I adapted this recipe from a Low fat Australian woman's weekly. It was so tasty, I just had to share

4 (200 g) ocean trout fillets
2 tablespoons lemon juice
1 tablespoon drained capers, chopped
2 teaspoons dill, chopped
4 kg potatoes, thickly sliced
salt and pepper
2 garlic cloves, chopped small
parsley

Steps:

  • preheat oven to moderately hot.
  • Boil or steam the potatoes until tender, then set aside to serve with the fish.
  • Meahwhile place each fish fillet on a piece of aluminium foil, enough to cover and enclose the fish.
  • top each fillet with equal amounts of juice, capers, dill, garlic salt and pepper.
  • close the aluminium foil over the individual fillets. place on an oven tray and bake for 20 min, or until fish is cooked.
  • unwrap, place the fillet on a plate and sprikle with the parsley.

250 g ocean trout fillets (per person)
2 kaffir lime leaves, roughly chopped (or 5 cm of lemongrass root)
2 cm knob fresh ginger, chopped into matchsticks
2 garlic cloves, chopped roughly
1 bunch fresh coriander, chopped with 5 cm of root stalk left intact (with roots)
2 small chilies, chopped with seeds
3 spring onions, cut into wedges
1/4 cup soy sauce
1 tablespoon fish sauce
1/2 teaspoon sesame oil
1 liter boiling water

Steps:

  • in a double boiler, pour the water, soy sauce, fish sauce and sesame oil. bring to the boil.
  • add the ginger, garlic, sping onions, coriander roots, continue to boil for 5 minutes to infuse flavours.
  • put a plate big enough to hold the fish into a steaming basket, which will sit on top of the broth mixture.
  • place the fish on plate, skin side up.
  • cover the skin with the chopped corriander (leaves and roots) and the chillies.
  • put steaming basket on top of the broth and cover. allow to steam for 10-12 minutes depending on how well cooked you like your fish.
  • strain the stock and set aside. garnish the fish with boiled ingredients. season with salt and pepper.
  • reduce some of the broth and serve over fish.
  • best served with steamed jasmine rice.

SALMON SUSHI SALAD

A light lunch or dinner, this salmon salad is a homemade version of your favourite sushi platter, with edamame beans, avocado and pomegranate seeds

100g sushi rice
50g frozen edamame beans
1 tbsp sesame oil
1 sheet nori , torn
handful pomegranate seeds
50g smoked salmon , cut into bite-sized slices
1 small avocado , stoned, peeled and sliced
1 tsp black sesame seeds
sushi ginger , to serve (optional)
1 tsp vegetable oil
2 tsp pomegranate molasses
1 tsp soy sauce

Steps:

  • Rinse the sushi rice really well and put in a small saucepan covered with 200ml cold water. Bring to the boil, then simmer for 10 mins with the lid on. Remove from the heat and keep the lid on for 15 mins before transferring to a serving bowl.
  • Meanwhile, pour boiling water over the edamame and leave to defrost until the rice is cooked. To make the dressing, combine all the ingredients, then set aside.
  • Heat the sesame oil in a non-stick pan and add the nori. Cook for 1-2 mins on a medium heat until crisp.
  • To assemble the salad, drain the edamame, then tip onto the rice along with the pomegranate seeds and salmon. Fan out the avocado slices on top and sprinkle over the black sesame seeds. Drizzle over the dressing and top with slices of sushi ginger, if you like.
