300g / 10oz whole prawns / shrimp (with heads and shells on (Note 7))
3 cup (750 ml) water
1/2 cup (125 ml) chicken stock/broth (, low sodium)
2 stalks of lemongrass (, outer layers peeled(Note 1))
1.5 cm / 3/5" piece of galangal (, cut into 4 slices (Note 2))
5 kaffir lime leaves (, torn roughly (Note 3))
2 Thai or birdseye chillies ((Note 4))
3 garlic cloves
120g / 4oz oyster mushrooms
1 roma tomato (, cut into wedges)
1/2 white onion ((medium sized), cut into wedges about 1 cm thick)
1 tsp sugar
3 tbsp fish sauce ((Note 5))
3 tbsp lime juice
Coriander/cilantro (, for garnish)
1 1/2 tbsp Thai roasted chili sauce ((Nam Prik Pa, Note 6))
1/3 cup (75 ml) evaporated milk

Steps:

  • Peel the prawns. Place heads and shell in pot, reserve meat.
  • Use a meat mallet or similar to bash the garlic, chilli and lemongrass so they burst open to release flavour. Add into pot.
  • Crush kaffir lime leaves with your hands. Add into pot.
  • Add galangal, stock and water. Bring to simmer on high heat, cover, then reduce to medium and simmer for 10 minutes.
  • Strain the broth, discard the prawn shells etc, then return broth into same pot over low heat.
  • Add onions and mushrooms, simmer 3 minutes. Add tomatoes, simmer for 1 minute.
  • Add prawns, simmer 2 minutes or until just cooked.
  • Stir in sugar and fish sauce, simmer for 1 minute.
  • Add lime juice, then taste. Adjust sweet (sugar), salt (fish sauce) and sour (lime) to your taste (trust me, you'll know when you like it!).
  • Ladle into bowls and serve with fresh coriander and fresh chilli! This is the CLEAR version of Tom Yum.
  • When you add sugar, also add Thai Chilli Paste and evaporated milk.
  • Then continue with recipe!
  • Following Creamy Tom Yum steps but use coconut milk instead of evaporated milk.

Tom Yum soup is the most famous Thai soup in the world for a reason. Although it looks deceptively unpretentious, it is packed with a bold, citrusy and savory flavor. You will feel the bursting taste from the fresh Thai herbs with a pop of spicy heat lingering in your mouth.

Shrimp shell and heads (see note)
1.5L of water
4 stalks lemongrass, remove the green part, cut the bulb on the bias into 3 sections
6 kaffir lime leaves
60g of galangal, cut into thin slices
2 cloves garlic, bashed
4 shallots, cut into half
6 bird's eye chilies, bash and cut into half
100g oyster mushrooms, tear into small pieces
600 g medium-size shrimp, devein, remove head and shell
1 medium-size tomato, cut into wedges
1 bunch coriander stalk, cut into short sections
1 tsp Tahi chili paste
3 tbsp fish sauce
2 tsp sugar
4 tbsp lime juice
3 tbsp of Thai chili paste
1/4 cup evaporated milk
Coriander for garnish

Steps:

  • Clean the shrimp heads and shells thoroughly with water. Boil them in a pot of water, about 1.5 liters, for fifteen minutes.
  • Strain the stock through a wire mesh strainer.
  • Cut the spices (Ingredient B) accordingly.
  • Place ingredients B in the boiling stock, and let it simmer for fifteen minutes. After fifteen minutes, remove these ingredients from the stock.
  • Add the mushrooms to the stock, followed by the shrimp, coriander stems, and tomato wedges. When the shrimp is cooked through, reduce the heat to low.
  • Add ingredients D to the soup.
  • For the creamy version, add the evaporated milk and the additional amount of Thai chili paste as in ingredient E.
  • Garnish with coriander leaves.

