Alton Brown's Overnight Oatmeal recipe couldn't be easier: Combine the ingredients before you go to bed, and breakfast will be waiting for you in the morning.

1 cup steel cut oats
1 cup dried cranberries
1 cup dried figs
4 cups water
1/2 cup half-and-half

Steps:

  • In a slow cooker, combine all ingredients and set to low heat. Cover and let cook for 8 to 9 hours.
  • Stir and remove to serving bowls. This method works best if started before you go to bed. This way your oatmeal will be finished by morning.

1 Tbsp coconut, unsweetened, shredded
1 Tbsp crushed pecans
1/2 tsp brown sugar
1/8 tsp ground cinnamon
1/3 c milk
1 Tbsp milk

Steps:

  • 1. mix oats, coconut, pecans, brown sugar, and combine in a small container, top with 1/3 cup milk. cover and refrigerate for 8 hours or overnight. stir 1 tablespoon milk into oat mixture before serving.

  • In a medium mixing bowl (microwave safe) add the almond milk, maple syrup and peanut butter. Whisk to combine. Pour in the still cut oats, chia seeds, cinnamon and a pinch of sea salt. Whisk again.

  • Shake can of coconut milk well, then pour into a large (4 cup) liquid measuring cup. You'll have about 1 1/2 cups of milk. Add water until you have a total of 3 cups of liquid. Pour milk/water mixture into a sauce pan.
  • Add brown sugar and bring mixture to a boil, stirring occasionally to incorporate the melting sugar.
  • Once the mixture comes to a boil, stir in the steel cut oats. Reduce heat to a low simmer and cover, stirring occasionally. Cook for 20 minutes or to desired tenderness.
