5 - 6 tbsp Thai Red Curry Paste ((store bought, Maesri best) (Note 1))
1 quantity homemade Thai Red Curry Paste
2 large garlic cloves (, minced)
2 tsp fresh ginger (, finely grated )
1 tbsp lemongrass paste (or finely chopped fresh (Note 3))
3 tbsp vegetable oil ((or canola or peanut))
1 cup (250 ml) chicken broth/stock (, low sodium)
400 ml / 14 oz coconut milk ((full fat!))
6 kaffir lime leaves ((Note 4))
1 tbsp sugar ((white, brown or palm))
2 tsp fish sauce (, plus more to taste)
350g / 12 oz chicken thighs ((boneless and skinless), cut into 0.75 / 1/3" thick slices (Note 5))
150g / 5 oz pumpkin or butternut squash, ( cut into 1.5cm / 3/5" cubes (~1 heaped cup))
120g / 4oz green beans (, trimmed and cut into 5cm/2" pieces)
12 Thai basil leaves ((Note 6))
Fresh red chilli slices ((small chilli - spicy, large = less spicy))
Fresh coriander / cilantro leaves
Steamed jasmine rice

Steps:

  • Heat oil in a large heavy based skillet over medium high heat.
  • Add curry paste and Extras (if using jar paste) and cook for about 2 minutes so it "dries out" (See video)
  • Add chicken broth and stir to dissolve paste. Simmer rapidly for 3 minutes or until liquid reduces by half.
  • Add coconut milk, lime leaves, sugar and fish sauce. Stir, then add chicken.
  • Spread chicken out, bring to simmer, then turn heat down to medium. Simmer for about 8- 10 minutes or until Sauce reduces, the chicken is cooked and the sauce is almost at the thickness you want.
  • Do a taste test. Add more fish sauce (or even shrimp paste) to add more saltiness, sugar for sweetness.
  • Add pumpkin and beans, stir. Cook for 3 minutes or until pumpkin is just cooked through and Sauce is thickened - see video for Sauce thickness.
  • Remove from heat. Stir through a handful of Thai basil leaves.
  • Serve over jasmine rice, garnished with fresh red chilli slices and fresh coriander/cilantro leaves, if desired.

I spent many months traveling in Thailand and Thai Red Curry quickly became my favorite dish. This dish is suppose to be spicy! If your sinuses aren't draining and a little perspiration isn't forming on your forehead halfway through this meal, you don't have the real thing. I know most people don't enjoy their food this spicy, so I toned it down a bit. Also, this dish is flexible and fun to cook. If you like onions, put in more. Like three kinds of peppers, add them. You get the idea. Just go with it. Enjoy!

4 boneless skinless chicken breasts
5 tablespoons Thai red curry paste (I recommend Pantai or Mae Ploy brands)
3 (13 1/2 ounce) cans coconut milk (I like the thick creamy kind)
3 tablespoons oil (I use canola)
1 1/2 cups chicken stock (If you do not have chicken stock, double up on the bullion)
1 chicken bouillon cube
2 yellow onions
4 green bell peppers
2 carrots
2 small Japanese eggplants
1/3 cup sugar
1 tablespoon lemon juice or 1 tablespoon lime juice
1 teaspoon fish sauce (optional)
8 sweet basil (leaves)
1 teaspoon dried basil
8 -10 large cherry tomatoes
4 cups jasmine rice (cooked)

Steps:

