/2 cup chopped fresh cilantro leaves
2 teaspoons kosher salt ((optional for flavor))
1 teaspoon black pepper ((optional for flavor))
1/2 teaspoon ground cumin ((optional for flavor))

Steps:

  • Preheat oven to 425˚F.
  • Peel the husks off the tomatillos and rinse them well. Cut the tomatillos in half and divide up into the rimmed baking sheets or roasting pans.
  • Peel and cut your onions into chunks. Add to the roasting pans.
  • Wash the jalapeño peppers and add them whole to the roasting pans.
  • Peel your garlic, and scatter into the roasting pans.
  • Roast the vegetables in a preheated oven until everything is slightly softened and charred, about 15-20 minutes. Flip half way through so the vegetables roast evenly.
  • Remove the baking sheets from the oven and let the roasted vegetables cool for 5-10 minutes.
  • Wash your jars, lids, screw bands, and canning tools in hot soapy water. Rinse thoroughly to remove all suds. Set aside to air dry on a clean kitchen towel.
  • Place the jar rack into water bath canner, place jars in the canner, and add water to cover. Bring the canner to a simmer (180˚F) for 10 minutes, and keep the jars hot until you are ready to fill them.
  • While wearing gloves, remove stems and seeds from the jalapeño peppers. You can keep the seeds if you like more heat.
  • Working in batches, add the roasted vegetables and their liquid to a food processor. Process until smooth, and then pour into a large sauce pot. Continue processing the vegetables in batches until done.
  • Add the lime juice, cilantro leaves, salt, pepper, cumin, and stir to combine. Bring the pot to a simmer (180˚F), and then turn the heat to low and keep warm.
  • Lay a dry kitchen towel on the counter. Use the jar lifter to remove a jar from the canner. Drain the water back into the canner, and place on the towel. Keep the remaining jars in the canner so they stay hot.
  • Use the canning funnel and ladle to fill the jar with hot relish, leaving 1/2-inch headspace.
  • Wipe the rim to remove any residue, center a lid on the jar, and screw on a band until it is fingertip tight. Use the jar lifter to place the jar back into the canner, and repeat with the remaining jars.
  • Once all the jars are in canner, adjust the water level so it is two inches above the jar tops.
  • Cover the canner and bring to boil over high heat. Once water boils vigorously, continue boiling for 20 minutes at altitudes of less than 1,000 feet. Adjust processing time for your altitude if necessary (See Notes).
  • When processing time is complete, turn off the heat, and let the canner cool down and settle for about 5 minutes.
  • Spread a dry kitchen towel on the counter. Remove the cover by tilting lid away from you so that steam does not burn your face.
  • Use the jar lifter to remove the jars from canner and place on the towel. Keep the jars upright, and don't tighten bands or check the seals yet. Let sit undisturbed for 12 to 24-hours to cool.
  • After 12 to 24-hours, check to be sure jar lids have sealed by pushing on the center of the lid. The lid should not pop up. If the lid flexes up and down, it did not seal. Refrigerate jar and use up within a week.
  • Remove the screw on bands and wash the jars. Label, date, and store in a cool, dark place for 12 to 18 months. Allow at least 3 to 4 weeks for the salsa to develop its flavor. Once the jar is open, refrigerate and use up within a week. Yields about 6 pints.

Canning salsa verde is the perfect way to preserve a bumper crop of tomatillos. Pull a jar out of the pantry for a tasty dip, use it as a tomatillo enchilada sauce, or add a jar to a hearty winter pork stew.

5 cups tomatillos, husked & chopped
1 1/2 cups bell pepper or other sweet pepper, chopped
1/2 cup hot peppers, chopped (such as jalapeno)
4 cups onion, diced
1 cup lime juice (or lemon juice)
1 whole garlic bulb, peeled and minced
1 Tbsp. ground cumin
3 Tbsp. dried oregano leaves
1 Tbsp. salt
1 tsp. black pepper

Steps:

  • 1. Combine all ingredients in a large stockpot and bring to a simmer on the stove. Simmer for 20 minutes to an hour to allow the tomatillos to break down and flavors to meld. Taste and adjust salt accordingly. 2. Ladle sauce into prepared pint mason jars leaving 1/2 inch headspace, and process in a water bath canner for 15 minutes for pints. (Adjust for altitude) 3. Remove from the canner and allow to cool at room temperature before checking seals to make sure all jars have properly sealed. Place any unsealed jars in the refrigerator for immediate use.

