THE BEST TOAD IN THE HOLE. COMFORT AT ITS BEST

The Best Toad in the Hole. Comfort at Its Best image

This is the one. No fail, not heavy podge but yummy wonder A perfect toad in the hole . for me this means brown yummy sausages (or left over beef/pork/lamb), a light custary yorkshire pudding, crispy on the edges and risen and fluffy inside. Onions to add flavor. Many use onion gravy but i am a little bit of a heathen here..with this recipe i can enjoy all of it without needing lashings of gravy but of course it would be perfect on it. A brian turner recipe slightly tweaked by me. Its best known as an english dish but with canada';s british heritage its very popular here as well. Do not be afraid of the proportions or the vinegar. I was, so used to heavier batters, more flour..and never with vinegar. Yet it helped lighten the pud and the batter was just perfect with the sausages..they even rose in the cooking. made this for the 3rd time, and this time was wanting something even quicker so didn't use the onions or herbs, just browned the sausages in the baking dish while the batter sat. Also halved it and it was just as wonderful

Categories     Breakfast

Time 1h46m

Yield 1 lb. sausages, 4 serving(s)

Number Of Ingredients 6

1 cup all-purpose flour
2 eggs
1 cup milk
1/2 teaspoon salt
fresh ground black pepper
fresh pork sausage

Steps:

  • To make the batter in a blender, combine the flour, eggs, milk, salt and a few grindsings of pepper in the blender jar, and blend at high speed for 2 to 3 seconds. Turn off the machine, scrape down the sides of the jar, and blend again for 40 seconds.
  • (To make the batter by hand, beat the eggs and salt with a whisk or a rotary or electric beater until frothy. Slowly add the flour, beating constantly. Then pour in the milk in a thin stream and beat until the mixture is smooth and creamy). Refrigerate the batter for at least 1 hour.
  • Preheat the oven to 400*. Place the sausages side by side in a heavy 10 to 12-inch skillet, and prick them once or twice with the tines of a fork. Sprinkle them with 2 Tblsp. of water, cover the pan tightly, and cook over low heat for 3 minutes.
  • Then remove the cover, increase the heat to moderate, and continue to cook, turning the sausages frequently with tongs or a spatula, until the water has completely evaporated and the sausages have begun to brown in their own fat.
  • Arrange the sausages in a single layer in a baking dish or tin about 6 by 10 inches and 2 inches deep, and moisten them with 2 Tblsp. of their drippings. Keep them at least and inch apart.
  • Then pour the batter over them and bake in the middle of the oven for 30 minutes, or until the pudding has risen over the top of the pan and is crisp and brown. Serve at once.

BRITISH TOAD IN THE HOLE (SAUSAGES IN BATTER) WITH SHERRY ONION

British Toad in the Hole (Sausages in Batter) With Sherry Onion image

Pure traditional British comfort food, that isn't that much hassle to make. Can serve 4 people if served with mash potato, carrots and peas but sometimes I prefer to do away with the mash and just serve this for 2! Don't forget the sherry onion gravy which you'll probably wanna drink all on its own!

Yield 4 serving(s)

Number Of Ingredients 6

4 ounces flour
1/2 teaspoon salt
1 egg, beaten
1/2 pint milk, divided
1 tablespoon oil
6 -8 sausages

Steps:

  • Sift flour and salt into a bowl.
  • Add beaten egg, along with some of the milk; beat for a minute or two.
  • Add remaining milk.
  • Place the batter mixture into the refrigerator for an hour or so to get really cold.
  • Preheat oven 420 degrees Fahrenheit (210 degrees Celsius).
  • Use a medium roasting dish and place oil in the pan.
  • Heat in the oven until the oil is really hot; if you flick a spot or two of water in the oil and it really sizzles then it is hot enough.
  • Quickly pour in all the batter and add the sausages, spaced a bit apart.
  • Cook for 30 to 40 minutes .
  • Lovely served with fresh vegetables of your choice and a gravy. I often freeze gravy to use with this type of dish.

TOAD IN THE HOLE

Toad in the Hole image

I discovered this dish when I first moved over here to England. I had never heard of or eaten it before, although I had eaten sausages and Yorkshire pudding, just not together. The combination of the two is, well...heavenly! Don't forget the mash and onion gravy! Cumberland sausage is my sausage of choice as it has a nice spicy flavour that goes well with the batter.

Time 50m

Yield 2-3 serving(s)

Number Of Ingredients 8

6 large good quality pork sausages
1 large onion, cut into chunks
1 tablespoon sunflower oil
3 ounces plain flour
1 large egg, at room temperature
3 fluid ounces milk
salt & freshly ground black pepper
1 teaspoon grainy mustard

Steps:

  • Pre-heat the oven to 220*C/425*F.
  • Pour the sunflower oil into a solid based 9 inch by 6 inch baking tray.
  • Throw in the cut up onion and scatter in the sausages.
  • Place in the hot oven, on the lowest shelf, for about 15 minutes while you make the batter.
  • Using a sieve and holding it up high above the bowl sieve the flour into the bowl. (Doing this from a height forces air into the flour and gives you a lighter batter.
  • Make a well in the middle of the flour and using a whisk, whisk in the egg and milk, along with some salt and pepper. As you whisk the flour will be incorporated from the edges and you will end up with a nice lovely thick and smooth batter.
  • Whisk in the grainy mustard.
  • Take the hot pan of sausages out of the oven and quickly pour the batter in and around the sausages while the fat in the pan is still sizzling.
  • Return the pan to the oven, placing it on the highest shelf this time, and continue to bake for 30 minutes longer, until the sausages are nicely browned and the batter has puffed up all nice and brown around them.
  • Serve hot, cut into squares with mashed potatoes and onion gravy for a delicious meal!

Yield 1 loaf, 4 serving(s)

Number Of Ingredients 7

1 lb sausage
1 cup all-purpose flour

1 tablespoon oil (vegetable, canola...)
1 pinch salt
1 teaspoon herbs

Steps:

  • Preheat oven to 400F degrees.
  • Mix flour, egg (beaten), salt, milk and herbs to make batter.

  • Place sausage in casserole dish (if not already there) and add batter.
  • Bake for about 30 minutes or until bread rises.