  • Cut onion, bell pepper, and eggplant into bite size pieces and set aside. (I like large chunks on my spoon, so I don't cut them too small).
  • Shred carrots with a vegetable peeler and set aside.
  • Cut tomatoes in half and set aside.
  • Cut chicken into bite size pieces and set aside.
  • Pour the oil into a five-quart pot and put over medium heat.
  • When the oil is hot, but not smoking, add the Thai Red Curry Paste and stir, sautéing for about 2 minutes. (I like my Thai Red Curry the same as I ate it in Thailand, very spicy. Therefore, I use about 6 to 8 tablespoons of curry paste. My guess is most people would use about five. Any less, what's the point? Use your judgment for what you like.).
  • Add the coconut milk and chicken stock, then throw the chicken bullion cube in the pot and stir.
  • After the liquid begins to boil, add the vegetables, carrots, and tomatoes.
  • Add sugar, lemon juice, sweet basil leaves, and crushed basil, then bring to a boil again. (I usually turn the heat down and allow the vegetables to cook for about five minutes or so before adding the chicken.).
  • Add the chicken and bring to a boil. Turn the heat down and simmer for about five more minutes.
  • Serve with hot Jasmine rice.

1tbsp ginger & garlic paste
red curry paste
800ml coconut milk
8 skinless, boneless chicken thighs, cut into large chunks
4 lime leaves (ideally fresh)
2tbsp fish sauce
1tsp brown sugar
Thai basil
basil or coriander, plus extra to serve
1 red chilli, sliced diagonally
thumb-sized piece ginger, cut into matchsticks
cooked jasmine rice, to serve

Steps:

  • Heat 1 tbsp vegetable oil in a large saucepan over a medium heat and fry 1 tbsp ginger and 1 tbsp garlic paste for 2 mins. Add 5-6 tbsp red curry paste, sizzle for a few secs, then pour in 800ml coconut milk.
  • Bring to the boil, reduce to a simmer, stir a little and wait for the oil to rise to the surface.
  • Add 8 skinless, boneless chicken thighs, cut into chunks, and lime leaves, and simmer for 12 mins or until the chicken is cooked through.
  • Add 1 tbsp of the fish sauce and a pinch of brown sugar, then taste - if you like it a little saltier, add more fish sauce; if you like it sweeter, add a little more sugar.
  • Bring to the boil, take off the heat and add ½ small pack Thai basil.
  • Spoon the curry into four bowls and top with 1 red chilli, a thumb-sized piece of ginger and a few extra basil leaves. Serve with jasmine rice.

1 1/2 tablespoons olive oil or coconut oil
1 pound chicken breasts (sliced into 1/4" slices then 2" pieces**)
1/2 large onion, chopped
2 tablespoons red curry paste
1 red bell pepper, thinly sliced (then chopped into 2" pieces)
1 orange bell pepper thinly sliced ( then chopped into 2" pieces)
1 small zucchini, sliced
2 teaspoons freshly grated ginger
4 garlic cloves, minced
1 13.5 oz. can quality coconut milk ((I like Chaokoh))
1 tablespoon cornstarch
1 tablespoon Asian/Thai Sweet Chili Sauce ((like Mae Ploy))
2 tablespoons less sodium soy sauce
2 tablespoon fish sauce
2 tablespoons lime juice
1 tablespoon brown sugar
1 bay leaf
1 teaspoon dried basil
1/4 teaspoon salt (more or less to taste)
1/4 teaspoon pepper
sriracha to taste/Asian chili sauce ((optional))
lime zest to taste
fresh basil
fresh cilantro
fresh lime juice

Steps:

  • Heat oil over medium high heat in large nonstick skillet. Add chicken, onion and red curry paste and cook just until chicken is no longer pink. Add bell peppers, zucchini, ginger and garlic and saute 1 minute.
  • Add half of the coconut milk. Mix remaining coconut milk with 1 tablespoon cornstarch and add to skillet along with all remaining ingredients (expect Garnishes).
  • Bring to a boil, then reduce to a simmer for 5 minutes or until the sauce thickens and the vegetables reach desired crisp-tenderness. If you would like a thinner sauce, thin with water (I don't do this). Discard bay leaf.
  • Garnish with additional optional fresh basil, cilantro, lime zest, lime juice and Sriracha to taste. Serve with rice.