2 quarts chicken broth
2 stalks fresh lemongrass, sliced on a bias in 2-inch pieces
4 kaffir lime leaves
1-inch piece fresh galangal or ginger, sliced
2 red chiles, sliced
2 tablespoons fish sauce, such as nam pla
1 1/2 teaspoons sugar
1 (8-ounce) can straw mushrooms, rinsed and halved
1 pound large shrimp, peeled with tails on
2 limes, juiced
2 green onions, sliced
1 handful fresh cilantro, chopped

Steps:

  • Bring the stock to the boil over medium heat in a saucepan. Add the lemongrass, kaffir lime leaves, galangal, and chiles. Lower the heat to medium-low, cover, and simmer for 15 minutes to let the spices infuse the broth.
  • Uncover and add the fish sauce, sugar, and mushrooms. Simmer for 5 minutes. Toss in the shrimp and cook for about 8 minutes until they turn pink. Remove from the heat and add the lime juice, green onions, and cilantro. Taste for salt and spices; you should have an equal balance of spicy, salty, and sour. It's a good idea to tell your guest's that the lemongrass and lime leaves are for flavor only and should be avoided when eating the soup.

This is our version of the hot and sour soup, modified to taste as much as possible like the wonderful version we would get at our favorite Thai restaurant, Bahn Na, in Ypsilanti, MI. I've included the modifications (*) that make it vegetarian-friendly. A note about the fish sauce: this can be purchased from any Asian grocery, and I would recommend just about any that come in a glass bottle - they generally taste better.

1/2 medium onion, diced
2 green onions, sliced (optional)
2 small tomatoes, cut into eighths
1/2 lb skinless chicken breasts, diced (*) or 8 ounces extra firm tofu, pressed and drained, cubed (*)
10 canned straw mushrooms
5 button mushrooms, quartered
4 cups chicken stock (*) or 4 cups mushroom stock (*)
2 stalks lemongrass, cut the stalks diagonally 2-inch long, scored lightly
6 kaffir lime leaves, fresh, scored lightly
6 slices fresh ginger (approximately 1-inch in diameter, 1/8-inch thick)
3 tablespoons fish sauce
1 1/4 teaspoons chili paste (Nam Prik Pao, Thai chili paste with soya oil)
2 serrano chilies, thickly sliced (optional)
1 cup fresh cilantro, washed and roughly diced
2 teaspoons sugar
1/4 cup lime juice (to taste)
2 tablespoons peanut oil

Steps:

  • In a medium-sized soup pot, heat the peanut oil over medium-high heat. Saute the chicken and/or tofu, onion (not the green onions), half each of the ginger and lemongrass until the chicken is only a little bit pink and the onion translucent.
  • Add the stock, fish sauce, remaining ginger and lemongrass, kaffir lime leaves, and (optional) serrano chilies. Simmer 10 - 15 minute covered on medium-low heat.
  • Add the sugar, Nam Prik Pao, and sliced tomatoes. Simmer an additional 2 minute.
  • Turn heat fully to low and add the lime juice to taste. Add half of the diced cilantro and the green onions, then let simmer on low for another few minutes.
  • Sprinkle with the remaining cilantro and serve with additional lime juice.

3 fresh kaffir lime leaves (optional)
1 teaspoon vegetable oil
2 teaspoons minced garlic

  • In medium saucepan, heat vegetable broth to a simmer with lemongrass and lime leaves if desired.
  • In small skillet, heat oil over medium-high heat.
  • Add garlic and ginger, and cook, stirring often, about 30 seconds.
  • When broth has simmered for 5 minutes, remove lemongrass and lime leaves and discard.
  • Add cooked garlic and ginger to broth.
  • Return broth to a boil, and stir in chile paste and mushrooms.
  • Cook until mushrooms have wilted, about 30 seconds, then stir in lime juice and fish sauce.
  • Remove from heat, and ladle soup into small bowls along with your favorite rice noodles.
  • Top each bowl with chopped tomatoes, cilantro and a pinch of hot green chiles if you want it really really spicy.
  • Alternatively, tomatoes and chiles can be mixed together and placed in small serving bowl for people to help themselves (this way people can make it as spicy as they want).
  • For Vegetarian/Vegan omit the fish sauce and use the soy.

