EDAMAME WITH SESAME SALT
Steamed edamame are sprinkled with gomashio, a blend of salt and toasted sesame seeds that can be made at home in a spice grinder.

Steps:
- Coarsely grind sesame seeds and salt in a spice grinder, then place in a small bowl. (Alternatively, chop sesame seeds and salt together finely.)
- Fill a large pot fitted with a steamer insert or basket with 2 to 3 inches water. Bring water to a simmer over medium-high heat. Steam edamame, covered, until hot, 3 to 4 minutes. Transfer to a bowl, and sprinkle with sesame-salt mixture. Serve immediately.
SIMPLE EDAMAME
Edamame (soybeans) are often served in Japanese restaurants preceding sushi. Cook them in a pot of boiling water until fork-tender, then sprinkle with sea salt and serve as a healthy appetizer or snack. Once you master the basics, try it in inspired recipes, such as Creamy Edamame Dip.

DRY ROASTED EDAMAME WITH BLACK SESAME SEEDS
Steps:
- Preheat the oven to 450 degrees F.
- In a bowl, toss the edamame with the oil and season with salt. Transfer the edamame to a baking sheet. Bake for 12 to 15 minutes. Remove from the oven and sprinkle with the sesame seeds. Return to the oven and bake an additional 5 minutes.

- Bring a pot of water to a boil and add some salt. Cook the edamame in the boiling water until tender, about 5 minutes; drain.
- Add the honey, soy sauce, sriracha, sesame oil, lime juice and 1/4 teaspoon salt to a large bowl. Stir in the edamame and top with the sliced scallions and an extra sprinkle of salt.

FINGER LICKING SESAME EDAMAME
Edamame is more commonly known as a soybean, harvested at the peak of ripening right before it reaches the "hardening" time. Edamame means "Beans on Branches" . A good source of protein. Enjoy as a snack squeezed directly from the well seasoned pods into the mouth with the fingers. Hence finger licking good!

Steps:
- Bring a large pot of water to a boil. Add edamame and continue boiling until beans are crisp-tender, about 6 minutes.
- Meanwhile mix remaining ingredients together.
- When done, run cold water over, or put in ice water, to stop cooking. Drain well; pat excess moisture off, and toss in the dressing.
- Top with seeds.
- To eat, hold pod by stem end, and slide the individual beans out with your teeth. Discard pod.

EDAMAME DUMPLINGS

Steps:
- To prepare sauce, combine the first 3 ingredients in a small bowl, stirring with a whisk.
- To prepare dumplings, cook edamame according to package directions; drain. Rinse edamame with cold water; drain well. Combine edamame, juice, sesame oil, cumin, red pepper flakes, garlic, and salt in a food processor, process until smooth.
- Working with 1 wonton wrapper at a time (cover remaining wrappers with a damp towel to prevent drying), spoon about 1 teaspoon edamame mixture in center of each wrapper. Moisten edges of dough with water; fold opposite corners to form a triangle, pinching points to seal. Place dumplings on a large baking sheet sprinkled with cornstarch.
- Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Arrange half of dumplings in a single layer in pan; reduce heat to medium. Cook 1 minute or until bottoms begin to brown; turn. Add 1/4 cup water to pan; cover. Cook 30 seconds; uncover. Cook 1 minute or until liquid evaporates. Repeat procedure with the remaining dumplings and water. Serve immediately with sauce.