  • Cook 1 tablespoon of the oil, the curry paste and onions in a large saute pan over medium heat, stirring often and letting sizzle, 5 to 6 minutes. No matter how hard I tried, I could never recreate the vivid, vivacious flavors of Thai curries at home. It wasn't until I was invited to a cooking class at the Thai Embassy in Los Angeles that I learned two of the secrets: "cracking" the coconut cream that accumulates at the top of the can of full-fat coconut milk (cooking out all the moisture so that the oil separates from the solids); and "blooming" the curry paste in the cracked coconut cream so that all those sleepy flavors of chiles and floral aromatics come back to life. With just these two techniques, my curries have gone from ho-hum to high-octane!

1/2 small kabocha squash, peel left on, cut into 1 1/2-inch cubes
2 tablespoons neutral cooking oil
2 pounds cremini mushrooms, sliced
One 13.5-ounce can full-fat coconut milk, refrigerated for an hour, not shaken
One 4-ounce can Thai red curry paste, preferably Maesri, or 5 tablespoons jarred red curry paste
2 teaspoons grated fresh ginger (I use a rasp)
2 cloves garlic, minced
1 cup chicken broth or water
1 tablespoon sugar
1 to 2 teaspoons fish sauce
6 ounces green beans, sliced on the diagonal into 1-inch lengths
Zest of 1 lime plus 1 lime wedge
Handful fresh Thai basil
Cooked white rice, for serving

Steps:

  • Add 1 cup water to an electric pressure cooker and add the rack. Put the kabocha squash on the rack and follow the manufacturer's guide for locking the lid. Set to pressure cook on high for 3 minutes. Follow the guide again for releasing pressure, then carefully remove the lid. Remove the squash from the pressure cooker and set aside until ready to use.
  • Heat a large skillet over medium-high heat and add the oil. Once the oil is hot, add the mushrooms and saute until lightly browned, about 10 minutes. Remove from the skillet and set aside until ready to use.
  • Set the same large skillet over medium-low heat. Carefully scoop the coconut cream (the thick, almost solid white stuff) out of the can of coconut milk into the skillet. Set aside the remaining liquid in the can. Cook the coconut cream until it resembles yogurt and is sizzling around the edges, about 5 minutes. Add the curry paste, ginger and garlic. Turn the heat up to medium. Saute until the paste has deepened in color and the oil starts to separate from the paste, 3 to 5 minutes.
  • Pour in the chicken broth, sugar, remaining canned coconut liquid and 1 teaspoon fish sauce. Taste; add more fish sauce if it's not salty enough. Stir well and bring to a boil. Add the squash, mushrooms and green beans. Stir well and turn the heat to low. Simmer until the green beans are cooked through, about 15 minutes.
  • Finish with the lime zest, a squeeze of the lime wedge and the basil. Serve over rice.

1 tbsp coconut oil
1 onion (diced)
1 red bell pepper (cored, seeded, thinly sliced)
3 garlic cloves (minced)
2 tbsp fresh ginger (minced)
4 oz Thai red curry paste
1 14 oz can coconut milk (full fat)
4 cups chicken stock (reduced sodium)
3 oz rice noodles
7 oz Lilydale®Oven Roasted Carved Chicken Breast (cubed)
3 tbsp fish sauce (*see recipe notes)
2 tbsp lime juice (juice of one lime)
1/2 cup fresh cilantro leaves (chopped)
1/2 cup fresh basil leaves (chopped)
Thai chile, jalapeno or another chile, thinly sliced (optional)

Steps:

  • Heat coconut oil over medium-high heat in a stockpot or other large pot
  • Add onion and cook for 4-5 minutes, or until translucent
  • Add bell pepper, garlic, ginger, and Thai red curry paste. Cook, stirring, about 1 minute.
  • Stir in coconut milk, and bring to a boil.
  • Stir in chicken stock, bring back to a boil, then reduce heat to low and allow to simmer 10 minutes. Turn off heat
  • Meanwhile, bring a pot of water to a boil. Turn off heat, add rice noodles and cover. Let stand about 3 minutes, then drain and rinse in cold water.
  • In the soup pot, stir in Lilydale Oven Roasted Carved Chicken Breast cubes, fish sauce, and lime juice. Remove from heat. Stir in cilantro and basil.
  • To serve, add 1/4 cup rice noodles to individual bowls, ladle soup over each bowl of noodles, and garnish with additional cilantro leaves. Serve sliced chilies alongside if desired.

