3/4 cup Wholesome Yum Coconut Flour
1/2 cup Unsalted butter ((cold, cut into pieces))
1/3 cup Besti Erythritol ((skip for savory crust))
1/4 tsp Sea salt ((or 1/2 tsp for savory crust))
2 large Egg
1/2 tsp Vanilla extract ((optional, skip for savory crust))

Steps:

  • Preheat the oven to 350 degrees F (177 degrees C). Line the bottom of a 9 in (23 cm) round pie pan with parchment paper, or grease well.
  • Combine the coconut flour, butter, erythritol, and sea salt in a food processor. Pulse until well combined.
  • Add the eggs and vanilla extract. Process again until dough forms.
  • Press the coconut flour pie crust dough into the pie pan. Poke holes in the bottom with a fork or toothpick.
  • Bake for 10-15 minutes, until firm and just barely golden on the edges. Rest on the counter for at least 10 minutes before adding filling, then you can bake again as needed for the filling. If the edges start to brown too much before the filling is done, you can cover them with foil. Cool completely before cutting.

Given to me by my SIL, this recipe is so easy and makes its own crust, too! Everyone who like coconut loves it. This pie freezes well and makes nice holiday gifts.

5 tablespoons butter
3/4 cup sugar
4 large eggs
1 cup milk (skim, 2% or whole)
1 cup fat-free buttermilk
1 teaspoon lemon extract
10 tablespoons self-rising flour (or 10 tbs flour, 1 tsp baking powder and 1/3 tsp salt)
7 ounces shredded coconut, canned,frozen,or fresh (about 2 3/4 cups)

Steps:

  • Preheat oven to 350 degrees.
  • Cream sugar and butter together until creamy.
  • Add eggs, one at a time, beating after each addition.
  • Add milk, buttermilk, and lemon extract and beat until blended.
  • Add flour and coconut and beat just until well mixed.
  • Pour batter into two regular 9-inch pie pans or one deep dish 9-5/8-inch pie pan.
  • Bake 30-40 minutes until crust forms on top, and pie is set in center and lightly browned on top.
  • Cool and cut into slices.
  • Serve at room temperature.

Just add 1 teaspoon sugar if you're making a sweet pie. Make sure to use refined coconut oil to hide the coconut taste. Unless of course you will use this for a coconut pie!

1 cup refined coconut oil
1 teaspoon salt
5 tablespoons ice cold water, or as needed

Steps:

  • Combine flour, coconut oil, and salt in a food processor and pulse until combined.
  • Add 5 tablespoons ice cold water and pulse. With the food processor running at low speed, add 1 additional tablespoon of water at a time until a dough forms.
  • Using your hands, pat dough to shape into a ball. Cut in half for 2 pie crusts.
  • Flour a work surface and rolling pin and roll out dough.
  • Bake as directed for any pie recipe you are following.

1/2 cup sifted flour
1/3 cup brown sugar
1/2 teaspoon salt
1/3 cup margarine, melted

1 teaspoon vanilla
1 cup unsweetened coconut
1 cup cream, whipped
2 tablespoons sugar
1/2 teaspoon vanilla
1/4 cup shredded coconut, toasted

Steps:

  • Crust:Mix oats, sugar, flour,and salt together, then add margarine, stirrinig together until mixture becomes crumbly. Press into a 9" pie pan and set or another pie plate inside of it. Bake at 375 for 15 minutes.
  • Filling:Combine cornstarch, sugar,milk, beaten eggs,and salt in saucepan. Cook over medium heat until mixture thickens. Remove from heat and add vanilla and coconut. Cool slightly, then pour into cooled pie shell.
  • Topping: Whip cream, adding vanilla and sugar. Spread over pie and sprinkle with toasted coconut.
