PERFECT HOMEMADE HASH BROWNS



Perfect Homemade Hash Browns image

They're crispy on the outside and tender on the inside, and not overly greasy ... what more could you want? I especially like the flavor of the butter/oil combination rather than only oil. Add onions or jalapenos, if you like; melted cheese on top is always good, too!

1 lb medium-sized russet potato, peeled but left whole (I like to use older potatoes)
4 tablespoons vegetable oil
2 tablespoons butter
salt and pepper

Steps:

  • Cook whole potatoes in a large saucepan of salted boiling water for 10 minutes; drain and let cool.
  • When potatoes are cool enough to handle, grate them with a coarse grater.
  • In a large non-stick skillet, heat oil and butter together and cook hash browns over medium-low heat for about 10 minutes on each side, or until crisp and well-browned.
  • Resist the temptation to stir them around; just lift up an edge periodically to check on browning.
  • Serve immediately.

6 large potatoes, peeled,cut int 1/2 " pieces and cooked until almost tender apprx 5 minutes,drain well
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon cajun seasoning (Tony Chachere's or other cajun spice and if not available use additional tsp chili powder)
1/4 cup lite olive oil

Steps:

  • Heat oven to 400F degrees.
  • Spread the potatoes single layer on a baking sheet.
  • Sprinkle with the paprika, chili, cajun spice and then drizzle with the olive oil.
  • Mix the potatoes with a spatula to coat all sides evenly.
  • Season with salt.
  • Bake potatoes until crisp, turning with a spatula every 10 minutes, Apprx 40 minutes.

These are the best hashbrowns I've ever had and it's hard to believe they are healthy and vegan! Nice and creamy. It's a great recipe to make ahead of time. It's easy to make in bulk and freeze for future use. These potatoes can also be made into patties before baking. Just form into patties on a cookie sheet instead of spreading them out, and bake the same. Remove from the oven when patties are golden brown on the bottom. May use purchased frozen potatoes, but make sure they are free of unhealthy hydrogenated oils. If you make them from home-cooked potatoes, it works best if potatoes are slightly undercooked. Cooking time doesn't count shreading and pre-cooking hashbrowns if using fresh potatoes. Recipe came from 7 Secrets Cookbook to lose weight, lower cholesterol, and reverse diabetes.

3/4 cup water
1/2 cup raw cashew nuts
1/2 tablespoon onion powder
1/2 teaspoon garlic powder
2 tablespoons vegetarian poultry seasoning (I use McKays vegan chicken style seasoning)
1/2 cup onion, finely diced (optional)
2 lbs frozen shredded hash browns (about 8 cups)

Steps:

  • Blend cashews and water or coconut milk with seasonings for at least 1 minute until smooth.
  • Pour over potatoes and add the diced onion. Mix well with hands to coat all the potatoes. May freeze some of the uncooked mix for future use.
  • Place on a nonstick or lightly oiled cookie sheet and place on bottom rack of unheated oven. Turn on the oven to 400 degrees F and bake for 20-30 minutes until golden brown on the edges and lightly browned in places on the bottom. NOTE: Don't overbake, or they will become dry.
  • Pile in a serving dish to retain some of the moisture and serve. The serving dish may be covered and placed in a warm oven. Don't leave them warming for more than 20 minutes or they will begin to discolor.

2 tablespoons butter
1 small onion, chopped (1/4 cup)
1 tablespoon Gold Medal™ all-purpose flour
1 1/4 teaspoons Cajun seasoning
1 1/4 cups milk
1 1/2 cups shredded sharp Cheddar cheese (6 oz)
3/4 cup freshly shredded Parmesan cheese (3 oz)
1 bag (20 oz) refrigerated shredded hash brown potatoes

Steps:

  • Heat oven to 350°F. Spray 1 1/2-quart casserole with cooking spray.
  • In 12-inch nonstick skillet, melt butter over medium heat. Cook onion in butter 3 to 4 minutes, stirring frequently, until crisp-tender. Stir in flour and Cajun seasoning until combined. Slowly pour milk into onion mixture, stirring constantly until mixture is well combined and slightly thickened.
  • Reduce heat to medium-low. Stir in Cheddar cheese and 1/2 cup of the Parmesan cheese until melted. Fold in potatoes until evenly coated with cheese sauce. Spoon mixture into casserole.
  • Bake uncovered 30 minutes. Sprinkle with remaining 1/4 cup Parmesan cheese. Bake 14 to 17 minutes longer or until potatoes are tender and cheese is melted.

4 medium sized potatoes
4 -6 tablespoons canola oil

Steps:

  • Peel potatoes and cut into small cubes of equal sizes (1/2 inch or less). Place in a pot, cover with about 2 inches of water, add salt, and cook on medium-high heat for 5 minutes, or until just tender enough to be easily pricked with a fork, but not so soft they crumble. Drain well in a colander.
  • Transfer potatoes to a rimmed baking sheet, drizzle with 4 tablespoons of the oil, and toss with your hands until all of the potatoes are coated. (Use remaining oil, if necessary). Spread potatoes evenly over baking sheet, and sprinkle with salt.
  • Bake at 425F for 30 minutes, turning them with a spatula every 10 minutes. (Watch after 15 minutes of cooking, and remove them if they are golden brown all over and soft when pierced with a fork, if not continue baking). Serve hot.

1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon Creole or Cajun seasoning or 1 additional teaspoon chili powder
1/4 cup olive oil

Steps:

  • Preheat oven to 400°F. Cook potatoes in medium pot of boiling salted water until almost tender, about 5 minutes. Drain well. Spread potatoes on heavy large baking sheet. Sprinkle with paprika, chili powder and Creole seasoning. Season with salt. Drizzle olive oil over potatoes and stir to coat.
  • Bake potatoes until crisp, turning with metal spatula every 10 minutes, about 40 minutes.
