For the Salad:
5 cups pita bread , torn into 1-inch pieces
2 large tomatoes, diced
1 cucumber (diced)
1 cup flat-leaf parsley leaves, loosely packed
1 cup mint leaves, loosely packed
1/4 cup chopped green onions
1/4 cup diced green pepper
1 head romaine lettuce, torn into small pieces
For the Dressing:
3 cloves garlic, crushed
3/4 cup olive oil
1/2 cup lemon juice
Salt, to taste
Freshly ground black pepper, to taste
Ground sumac, to taste

Steps:

  • Gather the ingredients.
  • Pre-heat oven to 400 F. Place torn pita bread onto a baking sheet.
  • Toast the pita bread in a preheated 400 F oven for about 5 minutes. Set aside.
  • In a large bowl, combine the lettuce, toasted pita, cucumber, tomatoes, green peppers, onion, parsley and mint leaves together.
  • Gather the ingredients.
  • In a small bowl combine the garlic, olive oil, lemon juice , salt, and pepper. Whisk together well.
  • Pour the dressing over the salad, garnish with sumac to taste, and serve.

2 tablespoons sugar
Juice of 2 limes
3 tablespoons rice-wine vinegar
5 tablespoons safflower oil
1 pound country-style bread, crust removed and cut into 1/2-inch cubes
3 tablespoons olive oil
1 English cucumber, halved lengthwise and cut into 1-inch pieces
1 pint cherry tomatoes, halved
1 tablespoon fresh ginger, very finely chopped (optional)
1/4 cup fresh cilantro, coarsely chopped
1/4 cup fresh mint leaves, coarsely chopped
1 jalapeno, seeds removed and finely chopped
2 cups arugula
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees.
  • In a small bowl, whisk together sugar, lime juice, vinegar, and 3 tablespoons safflower oil; set vinaigrette aside.
  • In a large bowl, toss bread cubes with olive oil until well coated. Spread bread cubes in an even layer on a baking sheet. Transfer to oven until golden and toasted, about 10 minutes.
  • Transfer toasted bread cubes to a large bowl and add cucumber, tomatoes, ginger (if using), cilantro, mint, basil, jalapeno, and arugula. Drizzle vinaigrette over top, and season with salt and pepper; toss to combine.

Fattoush is a rustic country salad of Syria and Lebanon which is on the standard menu of Lebanese restaurants. Arugula (Eruca vesicaria), also known as rocket, garden rocket, rocket salad, rugola, rucola , roquette and rughetta Rocket (Roquette) A strong, peppery leaf with jagged-edged indented leaves and a pleasant bite. Because of its strong flavour, a little goes a long way.

1 1/2 pita breads or 1 1/2 arab bread
1 head romaine lettuce, cut into ribbons
3 medium firm ripe tomatoes, cut into 1/2 inch pieces
3 small cucumbers, peeled, cut into thick slices
1 green bell pepper, seeded and cut into small slices
1 1/2 mild white onions or 9 scallions, chopped
1 bunch rocket, torn
1 butch purslane or 1 lamb's lettuce, torn
1 bunch flat leaf parsley, chopped
3 -4 sprigs of fresh mint, shredded
5 tablespoons extra virgin olive oil
1 lemon, juice of
2 garlic cloves, crushed
salt and pepper
1 tablespoon ground sumac

Steps:

  • Cut open the breads and toast them under the broiler until they are crisp turning them over once. Break them into small pieces in your hands.
  • Put all the vegetables in a large bowl with the onions, rocket and purslane leaves or lamb's lettuce, flat leaf parsley, and mint.
  • For the dressing, mix the olive oil with the lemon juice, garlic, salt, pepper, and sumac.
  • Just before serving, add the toasted bread and toss well with the dressing. Serves 6-8.
  • Variation: for the old style version, put the broken pieces of toast in a bowl. Moisten and soften with a little cold water or lemon juice before adding them to the salad.

The distinguishing feature of this light, refreshing salad is the addition, just before serving, of pieces of crisply toasted flat bread. Adapted from "Complete Vegetarian Cookbook" by Charmaine Solomon.

1 seedless cucumber, sliced
1 large red capsicum, diced
1 green capsicum, diced
3 large tomatoes, diced
5 spring onions, chopped (scallions)
1/2 cup fresh parsley, chopped
1/4 cup lemon juice
1/4 cup olive oil
1 garlic clove, crushed
1/2 teaspoon salt
1/4 teaspoon pepper
1 large pita bread round

Steps:

  • Put diced and chopped vegetables into a bowl, cover and chill until shortly before serving time.
  • Combine lemon juice, oil, garlic, salt and pepper and pour over the vegetables.
  • Toast pita bread under the grill - it should be pale gold in colour, not brown.
  • Break into large pieces and toss into salad at last minute, so it will still be crisp when eaten.

WARM BREAD SALAD



Warm Bread Salad image

This is, quite possibly, the bread salad to end all bread salads. Judy Rodgers, the legendary chef and bread lover, developed it to serve alongside roast chicken, but it's perfect paired with any roast meat. Bread chunks are mixed with a sharp vinaigrette, softened currants, toasted pine nuts and lightly cooked scallions and garlic. Everything is piled into a roasting pan then slid into the oven just before the chicken comes out and stays in while the chicken rests (if you're not making it with chicken, heat the oven to 450, turn it off and pop the salad in for 15 minutes). At the last minute, toss the bread mixture with arugula and vinaigrette. Top with your meat of choice (or not) and dig in.

