Steps:

  • Heat oil in a wok or skillet over medium heat. Stir in garlic and ginger, and cook for 1 minute. Add tofu to the pan with tamari, and stir to coat. Cover, and continue cooking for 20 to 30 minutes.
  • Squeeze lime juice over tofu before serving.

This is just a simple but very tasty recipe for a tofu dish.

7 ounces fresh tofu, sliced
3 tablespoons soy sauce
1 tablespoon sesame seeds
1 ½ teaspoons minced fresh ginger root
1 tablespoon honey
1 cup basmati rice
1 ½ cups water

Steps:

  • Combine the soy sauce and ginger in a small bowl. Add tofu slices; cover and refrigerate overnight.
  • Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Keep hot.
  • Preheat an oven to 350 degrees F (175 degrees C). Remove tofu from marinade, place on a baking sheet. Reserve marinade.
  • Toast the sesame seeds by placing them in a dry skillet over medium heat. Stir seeds constantly until lightly toasted and fragrant, about 3 minutes. Immediately remove toasted seeds from pan to prevent burning. Reserve.
  • Bake the tofu in the preheated oven until hot and cooked to your liking, approximately 8 minutes. Drizzle tofu with remaining marinade.
  • Divide rice between 2 bowls, top with baked tofu, drizzle with honey, and sprinkle with toasted sesame seeds.

250g fresh firm tofu , drained
2 tbsp groundnut oil
1cm piece ginger , sliced
200g pak choi , leaves separated
1 tbsp Shaohsing rice wine
1 tbsp rice vinegar
½ tsp dried chilli flakes
cooked jasmine rice , to serve
1 tbsp grated ginger
1 tsp dark soy sauce
2 tbsp light soy sauce
1 tbsp brown sugar

Steps:

  • Gently prick a few holes in the tofu with a toothpick (this will help the marinade to soak into it, giving better flavour), then cut into bite-size cubes.
  • Mix the marinade ingredients together in a bowl and toss in the tofu pieces. Set aside to marinate for 10-15 mins.
  • Heat a wok over high heat and add half the groundnut oil. When the oil starts to smoke, add the ginger slices and stir-fry for a few secs. Add the pak choy leaves and stir-fry for 1-2 mins. Add a small splash of water to create some steam and cook for 2 mins more. When the leaves have wilted and the stems are cooked but still a little crunchy, season with salt and transfer to a serving dish.
  • Rinse the wok under cold water, then reheat it and add the remaining oil. When it starts to smoke, add the tofu pieces (retaining the marinade liquid) and stir-fry for 5-10 mins. Take care not to break up the tofu as you toss it to get it browned evenly on all sides. Season with the rice wine and rice vinegar. Add the remaining marinade liquid, bring to the bubble and let the liquid reduce. Sprinkle over the chilli flakes and toss well. Spoon onto the pak choy and serve immediately with jasmine rice, if you like.

Steps:

  • To prepare sauce: Whisk water, peanut butter, rice vinegar (or white vinegar), soy sauce, honey, ginger and garlic in a small bowl.
  • To prepare tofu: Drain and rinse tofu; pat dry. Slice the block crosswise into eight 1/2-inch-thick slabs. Coarsely crumble each slice into smaller, uneven pieces.
  • Heat oil in a large nonstick skillet over high heat. Add tofu and cook in a single layer, without stirring, until the pieces begin to turn golden brown on the bottom, about 5 minutes. Then gently stir and continue cooking, stirring occasionally, until all sides are golden brown, 5 to 7 minutes more.
  • Add spinach, mushrooms, scallions and the peanut sauce and cook, stirring, until the vegetables are just cooked, 1 to 2 minutes more.

This is another way to eat tofu. I just experimented one day and came out pretty good. Very easy to prepare and quick to make. I serve with hot rice. This makes very good vegetarian dish also. I usually eyeball the amount on each ingredients. Easy to increase or decrease depends on your tastes. Make sure you get a firm tofu. Soft tofu won't work well.

1 (8 ounce) package firm tofu
2 tablespoons canola oil
3 tablespoons soy sauce
2 tablespoons ketchup
1 -2 tablespoon brown sugar
1/2 tablespoon prepared mustard
2 teaspoons white vinegar
1 tablespoon chili sauce (I use Thai sweet chilly sauce)
1/4 teaspoon chili powder
2 teaspoons minced garlic
1 teaspoon sesame seeds
1 green onion, chopped (optional)

Steps:

  • Slice the tofu into desired size, about 3/8" thick.
  • Heat canola oil in the non stick skillet over medium heat and fry the tofu slices for 2-3 minutes on each sides until they get golden brown. They should be crispy on the outside but soft inside.
  • Meanwhile, in a small ball combine soy sauce, ketchup, sugar, mustard, vinegar, chilly sauce, chilly powder, garlic, sesame seeds and set a side.
  • When tofu slices are fried, transfer them on to another plate, keep the skillet on the medium heat.
  • Add the soy sauce mixture into the hot skillet and let them bubble and thicken for about 1-2 minutes.
  • Return the fried tofu slices back into the skillet with sauce and tossed them well. Transfer them on the serving plates and sprinkle chopped green onion on top. Serve warm and enjoy.
  • Notes: I usually blot the tofu slices with paper towel to avoid oil splash when I add to the hot skillet and it also helps to create crispiness.

