4 cube steaks (each about 1/3 pound)
1 ½ cups vegetable oil
2 cups buttermilk (see notes for substitutions)
2 large eggs
3 teaspoons salt
1 cups flour
1/3 cup corn starch
1 ½ teaspoons seasoned salt
½ teaspoon paprika
¼ teaspoon cayenne pepper
1 teaspoon black pepper
3 Tablespoons butter
3 Tablespoons flour
3 Tablespoons pan drippings
3 cloves garlic, minced
½ cup chicken broth
1 sprig fresh thyme
1 teaspoon black pepper
3/4 teaspoon seasoned salt
¼ teaspoon cayenne pepper
1 ½ cup milk
¾ cup half and half

Steps:

  • Place saran wrap over each cube steak and use the rough end of a meat tenderizer to pound it thin, about ½ inch thick or so. This really makes a nice difference in the consistency of the meat even though cube steak has already been tenderized.
  • Pat the steaks completely dry. Combine the marinade ingredients in a large casserole dish.
  • Cover and marinate the steaks in the fridge for 1-2 hours, or overnight. (The longer the better.)
  • Combine breading ingredients. Generously coat each steak just before you fry it.
  • Add enough oil to cover the steak by 1/3 and heat it to 350° F. (Make sure it's properly preheated or the breading will fall off.)
  • Cook the steaks in batches of 2, leaving room around each. Fry for about 3-4 minutes on each side, until golden brown. Use kitchen tongs to carefully check the bottom and flip.
  • Remove and transfer to a wire cooling rack and allow excess oil to drip out from the bottom. This keeps the bottom nice and crispy.
  • Once all the steaks are fried, keep them warm in a 200° F oven while you prepare the gravy.
  • Transfer the pan drippings into a small heat-proof bowl. Don't clean the pan.
  • Allow the black flecks to fall to the bottom and skim 3 tablespoons of clean oil off the top. Set aside.
  • Melt the butter in the same pan over medium heat.
  • Whisk in the flour for 1 minute to cook off the raw flour taste.
  • Add the oil drippings and minced garlic. cook for 1 minute.
  • Add the seasonings, and then the chicken broth in splashes, stirring continuously.
  • Add milk and half and half in splashes, stirring continuously. Bring to a gentle boil, then reduce to a simmer.
  • Let it simmer and thicken until desired consistency is obtained.

The hard part is deciding whether you want to make it for breakfast or dinner. My family can't get enough of these tender steaks with that delightful crispy, crunchy coating. And the gravy? Heaven!

4 cube steaks (about 1/3 lb each)
1 1/2 cups all purpose flour
2 tsp fresh ground black pepper, divided
2 tsp kosher salt or sea salt, divided
1/2 tsp smoked paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp baking soda
1/2 tsp baking powder
1 1/2 cups buttermilk
2 tsps TABASCO® Sauce (original)
2 eggs
1 cup vegetable oil
4 tbsp grease
4 tbsp flour
2 to 3 cups whole milk
1/2 cup heavy whipping cream
salt and pepper to taste

Steps:

  • In a shallow bowl, whisk together flour, one teaspoon black pepper, one teaspoon salt, paprika, onion powder, garlic powder, baking soda, and baking powder. Set aside.
  • In a separate shallow bowl, whisk together buttermilk , TABASCO® Sauce, and eggs. Set aside.
  • Pat cube steaks dry with a paper towel, removing as much moisture as possible. Season with one teaspoon of salt and one teaspoon of pepper. Let sit for 5 minutes and pat dry again with paper towel.
  • Dredge the cube steaks in the flour mixture, shaking off excess, then dredge in the buttermilk-egg mixture, letting excess drip off, and then once again in the flour mixture, shaking off excess.
  • Place breaded cube steaks on a sheet pan or metal rack and press any of the remaining flour mixture into the cube steaks making sure that the entire steak is completely coated. Let sit for 10 minutes.
  • Preheat oven to 225 to 250 F.
  • Meanwhile, heat vegetable oil in a heavy skillet or large cast iron skillet over medium high heat. How much oil you need depends on the size of your skillet. You want it to be about 1/4-inch deep. We aren't deep frying the steaks, just shallow frying.
  • Test the oil by dropping a bit of the breading into in. The oil should sizzle and bubble around the breading. Look for the oil to be glistening but not smoking - about 320-340 degrees F. Now we're ready to fry.
  • Place two steaks into the pan at a time and fry for 3 to 4 minutes on each side or until golden brown. Do not flip more than once or the breading will fall off. Do not fry more than two steaks or the pan will be too crowded and the breading will fall off.
  • Remove steaks from pan and drain on paper towels. Place in preheated oven. Turn skillet heat to medium.

