SOUR CREAM LOAVES

- In a large bowl, cream butter and 2/3 cup sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, baking soda, salt, nutmeg and 1/4 teaspoon cinnamon; gradually add to creamed mixture alternately with sour cream. , Pour into two 5-3/4x3x2-in. loaf pans coated with cooking spray. Combine remaining sugar and cinnamon; sprinkle over batter. , Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to a wire rack.

SOUR CREAM CHOCOLATE CHIP NUT LOAF
At any point during the 1980s, you could've opened the middle pantry drawer in our kitchen and discovered a treasure trove of baked goods from our supermarket's Entenmann's display: fudge-frosted doughnuts, mini chocolate chip cookies, thick-glazed cupcakes. My father had--and still has--an epic sweet tooth that deserves a three-hundred-page volume all to itself. The king of the drawer, though, was the Sour Cream Chocolate Chip Nut Loaf, because it only made rare appearances at the supermarket, and, much to our dismay, eventually disappeared from shelves across the country. (We never did find out why.) My father and I were the biggest fans of the loaf, and in the twenty-five years since I've seen it, I don't think I've ever walked by the Entenmann's section without secretly hoping I'll spy one amid the doughnut holes and crumb cakes. Until then, I have this homemade version, which comes about as close as you can get.

- Preheat the oven to 375 degrees F. Butter a 9-by-5-inch standard loaf pan.
- Make the cinnamon sugar: In a small bowl, mix together the sugar and cinnamon
- Make the batter: In a large bowl, using an electric mixer at medium speed, beat the eggs until frothy, about 3 minutes. Add the sugar and vanilla, beating until smooth. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add the melted butter and sour cream to the egg-and-sugar mixture; beat until well combined. At low speed, add the dry mixture to the wet mixture a spoonful at a time, beating just until smooth. Fold in the chocolate chips.
- Spread half of the batter in the prepared pan and sprinkle evenly with about two-thirds of the cinnamon sugar. Sprinkle with the walnuts. Top with the remaining batter, spreading evenly, then sprinkle with the remaining cinnamon sugar.
- Bake for 50 to 55 minutes or until a knife or skewer inserted in the center comes out clean.
LEMON LEMON LOAF
Sometimes simplicity speaks volumes. Our lemon loaf recipe is very straightforward. We do not add poppy seeds, pecans, or any other extraneous ingredient. We really feel that the most important aspect of a lemon loaf is the zingy lemon flavor, and we accentuate it by using a combination of freshly squeezed lemon juice, freshly grated lemon zest, and a mildly sweet lemon syrup. The sour cream gives this loaf a subtle tang and a dense, moist crumb that cannot be achieved with yogurt. If you want to increase the lemony goodness of these cakes, add the simple glaze after the syrup has set and the cakes are cool. This loaf freezes extremely well, so you can double the recipe and make a few extra loaves.

- MAKE THE LEMON CAKES
- Preheat the oven to 350 degrees F. Spray the sides and bottom of two 9-by-5-by-3-inch loaf pans with nonstick cooking spray. Line the bottom with parchment paper and spray the paper.
- Sift both flours, baking powder, baking soda, and salt together in a medium bowl.
- Put the sugar, eggs, lemon zest, and lemon juice in a food processor and pulse until combined. With the motor running, drizzle the butter in through the feed tube. Add the sour cream and vanilla and pulse until combined. Transfer the mixture to a large bowl.
- Sprinkle the flour mixture, one third at a time, folding gently after each addition until just combined. Do not overmix.
- Divide the batter evenly between the prepared pans. Bake in the center of the oven for 20 minutes, rotate the pans, reduce the oven temperature to 325 degrees F., and bake for another 30 to 35 minutes, or until a toothpick inserted in the center of the loaf comes out clean.
- Let cool in the pans for 15 minutes.
- MEANWHILE, MAKE THE LEMON SYRUP
- In a small saucepan over medium heat, heat the lemon juice and sugar until the sugar is completely dissolved. Once dissolved, continue to cook for 3 more minutes. Remove from the heat and set aside.
- Line a half sheet pan with parchment paper and invert the loaves onto the pan. Use a toothpick to poke holes in the tops and sides of the loaves.
- Brush the tops and sides of the loaves with the lemon syrup. Let the syrup soak into the cake and brush again. Let the cakes cool completely, at least 30 minutes.
- (The soaked but unglazed loaves will keep, wrapped in two layers of plastic wrap and frozen, for up to 6 weeks.)
- IF YOU LIKE, MAKE THE LEMON GLAZE
- In a small bowl, whisk together the confectioners' sugar and 4 tablespoons of the lemon juice. The mixture should be thick but pourable. If the mixture is too stiff, add up to another 2 tablespoons lemon juice and whisk again, adding small amounts of lemon juice and/or confectioners' sugar until you get the right consistency. Pour the lemon glaze over the top of each loaf and let it drip down the sides. Let the lemon glaze harden, about 15 minutes, before serving.
- The glazed loaves will keep for up to 3 days, wrapped tightly in plastic wrap, at room temperature.
CINNAMON-SOUR CREAM STREUSEL LOAF