6 cups chicken stock
1 stalk lemongrass (lower third finely minced, top bulb smashed and bound with twine)
1 carrot (thickly sliced)
4 cloves garlic (minced)
3 tablespoons onion (minced)
2 tablespoons galangal (or ginger, grated)
3 leaves makrut lime (or bay leaves and long strip of lime zest)
1 1/2 tablespoons plus 1 teaspoon fish sauce (divided)
1/2 tablespoon soy sauce
1 teaspoon lime juice (or lemon juice)
1 to 2 cups shiitake mushrooms (stems removed)
1 small zucchini (sliced into half-moons)
12 to 14 medium shrimp (or 8 to 10 large; raw, shells left on or removed)
1 cup cherry tomatoes (sliced in half)
1/4 to 1/3 (13.5-ounce) can coconut milk
Optional: 1 teaspoon chili oil
Optional: brown sugar (to taste)

Steps:

  • Gather the ingredients.
  • Pour the stock into a deep cooking pot over medium-high heat. Add the prepared lemongrass, including the upper sections of the stalk you didn't mince. Boil 5 to 6 minutes to soften.
  • Add carrot, garlic, onion, galangal or ginger, lime leaves, 1 1/2 tablespoons of the fish sauce, soy sauce, and lime juice. Reduce heat slightly, cover, and continue simmering 5 minutes. Add the mushrooms and zucchini, and continue simmering another 5 minutes.
  • Add shrimp and cherry tomatoes. Cook 3 minutes or until shrimp are pink and plump.

9 ½ cups water, divided
½ cup chopped galangal
½ cup lemon grass, cut into 1-inch pieces
6 leaf (blank)s kaffir lime leaves
2 (15 ounce) cans whole straw mushrooms, drained
2 tablespoons red curry paste (such as Thai Kitchen®)
2 tablespoons fish sauce
2 peppers Thai chile peppers, sliced
½ cup green onions, chopped
½ cup fresh cilantro, chopped

Steps:

  • Peel and devein shrimp, reserving shells.
  • Combine shrimp shells and 6 cups water in a large saucepan; bring to a simmer. Cook for 45 minutes. Add galangal, lemon grass, and lime leaves; simmer 15 minutes more.
  • Strain broth mixture through a sieve into a bowl; discard solids.

1 ounce dried wood ear mushrooms (also called tree ears or black fungus, optional)
7 ounces soft tofu
4 cups water
3 tablespoons soy sauce
1/2 teaspoon black pepper
1 teaspoon chopped garlic
1 1/2 teaspoons sugar
5 tablespoons rice vinegar
1/2 tablespoon hot chili sauce (sambal oelek)
1/4 teaspoon salt
1 cup bamboo shoot
1 teaspoon sesame oil
1 tablespoon cornstarch
1 tablespoon water
2 egg yolks
1 strip red pepper
fresh cilantro

Steps:

  • Soak the wood ears in warm water for 20-30 minutes until they swell up and become soft.
  • Rinse under cold water, and cut into thin ribons, discarding any hard centers; set aside.
  • Slice tofu into long thin strips; set aside.
  • Bring the 4 cups of water to a boil in a soup pot; add the soy sauce, black pepper, garlic, sugar, vinegar, sambal oelek, and salt and stir to blend.
  • Lower heat to medium and cook for several minutes.
  • Add the bamboo shoots and cook for a minute before adding the wood ears, the tofu, and the sesame oil.
  • Cook the soup for 2-3 minutes, then stir in the cornstarch which should be dissolved in the 1 tablespoonful of water.
  • Beat the egg yolks lightly and slide into the soup; turn off the heat and DO NOT STIR.
  • The egg will cook into the hot soup and stay in pieces (if you stir it will shrivel).
  • Pour soup into serving bowls and garnish with strips of red pepper and cilantro leaves.

I have simplified a sometimes complex recipe for those like me who can have a hard time finding some of the original ingredients. This is my favorite recipe, better than any tom yum in the many restaurants I have been to.