4 tomatoes
4 fresh tomatillos, chopped
1/2 small red onion, diced
2 jalapeno peppers, minced
1 garlic clove, minced
2/3 cup fresh coriander, chopped
1/4 cup extra virgin olive oil
3 tablespoons orange juice
1/4 teaspoon salt and pepper, each

Steps:

  • In a pot of boiling water, blanch tomatoes for about 30 seconds. Immediately place in ice cold water, then peel, seed and chop to make about 2 cups.
  • In a medium bowl, combine all the ingredients together. You can also make this ahead of time, by putting the salsa in an airtight container up to 24 hours, and draining just before serving.

1 large poblano pepper, stemmed, halved and seeded
1/2 large white onion, cut into 4 wedges
4 cloves garlic
2 1/4 pounds tomatillos, husked
1/2 teaspoon ground cumin
1/4 cup fresh lime juice or bottled Key lime juice
1 tablespoon distilled white vinegar
1 1/2 teaspoons sugar
Kosher salt
3 red jalapeno peppers, thinly sliced crosswise (with seeds)
Chopped fresh cilantro, for topping (optional)

Steps:

  • Sterilize four 8-ounce canning jars and lids (see Disclaimer).
  • Preheat the broiler. Put the poblano halves skin-side up on a foil-lined broiler pan with the onion and garlic. Broil until the poblano is charred and the onion and garlic are browned, about 8 minutes. Cool the poblano slightly, then peel.
  • Pulse the tomatillos in a food processor in batches until coarsely chopped, then transfer to a bowl. Add the poblano, onion and garlic to the processor and pulse until coarsely chopped (do not overprocess). Transfer to a large, wide saucepan. Add the cumin, lime juice, vinegar, sugar and 1 tablespoon salt. Bring to a boil over high heat and cook, stirring occasionally, until slightly reduced, 3 to 4 minutes.
  • Add the tomatillos and jalapenos to the pan, cover and return to a boil. Cook until heated through, 3 to 4 more minutes.
  • Fill the jars with the tomatillo mixture, leaving 3/4 inch headspace, then seal and process. After opening, top the salsa with cilantro, if desired.

ROASTED TOMATILLO, TOMATO N CHILE SALSA

Roasted veggies A pH of 4.6 or lower is required for safe canning without the use of pressure processing. So don't skip the lime juice and vinegar. You can also check amount of salsa after blending. Mine came to 10 cups pureed so I had 10 jars and lids ready.

2 lbs tomatillos, papery husks and stems removed, rinsed (halve the larger tomatillos)
2 lbs tomatoes, cut in half
1/2 lb onion, peeled and cut into 1-inch chunks (8 ounces)
2 chipotle chiles in adobo
2 tablespoons adobo sauce
2 ounces jalapeno chilies (your choice of heat, seeded if you don`t want it too hot, cut in half) or 2 ounces serrano chilies (your choice of heat, seeded if you don`t want it too hot, cut in half)
1 bulb of garlic, separate the bulbs
1 cup roughly chopped fresh cilantro
1/2 cup fresh lime juice
1/2 cup vinegar, 5% acidity
2 teaspoons sugar
2 teaspoons pickling salt (to taste)
1 teaspoon ground cumin

Steps:

  • Sterilize jars and leave in hot water or dishwasher while you prepare the salsa ingredients.
  • Put the tomatillos, tomatoes, onions, fresh chiles and garlic in a single layer on two large rimmed baking sheets and roast for 25-35 minutes, or until charred in spots. The tomatillos and tomatoes will be soft, collapsed, and leaking juices.
  • Allow to cool slightly before blending.
  • Peal the garlic cloves and place into a blender add the cilantro, roasted veggies, chipotle in adobo sauce, chiles and cilantro. Blend to a chunky or smooth (your choice) pour into a large pot add lime juice, vinegar, ( the last two are nessesary for a proper PH), sugar, salt and cumin. Boil then reduce heat and simmer for 10 minutes.
  • Ladle the hot salsa into the jar, leaving 1/2 inch headspace.
  • Remove air bubbles and re-measure headspace. If needed, add more salsa to meet recommended headspace. Wipe rim. Center lid on jar. Apply band and adjust until fit is fingertip tight.
  • Repeat with the remaining jars.
  • Place jars in to the hot water bath, making sure that the water covers the jars by at least 1 inch. Bring to a boil, and boil for 5 minutes to process (at sea level), and an additional minute per 1,000 ft above sea level (I live at 5280, so I boiled for a extra five minutes). Remove the jars to a folded towel and leave undisturbed for 12 hours. After an hour, check to see if the jars have sealed by pressing down on the middle of the jar lid. If it can be pressed down, it hasn't sealed and should be refrigerated immediately. Store the jars in a dark area.