- Cream together butter and sugar in a large mixing bowl.
- Add egg, stirring until blended.
- Add flour, baking powder, and salt gradually to butter mixture, alternating with additions of sour cream.
- Beat mixture just until blended, and add vanilla.
- In a small bowl, mix together pecans, brown sugar, 1 tbsp of sugar, and cinnamon.
- Pour half of batter into a greased and floured loaf pan, and sprinkle with half of streusel mixture.
- Pour remaining batter on top, and sprinkle with remaining streusel mixture.
- Bake at 350°F for 45-60 minutes or until toothpick inserted in the middle removes clean (if loaf starts to brown excessively, cover with foil during last 15 minutes of baking).
- Cool in pan 10 minutes, then remove and finish cooling on wire rack.

YUMMY SOUR CREAM CINNAMON LOAF
This is my creation formed by mixing a couple of loaf recipes until I got it the way everybody likes it. If you so desire, add a dash of cardomon to the batter. I think you will enjoy this loaf. Please let me know.

- To begin: Prehat oven to 350 degrees. Grease and flour a 9 x 5" loaf pan.
- Batter:.
- First, in a small bowl stir together the flour, baking powder, baking soda, and salt. Set aside.
- In a medium size bowl, cream the softened butter and 1 Celsius sugar until fluffy (about 4-5 minutes). Add the eggs and vanilla flavoring and mix until blended.
- Add the sour cream and the milk; blend at low speed and mix well.
- Add the flour mixture and mix well until all is incorporated.
- Cinnamon Mixture:.
- In a small bowl, mix together the sugars, cinnamon, and allspice. Set aside 1/4 of this to go on top of the loaf.
- Spoon half of the batter into the prepared loaf pan.
- Spoon 3/4's of the cinnamon mixture over the batter in the pan.
- Spoon the remainder of the batter over top.
- Take a small spatula and cut through the batter and cinnamon mixture to form swirls.
- Sprinkle the remaining cinnamon mixture over the top of the loaf.
- Bake 50-60 minutes or until a toothpick comes out clean.
- Cool 10 minutes before turning out of the pan.
- Enjoy!
SOUR CREAM COFFEECAKE LOAVES
Very good, moist cake with topping layered in cake. Easy to put together since it requires few cake ingredients. Tastes even the next day if there's any left.

- For cake:.
- Combine eggs and sour cream in mixing bowl.
- Beat well.
- Remove 2/3 cup dry cake mix from box and set aside.
- Dump remainder of box onto the egg mix.
- Stir by hand till blended.
- Mixture will be lumpy and thick. That's okay.
- Spoon out half of batter into two greased loaf pans.
- Prepare filling and topping:.
- In small bowl, cut butter into brown sugar and the 2/3 cup reserved cake mix till crumbly.
- Add nuts and cinnamon.
- Now add half of this topping to the batter in the pans.
- Drop remaining batter onto filling in both pans.
- Now add the balance of the filling over the tops of the loaves.
- Bake in 350 degree F. oven for 40 to 45 minutes. Makes two 9 x 5 x 3 loaves.
- Note:.
- You can also bake this in one 9" x 13" x 2" pan.

- Preheat oven to 350ºF.
- Grease 2 8x4-inch loaf pans.
- In a mixing bowl, stir together flour, baking powder, baking soda, and salt; set aside.
- In a large mixer bowl cream together the 1 cup sugar and shortening till light and fluffy.
- Add eggs and vanilla; beat well.
- Blend in sour cream and milk.
- Add flour mixture to sour cream mixture; mix well.
- Spread 1/4 of the batter in each of the greased loaf pans.
- Combine the topping ingredients and sprinkle 1 Tbs. of this mixture over the batter in the pans.
- Top each with half of the remaining batter.
- Cut through batter gently with a knife to make a swirling effect with the cinnamon.
- Sprinkle the remaining of the topping mixture on top of the loaves.
- Bake for 35-40 minute Cool in pans for 10 minute Remove from pans, cool thoroughly on wire racks.