4 (1/2 pound) beef cube steaks
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon black pepper
¾ teaspoon salt
1 ½ cups buttermilk
1 egg
1 tablespoon hot pepper sauce (e.g. Tabasco™)
2 cloves garlic, minced
3 cups vegetable shortening for deep frying
¼ cup all-purpose flour
4 cups milk
kosher salt and ground black pepper to taste

Steps:

  • Pound the steaks to about 1/4-inch thickness. Place 2 cups of flour in a shallow bowl. Stir together the baking powder, baking soda, pepper, and salt in a separate shallow bowl; stir in the buttermilk, egg, Tabasco Sauce, and garlic. Dredge each steak first in the flour, then in the batter, and again in the flour. Pat the flour onto the surface of each steak so they are completely coated with dry flour.
  • Heat the shortening in a deep cast-iron skillet to 325 degrees F (165 degrees C). Fry the steaks until evenly golden brown, 3 to 5 minutes per side. Place fried steaks on a plate with paper towels to drain. Drain the fat from the skillet, reserving 1/4 cup of the liquid and as much of the solid remnants as possible.
  • Return the skillet to medium-low heat with the reserved oil. Whisk the remaining flour into the oil. Scrape the bottom of the pan with a spatula to release solids into the gravy. Stir in the milk, raise the heat to medium, and bring the gravy to a simmer, cook until thick, 6 to 7 minutes. Season with kosher salt and pepper. Spoon the gravy over the steaks to serve.

2 tablespoons canola oil
2 tablespoons lemon juice
2 tablespoons reduced sodium soy sauce
4 garlic cloves, minced
2 teaspoons honey
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground ginger
3/4 lb boneless skinless chicken breast, cut into strips

Steps:

  • Cut the chicken into strips and put into a resealable bag. I usually will cut each chicken breast into 3 strips.
  • Combine all ingredients except chicken together.
  • Put about 1/4 cup of the marinade into the bag with the chicken. Turn to coat. Refrigerate for about 3-4 hours.
  • Cover and refrigerate the remaining marinade.
  • Drain the marinade from the chicken.
  • Thread the chicken strips onto skewers.
  • Coat grill with non-stick spray before heating.
  • Grill, uncovered, over medium-hot heat for about 3-4 minutes on each side, basting with the reserved marinade.

8 (6-ounce) top round steaks
3 teaspoons kosher salt, divided, plus more
Freshly ground black pepper
3 cups all-purpose flour, divided
3 cups cornstarch, divided
3 tablespoons paprika, divided
3 cups buttermilk
4 quarts vegetable oil

Steps:

  • Pound steaks between 2 sheets of plastic to 1/4" thick; season with salt and pepper.
  • Whisk 1 1/2 cups flour, 1 1/2 cups cornstarch, 1 1/2 tablespoons paprika, and 1 1/2 teaspoons salt in a large baking dish. Place buttermilk in another large baking dish. Working one at time, lightly dredge 4 steaks in flour mixture, shaking off excess. Dip in buttermilk, allowing excess to drip off. Dredge again in flour mixture, packing onto steaks and pressing firmly into crevices; shake off excess. Place on a wire rack set inside a rimmed baking sheet. Discard wet flour mixture and repeat process with remaining steaks, flour, cornstarch, paprika, and 1 1/2 teaspoons salt, placing on another rack set inside another baking sheet. Chill, uncovered, 2-6 hours.
  • Let steaks stand at room temperature 30 minutes.
  • Pour oil into skillet to come halfway up sides; fit with thermometer. Heat over high until thermometer registers 325°F. Fry steaks in 4 batches until deep golden brown, about 3 minutes per side. Transfer to paper towels to drain.

  • In a shallow bowl, whisk together flour and spices and season with salt and pepper. (Set aside 3 tablespoons for gravy.) In another shallow bowl, whisk together milk and eggs. Season steak generously with salt and pepper. Working in batches, dredge steak thoroughly in flour mixture to coat, then dip in egg mixture. Return steak to flour mixture and dredge once more.
  • In a large deep-sided skillet over medium heat, heat 1/2 inch oil until shimmering (about 350°). Using tongs, add steak strips, one by one, and cook, in batches, until completely golden, about 2 minutes per side. Drain on a paper towel-lined plate.