TOMATILLO GUAJILLO MILD SALSA FOR CANNING

Salsa verde NOT! ;) Tomatillos are disguised in this salsa. It's not green but red from the Guajillos [gwah-HEE-yoh]. This is a mild tangy peppery salsa but if you prefer to add more heat go right ahead a add a ghost chili and leave the seeds in the jalapenos.

8 dried guajillo chilies, rinsed free of any dirt, seed, veins and stems, discarded
10 cups tomatillos, husks dicarded
3 jalapenos, seeds and veins removed
6 shishito chilies, stems removed
1 onion, peeled and quartered
1 bulb of garlic, cloves separated skin on
1 lime, zested then sliced in halve
1 tablespoon avocado oil
1 tablespoon sugar (optional)
1 teaspoon sea salt or 1 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon oregano
1/2 teaspoon dried chipotle pepper
1/2 teaspoon citric acid, optional I did use and had 3 . 2 ph for canning
1 bunch cilantro (optional) or 1 bunch parsley, rinsed and rough chopped (optional)

Steps:

  • Prepare boiling water canner. Heat jars in simmering water until ready for use. Do not boil. Wash lids in warm soapy water and set bands aside.
  • Place Guajillos in a bowl breaking up in small pieces to soften faster and cover with boiling water. Cover the bowl. Give it an hour to rehydrate.
  • Preheat oven to 425 degrees.
  • On a large pan place, tomatillos, jalapenos, onion, garlic, shishitos, lime and oil tossing to lightly coat. Spread in a single layer.
  • Roast for 30 minutes.
  • In a blender or food processor place lime zest and soaked guajillos with soaking water, roasted veggies discarding the skins from the garlic and stems from shishito chiles. Along with the rest of the listed ingredients. Pulse to a semi smooth salsa.
  • Place in pot to heat to desired thickness.
  • Ladle hot salsa into hot jars, leaving 1/2 inch headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot salsa. Wipe rim. I like to wipe with vinegar. Center lid on jar. Apply band until fit is fingertip tight.
  • Process jars in a boiling water canner for 15 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed. If they do refrigerate and enjoy. Label jars and enjoy giving as gifts and eating, Storing for up to a year.

5 cups chopped tomatillos or green tomatoes, (about 2 pounds, washed, husks removed from tomatillos)
3 cups coarsely chopped hot peppers: a combination of jalapeño and long green Anaheim or Poblano chilies (to your taste*)
3 cups coarsely chopped onions
6 medium cloves garlic, (chopped)
1 cup bottled lime juice ((or lemon))
2 tablespoons dried oregano (or to taste)
1 tablespoon salt (or to taste)
1 tablespoon ground cumin (or to taste)
2 teaspoons black pepper

Steps:

  • Preheat oven to 425 degrees.
  • Place tomatillos or green tomatoes in a large roasting pan. Add chilies, onion, garlic and mix.
  • Roast vegetables for 30-35 minutes, stirring at the halfway mark, until the tomatillos/tomatoes are starting to break down.
  • Scrape the roasted vegetables into a large stockpot and add the remaining ingredients. Bring to a boil and simmer, uncovered, about 10 minutes. While simmering, prepare water bath canner, lids & 4 pint or 8 half-pint jars if planning to can (wash freezer-safe jars or containers for freezing, or use freezer baggies)

This is a simple green tomatillo salsa recipe for water bath canning that is made with tomatillos, peppers, onions, and is cooked on the stove and then made shelf stable by boiling jars filled with the salsa.