1 3/4 cup Coconut Milk, divided
3 Tbsp Thai Red Curry Paste ((see note))
1 lb Boneless, Skinless Chicken Breast, cubed
2 cups Chicken Stock
12 oz Squash, cubed or thinly sliced ((see note))
1/2 Red Bell Pepper, thinly sliced
1 Tbsp Palm Sugar ((see note))
1 1/2 Tbsp Fish Sauce
1 cup Thai Basil leaves
Thai Jasmine Rice, for serving

Steps:

  • Heat a Dutch oven, wok, or saute pan over medium heat. Add ¾ cup coconut milk (if using canned coconut milk that has separated, use the top, thicker portion of the milk) to the pan. Simmer coconut milk, stirring constantly, until it has reduced by half and you can see oil separating from the milk, 5 to 6 minutes. (Note: This step to "break" the coconut milk is part of the traditional process, but don't worry if your coconut milk doesn't show signs of separating after this initial cook time - just proceed with the recipe.)
  • Add curry paste and saute until fragrant, 2 to 3 minutes.
  • Add chicken breast and stir to coat in the curry paste.
  • Pour chicken stock and 1 cup coconut milk over chicken.
  • Stir in squash, bell pepper, palm sugar, and fish sauce. Bring to a simmer and let curry simmer gently until chicken is cooked through, 10 to 15 minutes. (Reduce heat as needed to prevent the curry from reaching a hard boil.)
  • Taste the curry and adjust the flavor, adding more sugar or fish sauce if needed.
  • Remove curry from heat and stir in Thai Basil leaves.
  • Serve curry over rice.

1 small bunch scallions, thinly sliced, light and dark green parts divided
3 cloves garlic, chopped
1 jalapeño pepper, seeded and diced (see note)
1 (14-oz) can coconut milk (unsweetened)
2 tablespoons Thai red curry paste
2 tablespoons fish sauce
2½ tablespoons packed dark brown sugar
1½ pounds chicken tenderloins, cut into 1-inch cubes
1 tablespoon lime juice, from 1 lime
¼ cup chopped fresh cilantro

Steps:

  • Heat the oil over medium-low heat in a large nonstick pan. Add the light scallions, garlic, and jalapeño and cook, stirring frequently, until softened, 3 to 4 minutes. Do not brown.
  • Add the coconut milk, red curry paste, fish sauce, and brown sugar and whisk together. Bring to a gentle boil, then reduce heat and simmer until thickened, a few minutes. Add the chicken and simmer, uncovered, stirring occasionally to promote even cooking, until the chicken is cooked through, 5 to 6 minutes. (Do not let the sauce boil; the idea is to cook the chicken gently so that it's tender.) Stir in the lime juice, dark scallion greens, and cilantro. Taste and adjust seasoning with more lime, if necessary. Serve with jasmine rice.
  • Note: As always, take care when working with jalapeño peppers. If you touch the seeds or ribs, be sure to wash your hands well and avoid touching your eyes.
  • Note: It's important to wait until you're ready to eat to cook the chicken. If you want to get a head start, prepare the sauce up until the point when the chicken is added. Take it off the heat and then poach the chicken right before serving. If the chicken sits in the hot curry sauce for too long before serving, it will overcook.

Steps:

  • Heat oil in a skillet. Add sliced onion, minced ginger, and garlic. Saute for a minute until it is aromatic.
  • Add red curry paste and minced coriander root. Saute for 2-3 minutes until oil starts oozing out on the side, and the mixture is aromatic.
  • Add coconut milk, stock, lemon zest, brown sugar, fish sauce, and lemongrass stalk. Mix well and let everything come to a boil. Simmer and let it cook for 2-3 minutes.
  • Add chicken and let it simmer for 7-8 minutes.