2 fillet tail steaks (about 200g each), or 2 sirloin steaks, fat trimmed
2 eggs, beaten
1⁄2 tsp cayenne pepper
steamed greens and corn cobs, to serve (optional)
vegetable oil, for frying
4 tbsp plain flour
1 tbsp cornflour
1 tsp smoked paprika
1 tsp garlic powder
1 tsp dried thyme
1⁄2 tsp ground cumin
1⁄2 tsp ground cinnamon
1⁄2 tsp black pepper
1 tbsp flour
1 chicken stock cube
275ml milk
1 tbsp thyme leaves
squeeze of lemon juice

Steps:

  • Put the steaks on a board and bash with a rolling pin until about half the original thickness. Mix the eggs with the cayenne in a bowl. Combine the ingredients for the spice mix with a large pinch of salt in a separate shallow dish.
  • Dip the steaks into the egg, then the spice mix, turning to coat. Pour the oil into a large non-stick frying pan until the base of the pan is covered. Fry the steaks over a high heat for 2 mins until crisp, then turn and fry for 2 mins more. Transfer to a plate and keep warm.
  • If you're making the sauce, pour away all but 1 tbsp oil from the pan and stir in the flour, cooking until browned. Crumble in the stock cube. Slowly pour in the milk, whisking until smooth and fully incorporated. Reduce the heat to a simmer and cook for 4-5 mins. Season. Add the thyme and plenty of black pepper, then squeeze in the lemon juice to taste. Serve the steaks with the sauce, and greens and corn, if you like.

4 cube steaks ((See Note 1))
2 cups buttermilk
2 large eggs
2 tsp Tabasco
1 cup all purpose flour
1/4 cup cornmeal
1/4 cup cornstarch
2 tsp salt
1 tsp garlic powder
1/2 teaspoon white pepper
4 cups cooking oil (for frying)
3 tbsp butter
3 tbsp all purpose flour
1 1/2 cups beef stock (or broth)
1 large lemon (juiced (4 tablespoons))
1/4 tsp salt
parsley (chopped for garnish)

Steps:

  • To a large bowl deep enough to hold all the steaks, whisk together buttermilk, eggs and Tabasco. Set aside.
  • To another wide bowl to dredge the steaks in, whisk together flour, cornmeal, cornstarch, salt, garlic powder and white pepper.
  • Place the steaks in the buttermilk marinade, turning to coat each, for an 1 hour.
  • Using tongs or a fork, first dredge the steaks into seasoned flour, be sure to coat each side then back into buttermilk marinade (allow excess to drip off) and back into seasoned flour. Gently place on a lined baking sheet. Place in the refrigerator for 15 minutes.
  • Add oil to cast iron skillet or deep frying pan and heat to medium high. Once oil is hot, fry each steak turning until golden brown on each side.
  • Drain steaks on a paper towel lined platter. Tent with foil to keep warm and repeat with remaining steaks. Keep warm in a 250°F oven while you make the gravy.
  • Melt the butter in a sauté pan over medium. Whisk in flour and cook for 3-4 minutes (should be a golden brown).
  • Whisk in the beef stock and lemon juice. Bring to a boil and turn heat to low, allow to thicken until it coats the back of a spoon.
  • Season with salt to taste and spoon gravy on top of steaks. Sprinkle with parsley and serve hot with mashed potatoes or polenta if you prefer.

18 (12-inch) bamboo skewers
1 egg
1 cup buttermilk
1 teaspoon hot sauce
3/4 cup all-purpose flour
1/2 cup semolina flour or cornmeal
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon cayenne pepper
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 cups canola oil
1 cup sour cream
1 teaspoon horseradish
1 tablespoon Worcestershire sauce
2 tablespoons buttermilk
1 teaspoon hot sauce
2 tablespoons freshly chopped parsley leaves

Steps:

  • Thread the sliced cube steak strips onto the skewers.
  • In a baking dish whisk together the egg, buttermilk and hot sauce. In a second baking dish combine the flour, semolina flour, paprika, garlic powder, onion powder, cayenne, salt and pepper.
  • Heat the canola oil in a medium pot over medium-high heat to 350 degrees F.
  • Dredge the beef skewers in the flour mixture and shake off excess so they are lightly dusted. Dip them in the buttermilk and egg mixture coating both sides, then put back in flour mixture making sure to coat completely.
  • Working batches of 6 fry the skewers in hot oil until the coating is golden brown and crispy, about 4 to 5 minutes. Remove to a plate lined with paper towels to drain. The skewers can be held in a preheated 250 degree F oven while frying the remaining skewers. Arrange the skewers on a serving platter and serve the sauce.
  • Whisk all of the sauce ingredients in a small bowl until smooth.