4 cups vegetable broth
1 pound raw shrimp, unpeeled and deveined
4 limes, juiced with pulp
4 Thai chile peppers, quartered
2 stalks lemongrass, quartered
2 tablespoons tom yum paste
1 ½ tablespoons fish sauce
1 tablespoon white sugar
1 tablespoon chile sauce
4 (1/4 inch thick) slices fresh ginger root
6 baby bella mushrooms, sliced
2 green onions, thinly sliced

Steps:

  • Combine vegetable broth and shrimp in a pot over medium-high heat. Bring to a low boil for 10 minutes, then lower heat and simmer for 10 minutes. Remove shrimp from the broth and remove and discard shells; set shrimp aside.
  • Add lime juice, lime pulp, chile peppers, lemon grass, tom yum paste, fish sauce, sugar, chile sauce, and ginger slices to the broth; cook for 10 minutes. Remove chile peppers, lemongrass, and ginger slices with a slotted spoon and discard. Add cooked shrimp and remove from the heat.
  • Ladle soup into bowls and top with mushroom slices and green onions.

  • Bring broth to a boil in a large pot.
  • Remove the outermost leaf from each stalk of lemongrass. Pound stalks to release flavor; cut into 1-inch lengths. Add the lemongrass, Thai chiles, garlic, lime leaves, and galangal to the broth. Cover and boil for 10 minutes.
  • Reduce heat and add shrimp, mushrooms, onions, and tomatoes to the broth. Boil for 3 minutes. Add fish sauce and sugar; cook for 2 minutes more and remove from heat. Stir in cilantro and lime juice.

After eating at one of my favorite Thai restaurants one evening, I asked if the chef would mind sharing the ingredients to a soup I enjoyed. To my happiness, he did so, and then I came home to learn more about this soup online. I have not yet made this soup, but look forward to doing so. I found this recipe on www.thaitable.com and it sounds perfect. I'd love to hear any suggestions! If it's made properly, it should be hot, so be forewarned. It would be great for colds and stuffy noses :-)

4 cups water
1 cup mushroom (oyster or straw would work well)
1 -2 lime
1 stalk lemongrass
3 kaffir lime leaves (if you can't find leaves, substitute with zest from 3 limes)
2 tablespoons fish sauce
5 sprigs fresh cilantro
2 -3 chili peppers (or use chili sauce to taste)

Steps:

  • Wash mushrooms and set aside.
  • Crush lemongrass with back of knife to release flavor. Tie in a knot and drop into pot of water.
  • Bring water to a boil.
  • Add mushrooms.
  • Pull kaffir lime leaves from their stems and place in water. If using lime zest instead, add it.
  • Turn off heat on stove.
  • Crush chili peppers and place into a serving bowl. This will make the dish very spicy. If you don't want as much heat, don't crush the peppers, or only crush one. (If you prefer, omit the peppers entirely and use bottled chili sauce).
  • Add fish sauce and juice from limes into bowl.
  • Pour lemongrass broth into serving bowl.
  • Taste, adjust fish sauce and lime if needed.
  • Serve, sprinkled with cilantro.

  • Then I like to start by squeezing my limes. This is not the first step of the recipe, but it’s best to have your limes squeezed so when you need them later, you don’t need to rush to squeeze them all.
  • Take your stalks of lemongrass, and first tear off the outermost leaf and throw it out. Then, I like to use a mallet to lightly pound the lemongrass to release the flavors.
  • Coarsely break about 10 kaffir lime leaves - no need to cut them, just tear them - which is going to help release their flavor.
  • I used about 10 Thai bird chilies (prik kee noo) for this recipe, but you can use however many you’d like. First, take off the stem, and then you can either just slice them in two pieces, or give them a little pound on your cutting board like I did (just be careful of flying seeds).
  • Throw the lemongrass, galangal, kaffir lime leaves, garlic and chilies into the water. You can put on the lid just so it starts to boil and release all the herb flavors quicker.
  • Now prepare your shrimp (or whatever meat of choice you’re making tom yum with). Since I used goong mae nam (กุ้งแม่น้ำ), freshwater shrimp, I first chopped off all the tentacles.
  • Boil your soup with all the herbs in it for about 10 minutes, and you can go ahead and toss in the shrimp and turn the fire to low.
