- In a 6 quart crock pot, combine water, vinegar, sugar, pepper and onions.
- Place corned beef in mixture.
- Cook, covered on HIGH for about 4-4 1/2 hours.
- Remove lid and scatter around the carrots and cabbage wedges.
- Cover again and continue cooking on HIGH 3 to 4 hrs longer or until beef is tender.
- Add drained potatoes about 20-25 minutes before serving (just to heat through).
- Serve beef, sliced with cabbage and veggies.
- Add a little cooking juices on top of the beef slices to keep it moist.
- Serve with Dijon mustard or horseradish and some crusty bread.
- Serves about 6-7 people.

- Combine the water vinegar, sugar, pepper and onions, in a 6 qt crock pot and mix well.
- Place corned beef and contents of spice packet in the mixture.
- Scatter the potatoes and carrots over the top and along the sides.
- Cover and cook on high heat setting 4 hours.
- Remove the lid and scatter the cabbage wedges over the top.
- Cover and continue cooking on low 3-4 hours longer, or until beef is tender.
- To serve, carve the beef into slices against the grain and serve with the cabbage and potatoes, with some of the cooking liquid spooned on top of the beef to keep it moist.

- Cover and cook on Low 10-12 hours or High 5-6 hours.

- Layer the potatoes, carrots, onions, celery and thyme in the insert of a 6-quart slow cooker. Put the brisket on top of the vegetables and add the beer and pickling spice. Add enough water to just cover the brisket. Cover and cook on low until the meat and vegetables are tender, about 8 hours.
- Arrange the cabbage over the brisket (it's OK if the cooker seems crowded), cover and cook until soft and wilted, 45 minutes to 1 hour more.

- Place carrots and parsnips into bottom of crock pot.
- Add corned beef brisket & onions.
- Mix together beer, water, sugar, dry mustard, garlic powder, sprig of thyme, salt and pepper.
- Pour into crock pot.
- Cover & cook on low heat for 8 hours.

- Place eye round in crock pot. Add carrots and chopped onion around the side of it. Add can of soup and beef broth. "Smear" mustard and horseradish on the eye round. Add cabbage. - Place the corned beef into the bottom of a large slow cooker.
- Scatter the pickling spice over the brisket.
- Layer the celery, carrots, potatoes, and onion atop the brisket, respectively.
- Pour the stout beer into the slow cooker. Add enough hot water to the slow cooker to cover the brisket by at least 1 inch.
- Cook on High until the brisket reaches the desired consistency, 7 to 8 hours.
- Remove the brisket and vegetables from the slow cooker to a large bowl; cover with aluminum foil to keep warm.
- Remove 1 cup of the liquid in the slow cooker; pour into a small pot over medium heat. Cook the liquid until the volume is reduced by about half, about 10 minutes. Transfer the reduced liquid to a small bowl; stir the horseradish and sour cream into the liquid to make a sauce.
- Submerge the cabbage wedges in the liquid remaining in the slow cooker; cook until the cabbage softens yet retains some crispiness, 20 to 30 minutes. Remove the cabbage to a platter. Ladle remaining liquid from the slow cooker into a bowl.
