1 pound ground chuck
Salt and pepper
1 tablespoon chili powder
1 medium onion, chopped
1 medium bell pepper, chopped
1 gallon ranch-style beans
2 cups brown sugar
1 cup smoked barbecue sauce
1/2 cup chopped canned jalapenos

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large skillet over medium-high heat, brown the ground chuck and season it with salt, pepper, and chili powder. Remove the meat and drain off all but 1 tablespoon of fat. Cook the onions and bell peppers in the remaining fat until they are soft. Return the meat to the pan and add the beans, brown sugar, barbecue sauce and jalapenos. When everything is combined and the sugar has melted, pour it into a large baking dish and bake for 45 minutes.

Tom Mix Cowboy Beans image

I got this recipe from Alan's Kitchen online. I haven't tried it yet. Tom Mix is my grandfather's (Lyle Mix) cousin, so I'll have to try these and see if it owns up to the Mix name. Prep and cook times are estimated. Prep time does not include soaking beans overnight.

1 lb dried pinto bean, sorted,rinsed and drained
8 cups water
1 -1 1/2 lb ham shank
2 medium onions, chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon dried cilantro
1/2 teaspoon pepper
1 teaspoon salt
2 limes

Steps:

  • In a large kettle, add the beans and pour in water.
  • You want the water to cover with enough water about 2 inches above beans.
  • Cover and let stand overnight.
  • Bring beans to a boil for 2 minutes.
  • Remove from heat and cover for 1 hour or until tender.
  • Drain the beans and add the 8 cups of water.
  • Then add ham, onions, and garlic.
  • Bring the water to a boil and cook the bean for 10 minutes.
  • Then reduce the kettle’s heat to low and simmer for 2 hours.
  • Then remove the ham.
  • Allow the ham to cool, then cut into ½- inch pieces.
  • Return ham to the kettle.
  • You add the cumin, oregano, cilantro, and pepper next.
  • Continue to simmer for an additional 1 hour.
  • The beans should be very tender and with little liquid.
  • If the beans become too dry, add a little water.
  • If the beans are too soupy, continue to cook.
  • Now is the time to add the salt.
  • Cut limes into wedges and squeeze into beans.

  • Brown 2 ounces diced chorizo in a skillet with olive oil. Add 1/2 diced onion and cook 4 minutes. Stir in 1/2 diced jalapeno, 1 teaspoon each dried oregano, chili powder and minced garlic, and 1 chopped tomato; cook 1 minute. Add a 15-ounce can pinto beans (undrained) and 3/4 cup water; simmer 15 minutes. Season with salt, pepper and hot sauce.

2 cups pinto beans, cleaned, soaked overnight in a non-reactive bowl and drained; liquid discarded
1 ham hock
1 bay leaf
3 cloves garlic, peeled
1 whole jalapeno chile
5 cups water
2/3 cup finely chopped white onion,
2 slices thick-cut bacon, finely chopped
4 ounces pork chorizo, casing removed
Salt and freshly ground black pepper

Steps:

  • In a large saucepan, bring the soaked beans, ham hock, bay leaf, garlic, jalapeno, and 5 cups of water to a boil over high heat. Cover the pan, reduce the heat to medium and simmer for 2 hours or until beans are tender. If the beans absorb too much water, add 1 cup of water after 1 hour and continue cooking (Beans mixture should remain soupy while cooking). Turn off the heat.
  • Cook the bacon in a large saute pan over medium-high heat until almost crisp, about 10 minutes. Add onion and cook for about 3 minutes or until translucent. Transfer bacon and onion mixture to the pot with the beans. Wipe pan clean. In same pan cook chorizo over medium heat until crisp, about 1 minutes. Using a slotted spoon, remove the chorizo and drain on paper towels. Add to the beans. Season lightly with salt, if necessary. Stir the beans over medium-high heat until heated through. Remove the bay leaf and ham hock and discard. Ladle into bowls and serve.
  • Cook's Note: In place of soaking the beans, you can use 3 (15-ounce) cans rinsed and drained pinto beans. Proceed as above but reduce the cooking time to 1 hour.

My aunts and I put together their favorite combination several years ago, and have it ready at their camp, and they are some happy cowboys! You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.

1 pound bacon
2 pounds ground beef
1 large onion, chopped
1 cup ketchup
⅓ cup brown sugar
1 (55 ounce) can baked beans (such as Bush's®)
2 (15 ounce) cans Great Northern beans
1 (15 ounce) can pinto beans
1 (15 ounce) can pork and beans

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 12 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.
  • At the same time, heat another large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Place bacon, ground beef, onion, ketchup, and brown sugar in a slow cooker; mix well. Add baked beans, Great Northern beans, pinto beans, and pork and beans.
  • Cook on Low, stirring often, about 4 hours.

1 pound hamburger
½ pound bacon
1 (28 ounce) can baked beans with pork
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can lima beans, rinsed and drained
2 onions, chopped
1 cup ketchup
1 cup brown sugar
1 teaspoon prepared mustard

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir hamburger and bacon together in the hot skillet until hamburger is browned and crumbly, 7 to 10 minutes.
  • Stir cooked hamburger and bacon, baked beans with pork, kidney beans, lima beans, onions, ketchup, brown sugar, and mustard together in the bottom of your slow cooker.
  • Cook on Low until hot and thickened, at least 3 hours.