5 cups chopped tomatillos
1-½ cups seeded, chopped long green chilies (such as Anaheim or banana peppers)
½ cup seeded, finely chopped jalapeño peppers
4 cups chopped onions
1 cup bottled lemon juice
6 cloves garlic, finely chopped
2 tablespoon ground cumin
1 tablespoon salt
1 teaspoon black pepper

Steps:

  • You will need to prep the tomatillo by taking off the husk and then washing. Don't worry about peeling or seeding them.
  • Prep the peppers. At this point, make sure you are wearing hand protection. Chop the chilies finely. If you are noticing that the skin of the chilies are tough you can heat them up in the oven until the skin starts to blister- usually about 6 minutes at 400 degrees. To make peeling the skin easier, place the chilies in a pot and cover with a damp cloth. Let them cool and the skins should slide right off.
  • There is no need to peel the jalapeño peppers. If you are looking to decrease the spiciness you can remove the seeds.
  • You can finely chop all of your ingredients or you can process them in a food processor.
  • In a large stock pot add the chopped tomatillos, chopped chilies, chopped jalapenos, chopped onions, lemon juice, garlic, cumin, salt, and pepper. Stir to combine.
  • Bring the mixture to a boil. Once boiling, reduce heat and simmer for 20 minutes. Keep stirring periodically.
  • Now you are ready to put the salsa in the pint jars.
  • Ladle the hot salsa mixture into clean and sanitized pint mason jars.
  • Make sure to leave about 1/2 inch space at the top of the jar. Remove all of the air bubbles (gently tap the jars on a thick towel set on your counter to help them come to the surface) and wipe the mouths of the jars with a clean, damp cloth.
  • Apply the two part lid and screw the ring or band on.
  • Place the jars in a water bath canner filled half way with hot tap water. Once all of the jars are in the canner, fill the canner up with more hot water until the water is 1 to 2 inches over the top of the jars.
  • Bring the canner to a boil. Once the water is fully boiling, boil for 15 minutes (see notes on altitude adjustments).
  • Once the 15 minutes has passed, turn the heat off your canner. When the water stops boiling, remove the hot jars from the water and place them on a cutting board or on a thick towel (taking care not to bump them together when setting them down) to cool.
  • Once cooled, remove the rings for storage, write what's in the jar and the date on the top of the lid, and store for up to a year on the shelf (they'll last longer than that but a year is ideal).

I have tried the other tomatillo salsa's on here and none were quite right - too sweet or too citrusy but this one is just right. Depending on the flavour of the veggies I add about 1/4 packet of Mrs Wages salsa mix.

16 cups pureed tomatillos
3 cups pureed red onions
3 cups pureed white onions
3 jalapenos (de-seeded)
1 anaheim chili (de-seeded)
1/2 cup lime juice
1/2 cup vinegar
12 garlic cloves, minced
1 cup cilantro, fresh
2 tablespoons dried cilantro
2 tablespoons salt
1 teaspoon white pepper
1 teaspoon black pepper
4 teaspoons cumin
1/4-1/2 teaspoon ground oregano
1/8-1/4 teaspoon ground coriander

Steps:

  • I puree tomatillos with the food processor and place it in the stock pot to cook down while I process all other items. I leave a bit of juice from the tomatillos in the food process and puree the onions, peppers and cilantro together, then add to stockpot. Add all other items and cook till desired thickness stirring occasionally.
  • Process in water bath canner for 20 minutes.

Roasted Tomatillo Salsa image

Number Of Ingredients 6

1 pint tomatillos (de-husked, washed and halved)
1 onion (cut into chunks)
5-6 garlic cloves
1-2 jalapenos
a handful of cilantro
1 lime

Steps:

  • Pre-heat your oven to 425 degrees.
  • Line a rimmed cookie sheet with foil and lay out the tomatillos and half the garlic and onions on it. Roast for 10 to 15 minutes.
  • When it's roasted and cooled down enough to handle, squeeze the garlic out of their skins and pour the whole roasted mess (tomatillos, garlic and onions) into a blender. Add the rest of the raw garlic, the other half of the onion, a handful of cilantro, a pinch of salt, some jalapeno and a bit of lime juice. Blend until it's all combined and taste. It might need a pinch of sugar to balance the tartness.
  • Delicious (and it just gets better after it sits for a little while) on burritos or chips.

  • If you don't have your green chiles and jalapenos prepped, follow these directions for roasting peppers. Arrange the tomatillos, sliced onions and the garlic cloves on a cooking sheet (or two) and set under the broiler until they are a bit charred.
  • Once you have all the vegetables prepped, peel the garlic and put it and everything else into a food processor and pulse to make a rough salsa. You're done if you don't want to can your salsa. Kept in a covered container, it will keep a week in the fridge.
  • If you are canning, add 1 teaspoon of the Fruit Fresh (citric acid) to each pint jar; the jars should be sterilized beforehand.