1 tablespoon dried currants
1 tablespoon red wine vinegar
2 tablespoons pine nuts
8 to 10 ounces slightly stale ciabatta or other open-textured white bread
8 tablespoons extra virgin olive oil
1 1/2 tablespoons Champagne vinegar or white wine vinegar, approximately
Salt and coarsely ground black pepper
3 garlic cloves, slivered
1/4 cup thinly sliced scallions
4 tablespoons lightly salted chicken stock or lightly salted water
4 cups arugula leaves or mustard greens, rinsed and dried

Steps:

  • Place currants in a small dish, add red wine vinegar and 1 tablespoon warm water, and set aside. Heat broiler. Place pine nuts in small baking dish, and toast under broiler until very lightly colored. Set aside.
  • Cut bread into three or four large chunks. Closely trim off most of the crust and reserve, if desired, to toast and use for bread crumbs or to float in soup. Brush bread all over with 2 tablespoons olive oil. Briefly broil bread chunks, turning until crisp and golden on surface. Remove from oven, trim off any charred tips, and tear chunks into irregular pieces, from 2-inch wads to large crumbs. You should have 4 cups. Place in wide metal, glass or ceramic salad bowl.
  • Whisk 1/4 cup olive oil with 1 1/2 tablespoons Champagne vinegar. Season with salt and pepper. Drizzle 1 1/2 tablespoons of this dressing over bread and toss.
  • Place one tablespoon olive oil in a small skillet. Add garlic and scallions, and cook, stirring constantly, over low heat until softened but not colored. Add to bread and fold in. Drain currants and fold in. Add pine nuts and fold in. Drizzle salad with stock or water, and fold in. Taste a couple of pieces of bread. Add a little more vinegar, salt and pepper if necessary. Toss well, and transfer to a 4-cup baking dish. Tent lightly with foil. Do not wash salad bowl. Set salad aside until about 30 minutes before serving time.
  • Heat oven to 450 degrees. Place bread salad in oven, turn off heat, and leave for 15 minutes. Return salad to bowl. Add greens, remaining vinaigrette, and enough of remaining olive oil so bread is not dry. Toss again. Serve with grilled or roasted meat.

Fattoush is a classic Lebanese dish. It is often eaten by itself as a starter or light lunch. Saumac is an essential ingredient. It is a spice that is made from the dried, powdered berries of the sumac tree. It was my first time trying Saumac and I really enjoyed it, next time I would add one more teaspoon of the Saumac. This was used as a side salad for Recipe #218539 . This recipe comes from a book called "The Lebanese Cookbook" by Hussien Dekmak

1/2 cos lettuce, chopped
1 cucumber, chopped
2 tomatoes, chopped
5 radishes, chopped

1 garlic clove, chopped
1 tablespoon flat leaf parsley, chopped
2 teaspoons ground sumac
1 large flat bread, toasted and broken into pieces

  • Combine all the vegetables in a large bowl and mix well.
  • Add the garlic, parsley, sumac, bread, olive oil and salt to taste.

4 pieces pita bread
2 plum tomatoes, seeded and chopped
1 green pepper, cored, seeded and chopped
1 red pepper, cored, seeded and chopped
1 cucumber, seeded and chopped
4 green onions, finely chopped
1 garlic clove, crushed
1 tablespoon flat leaf parsley, finely chopped
1 tablespoon of fresh mint, finely chopped
1 lemon, juice of
1 tablespoon olive oil
1 teaspoon salt, to taste
1/2 teaspoon black pepper, to taste

Steps:

  • Preheat the oven 400ºF
  • Cut the bread into small (1 inch) pieces, place on a baking tray and toast in the oven for 5-10 minutes until crisp and light brown.
  • In a large bowl, combine the chopped tomatoes, green peppers, red peppers, cucumber, spring onions, garlic, parsley and mint.
  • Toss with the lemon juice and olive oil. Salt and pepper to taste.
  • Now add the toasted bread and mix well.
  • Serve immediately.

  • In a large salad bowl, combine lettuce with feta cheese, olives, almonds, sesame seeds, tomatoes, onion, mushrooms, and Romano cheese. When ready to serve, toss with Italian dressing.

  • To prepare the vegetables for the salad, core the tomatoes, cut in 6-8 wedges, then cut each wedge in half. Place the tomatoes into a large bowl, sprinkle with a pinch of sugar and toss. Add the sliced cucumbers, red onion and chopped basil and oregano and toss well.
  • To prepare the dressing, place the dressing ingredients into a small bowl and whisk together vigorously until well blended.
  • Pour the dressing over the vegetables and gently toss. Cover and set aside. You can prepare the salad several hours in advance and let it stand at room temperature to allow the flavors to blend.
  • To prepare the bread, lightly brush sourdough bread slices with olive oil or butter on both sides. Place on a foil-lined baking sheet 4-6 inches below the heating element and broil on high until lightly browned, about 2-3 minutes per side. Keep the oven door slightly ajar as you want the heating element to be on the entire time. Remove from the oven, let cool then break into bite size pieces and set aside.