This is a variation of Tofu Teriyaki from The Tassajara Recipe Book, and is delicious fresh or grilled with a honey miso sauce or spicy peanut sauce, served with Chinese noodles. Be sure to use firm tofu, it can be handled without breaking and holds up well on the grill. For best results, marinate the toful for a full day before using. Adapted from Fields of Greens restaurant cookbook.

1 (14 ounce) package firm tofu
1/2 cup soy sauce (or tamari)
3/4 cup water
1/2 cup dry white wine (or mirin)
1/3 cup sugar
1/4 cup toasted sesame oil
1/2 ounce dried shitake mushroom (optional)
1 1/2 tsp.dry mustard
2 tablespoons grated fresh ginger
4 garlic cloves, crushed with the side of a knife

Steps:

  • Slice the tofu block in half horizontally or cut into slabs 1" thick. Place in a colander and drain for 10-15 minutes.
  • While the tofu is draining, prepare the marinade. Combine all the ingredients in a small saucepan. Bring to a boil, then reduce the heat and simmer for 10 minutes.
  • Place the tofu in a square or rectangular nonreactive pan. If the tofu is sliced, arrange the slices close together in the bottom of the pan or on top of one another in a double layer. Pour the hot marinade over the tofu, being sure to cover it with the marinade. Cool, then cover with a lid or seal tightly with plastic wrap and refrigerate.
  • The tofu will hold for a week or two in the refrigerator, as long as it's sitting in the marinde in a well sealed container. Enjoy!

Pan-fried until shatteringly crisp, pressed tofu, cut into cute little rectangles, eats a lot like Chicken McNuggets and cooks up gorgeously every time. But the true joy of a nugget lies in the dipping, and this recipe stars a totally chill, no-cook sweet-and-sour sauce. Apricot preserves provide fruity sweetness as well as body, and rice vinegar, soy sauce and onion powder add savoriness.

3 medium zucchini (about 1 pound)
3 teaspoons kosher salt, plus more to taste
1/2 cup apricot preserves
2 tablespoons rice vinegar
2 tablespoons soy sauce
1/2 teaspoon red-pepper flakes
1 1/2 teaspoons onion powder
1/2 cup potato starch
Neutral oil, such as vegetable or canola oil, or light olive oil

Steps:

  • Press the tofu: Wrap the block of tofu in a clean tea towel, and place on a cutting board. Weigh down the tofu with a sheet pan topped with something heavy, such as a large skillet, cans or books, until the tea towel is soaked, about 30 minutes.
  • While the tofu is pressed, prep the zucchini: Halve the zucchini crosswise, then cut each piece lengthwise into 1/4-inch-thick planks. Finally, cut each plank lengthwise into 1/4-inch-thick "fries." Place the zucchini fries in a large colander set over a medium bowl. Add 1 teaspoon salt, and toss until evenly coated. Set aside to drain.
  • Meanwhile, make the sauce: In a measuring cup, stir together the apricot preserves, rice vinegar, soy sauce, red-pepper flakes, 1 teaspoon onion powder and 2 teaspoons water until smooth. Transfer to a small dish for dipping, and set aside.
  • Slice the pressed tofu in half horizontally, and cut each of those halves into 8 rectangular pieces, creating 16 nuggets total. Directly on the cutting board, season the tofu with 1 teaspoon salt and the remaining 1/2 teaspoon onion powder, smearing each piece around to catch all the seasonings.
  • In a large bowl, toss to combine the potato starch and the remaining 1 teaspoon salt. Place the tofu in the starch, and gently toss with your hands until each piece is evenly coated.
  • Fry the tofu: Heat a large skillet over medium-high, and add a thin layer of oil, enough to coat the bottom of the pan. Add the tofu in a single layer, and cook, flipping a couple of times, until lightly golden on both sides, about 10 minutes total. Transfer the cooked tofu to a towel-lined plate to drain, and season it with salt to taste.
  • To serve, transfer the tofu and zucchini to a large platter, and serve alongside the dipping sauce.
