Steps:
- Place parchment paper on two baking sheets.
- Separate the salami slices between the two sheets leaving space in between each slice.
- Bake in a 375 degree oven for about 10 minutes.
- Flip over the salami slices halfway through baking.
- Edges should be crispy and starting to curl.
- Move salami to a rack to cool.

HOMEMADE SALAMI
This homemade salami is good for party trays. It can be served on platter with sliced cheese and crackers, or just eaten in a sandwich.

- In a large bowl, mix together the ground beef, garlic powder, onion powder, mustard seed, curing salt, black pepper and liquid smoke. Mix in the red pepper flakes if desired. Roll the mixture into a 2 inch diameter log, and wrap tightly in aluminum foil. Refrigerate for 24 hours.
- Preheat the oven to 325 degrees F (165 degrees C). Make a few slits in the bottom of the roll to allow the fat to drain when cooking. Place roll onto a broiler pan, and fill the bottom part of the pan with about 1 inch of water to keep the salami moist.
- Bake for 90 minutes in the preheated oven. Remove from pan and cool completely before unwrapping the salami. Slice and eat as lunch meat, or serve on a tray with crackers and cheese.

SIMPLE SLICED SALAMI SNACKS
This easy to do , addictive snack couldn't be simpler! These are great with some good cheese,a great bread and a glass of wine. Originally from a January/February issue of "Tastes of Italia" magazine.Try to use a really good Italian salami with this recipe. It uses 1/2 pound of sliced salami, but since the data base wouldn't let me post a recipe with one ingredient, I broke it into 2 portions! :)

- Lay out salami on a cutting board in a flat layer, creating 3 rows of four slices, and overlapping them slightly.
- Spread half of the cream cheese over the salami slices.
- Sprinkle half of the banana peppers on top of the cream cheese.
- Tightly roll the meat, cream cheese, and banana peppers into a log shape and wrap the log in plastic wrap.
- Repeat the above steps with the remaining ingredients to form a second "log".
- Refrigerate both rolls for at least one hour.
- Remove from the refrigerator, slice into pinwheels, and serve.

This silly little recipe came from my husbands family. They would munch on these over late night cocktails. Don't judge 'em 'til you've tried 'em. Everyone says "ewww" when they first read the list of ingredients, even me! But, they are addictive.

- Place a gerkin in the center of salami on top of peanut butter.

- Arrange salami slices in 1 layer on 2 large baking sheets lined with parchment paper. Bake, switching position of sheets halfway through baking, until edges are crisp and beginning to curl, 10 to 12 minutes. Transfer slices to a rack to cool. (They will crisp as they cool.)
