1/3 cup chopped bell pepper
1/3 cup onion
1/3 cup mayonnaise
2 eggs
1 1/2 cups cubed cheddar cheese or 1 1/2 cups swiss cheese
salt and pepper
1/2 cup milk
1 tablespoon cornstarch
1 unbaked pie shell

Steps:

  • Brown meat in skillet with onions and bell pepper then drain.
  • In separate bowl, blend all remaining ingredients and stir until smooth.
  • Add to ground beef mixture.
  • Spoon into pie shell.
  • Bake @ 350° for 35 minutes.

3/4 cup ground beef, cooked and drained
1/4 cup mayonnaise
3/4 cup milk
3 eggs
1 tbsp cornstarch
1 1/2 cup cheddar cheese, cubed
1/2 cup green onions, sliced
Dash of pepper

Steps:

  • Preheat oven to 400F.
  • Spread ground beef in pie shell followed by cheddar cheese, green onions and dash of pepper.
  • In a bowl, stir together mayonnaise, milk, eggs and cornstarch. Pour egg mixture over ingredients in pie shell.
  • Bake for 35 minutes or until a knife inserted in the centre comes out clean. Serve hot.

4 large eggs
1 cup milk
1/3 cup heavy cream
Kosher salt and freshly ground pepper
2 scallions, finely chopped
1 4.25-ounce can chopped green chiles, drained
1/2 cup grated pepper jack cheese (about 2 ounces)
1 frozen 9-inch deep-dish piecrust, thawed
Paprika, for sprinkling
1 5-ounce package mixed salad greens (about 8 cups)
2 tablespoons extra-virgin olive oil
Juice of 1 lemon

Steps:

  • Position a rack in the upper third of the oven; set a baking sheet on the rack and preheat to 400 degrees F.
  • Whisk the eggs, milk, heavy cream, 1/2 teaspoon salt and 1/8 teaspoon pepper in a medium bowl. Whisk in the scallions,chiles and cheese. Pour the mixture into the piecrust and sprinkle with paprika. Place on the hot baking sheet in the oven and bakeuntil golden brown and set, 25 to 30 minutes.
  • Toss the salad greens in a large bowl with the olive oil and lemon juice; season with salt and pepper. Cut the quiche into wedges and serve with the salad.

1 onion, diced
2 garlic cloves, minced
2 (16 ounce) cans kidney beans, drained and rinsed
1 (16 ounce) can black beans, drained and rinsed
2 (14 ounce) cans diced Ro-Tel tomatoes
2 cups beef broth
2 cups frozen mixed white and yellow corn
1 (1 ounce) packet taco seasoning
1/4 teaspoon pepper
2 teaspoons chopped cilantro (optional)
additional chopped cilantro (to garnish) (optional)
sour cream (to garnish) (optional)

Steps:

  • Brown ground beef with onion and garlic in a soup pot or dutch oven. Drain off fat in pot.
  • Add the rest of the ingredients, reserving the chopped cilantro until ready to serve. When ready to serve, sprinkle with chopped cilantro and stir.
  • Bring to boil then let cook over low heat for 30 minutes.

1 prepared unbaked pie shell
3/4 cup cheddar cheese, grated
1/2 cup monterey jack cheese, grated

1 (2 1/2 ounce) can sliced black olives, drained

1 (11 1/2 ounce) can refrigerated cornbread, twist dough (Pillsbury)
cooking spray
1 teaspoon vegetable oil
1/2 cup onion, chopped
2 garlic cloves, minced
1 jalapeno pepper, seeded and chopped
1/2 cup frozen whole kernel corn
1/2 cup red bell pepper, chopped
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/8 teaspoon ground red pepper
1 (10 ounce) package frozen chopped broccoli, thawed (drained and squeezed dry)
1 cup fat-free evaporated milk
3 large egg whites
1 large egg
1/2 teaspoon salt
3/4 cup reduced-fat sharp cheddar cheese

Steps:

  • Preheat oven to 350 degrees F.
  • Unroll dough, unfold layers (do not separate into strips). Place layers lengthwise, end to end, into an 11 x 7 inch baking dish coated with cooking spray. Pinch ends in the middle to seal, press dough up sides of dish. Set aside.
  • Heat vegetable oil in a large nonstick skillet over medium-high heat. Add onion, garlic and jalapeno; saute 3 minutes or until soft. Add corn and the next 5 ingredients (corn through broccoli); saute for 5 minutes or until vegetables are soft and liquid evaporates. Remove from heat, and cool 5 minutes. Combine milk, egg whites, egg and salt; stir well with a whisk. Sprinkle cheese over dough. Spoon broccoli mixture evenly into pan. Pour milk mixture over broccoli mixture. Place dish on a baking sheet. Bake at 350 degrees for 45 minutes; cover and bake for an additional 10 minutes or until set. Let stand 10 minutes before serving.

1 medium onion, chopped (1/2 cup)
2 garlic cloves, minced
1 tablespoon olive oil or 1 tablespoon cooking oil
1 -2 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon salt
1 (15 ounce) can black beans, rinsed and drained
1 1/2 cups cooked wild rice
1 cup monterey jack pepper cheese, shredded (4 ounces)
3/4 cup skim milk
1/3 cup Egg Beaters egg substitute
nonstick cooking spray
green pepper, chopped (optional)
salsa (optional)

Steps:

  • In a saucepan cook onion and garlic in hot oil till tender but not brown.
  • Stir in chili powder, cumin, and salt.
  • Cook for 1 minutes more.
  • Cool.
  • Stir in beans, cooked rice, cheese, milk, and eggs.
  • Spray a 10-inch pie place or quiche dish with nonstick coating.
  • Spoon mixture into pie place and bake, uncovered, at 350 degrees for 30 minutes or till center is set.
  • Let stand 10 minutes.
  • If desired, sprinkle with green pepper and serve with salsa.

1/2 teaspoon salt
1/2 teaspoon pepper
2 pounds lean ground beef (90% lean)
1/2 pound bulk pork sausage
8 slices pepper jack cheese
8 sesame seed hamburger buns, split
Lettuce leaves and tomato slices
Toppings of your choice

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef and sausage over mixture and mix well. Shape into eight patties. , Grill, covered, over medium heat for 5-7 minutes on each side or until no longer pink. Top with cheese. 4 teaspoons ground cumin
1 teaspoon chili powder
3/4 teaspoon garlic powder

3/4 pound bulk pork sausage
8 slices Monterey Jack cheese
8 hamburger buns, split, toasted
8 lettuce leaves
1 large tomato, sliced