  • Preheat oven to 350°F. Spray sheet pan with non stick spray. Empty both envelopes of Shake 'N Bake in bag. Shake cube steaks one at a time in bag and put on pan. Sprinkle any extra Shake 'N Bake over meat.
  • Cook for 30-35 minutes or until meat is no longer pink.

4 c all-purpose flour
1/4 c Nature's Seasoning
3 Tbsp garlic powder
2 Tbsp onion powder
2 1/2 Tbsp pepper
2 tsp salt
3 eggs
1 1/2 c milk
enough oil to cover steaks in pan

Steps:

  • 1. Mix all dry ingredients in a mixing bowl with clean-dry hands.
  • 2. In a separate bowl, beat eggs. Then add the milk and beat together until smooth.
  • 3. Individually coat both sides of a steak with the flour mixture (helps to give the egg something to stick to). Then dip it in the egg mixture (do not oversaturate... just briefly dunk the steak in the mixture).
  • 4. Take the egg-soaked steak and toss it in the flour mixture. Repeat the process by dipping steak back into the egg mixture, then once again in the flour mixture. Set the steak on a plate and proceed with the remaining steaks, following the same process.
  • 5. Heat oil on MEDIUM-HIGH (oil is ready when you can flick flour into it and it sizzles rapidly). Add steaks two or three at a time (dependent on steak and pan size). Turn once after 4 minutes. Allow to cook another 4 minutes or until juices run clear.
  • 6. When the steak has completed cooking, remove from pan with tongs and place on paper towel-lined platter or plate. While remaining steaks fry, a warmer or an oven at about 170 degrees can be used to keep the steaks warm, without affecting crispiness.
  • 7. Serve with gravy, corn, green beans, and crescent rolls... and you've got a fantastic Southern-style meal!

1 lb cube steak, sliced into 1 inch wide strips
18 (12 inch) bamboo skewers
1 egg
1 cup buttermilk
1 teaspoon hot sauce
3/4 cup all-purpose flour
1/2 cup flour (or cornmeal)
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon cayenne pepper
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
4 cups canola oil
1 cup sour cream
1 teaspoon prepared horseradish
1 tablespoon Worcestershire sauce
2 tablespoons buttermilk
1 teaspoon hot sauce
2 tablespoons freshly chopped fresh parsley leaves

Steps:

  • Thread the sliced cube steak strips onto the skewers.
  • In a baking dish whisk together the egg, buttermilk and hot sauce. In a second baking dish combine the flour, semolina flour, paprika, garlic powder, onion powder, cayenne, salt and pepper.
  • Heat the canola oil in a medium pot over medium-high heat to 350 degrees F.
  • Dredge the beef skewers in the flour mixture and shake off excess so they are lightly dusted. Dip them in the buttermilk and egg mixture coating both sides, then put back in flour mixture making sure to coat completely.
  • Working batches of 6 fry the skewers in hot oil until the coating is golden brown and crispy, about 4 to 5 minutes. Remove to a plate lined with paper towels to drain. The skewers can be held in a preheated 250 degree F oven while frying the remaining skewers. Arrange the skewers on a serving platter and serve the sauce.

2 tablespoons lemon juice
2 tablespoons reduced-sodium soy sauce
4 garlic cloves, minced
2 teaspoons honey
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground ginger
3/4 pound skinless chicken breasts, cut into thin strips

Steps:

  • In a large bowl, combine the oil, lemon juice, soy sauce, garlic, honey and seasonings. Pour 1/4 cup marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for at least 3-4 hours. Cover and refrigerate remaining marinade., Drain and discard marinade. On metal or soaked wooden skewers, thread chicken. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill, uncovered, over medium-hot heat or broil 4 in. from the heat for 3-4 minutes on each side or until chicken is no longer pink, basting frequently with reserved marinade.
