These can be made ahead and frozen for a quick snack when unexpected company shows up. Just tack on a few minutes to the baking time to compensate for their being frozen.

1/2 lb feta cheese
1 cup grated kefalotiri or 1 cup parmesan cheese
1/3 cup chopped parsley (chopped spearmint is also nice)
2 eggs
pepper
3/4 cup melted butter (or more)
1 lb phyllo dough (pastry sheets)

Steps:

  • Crumble or mash the feta cheese with a fork.
  • Add the grated cheese, parsley, eggs and pepper.
  • Cut pastry sheets in strips about 2x12 inches.
  • Stack them one on top of the other to prevent From drying.
  • Brush a strip of phyllo with melted butter, lay another strip on top and brush that one with butter too.
  • Put one teaspoon of the filling on the short end of the strip, facing you, and fold over one corner to make a triangle.
  • Continue folding pastry strip from side to side in the shape of a triangle until the entire pastry strip covers the filling. (Remember how we were taught to fold a flag into a triangular shape? Think of that as you keep folding the dough over. You should have a nice, neat, triangular packet.)
  • Proceed in this manner with remaining pastry strips and filling until all are used.
  • Put"tiropitakia" on a buttered baking sheet, brush generously with melted butter and bake in a moderate oven for 15-20 minutes or until golden brown.
  • Serve hot.
  • You can also make these ahead, put on a baking sheet and freeze, unbaked. When frozen, just keep them in a ziploc bag and you can have tiropitakia at a moment's notice. Just add 5 more minutes to the baking time if you're using frozen ones.

6 tablespoons butter
½ cup all-purpose flour
2 cups milk
1 teaspoon salt
1 pinch nutmeg
1 pound feta cheese
3 ounces grated Greek Kefalotiri cheese
4 eggs, beaten
¼ cup chopped fresh parsley
¾ pound phyllo dough, thawed
¾ cup melted butter for brushing

Steps:

  • Melt 6 tablespoons butter in small saucepan over medium-low heat. Whisk in the flour until smooth and cook, stirring constantly, for 2 minutes. Gradually pour in the milk, stirring constantly with a whisk or wooden spoon. Add the salt and nutmeg, stirring occasionally, until mixture is bubbly and thickened, 5 to 10 minutes.
  • Mash the feta cheese with a fork in a bowl and stir in the grated kefalotiri, beaten eggs, and parsley. Pour in the hot white sauce and mix well.
  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish.
  • Line the buttered baking dish with a sheet of phyllo dough and brush it with melted butter; keep the remaining phyllo sheets covered with plastic wrap while you work. Repeat with half of the phyllo sheets, brushing each sheet with butter, and letting them come up the sides of the baking dish. Pour in the cheese filling.
  • Lay the remaining pastry sheets on top of the filling, brushing each with butter. Brush the top of the last sheet with butter and, with a sharp knife, score the top sheets into strips about 3 inches wide from one end of the baking dish to the other.
  • Bake in the preheated oven until the pastry is golden brown and crisp, about 45 minutes. Let stand for 5 minutes, then cut into squares and serve hot.

200g feta cheese, crumbled (7 ounces)
3/4 of a cup heavy cream
100g grated Parmesan or Regato or kefalograviera (3.5 ounces)
100g grated Gouda cheese or Emedal cheese (3.5 ounces)
100g ricotta cheese or anthotiro (3.5 ounces)
2 large organic eggs, beaten
2 tbsps fresh mint (optional)
olive oil or melted butter
sesame seeds (optional)
freshly ground pepper

Steps:

  • If you choose to prepare this Greek tiropita recipe with commercial phyllo dough, it is important to thaw completely the phyllo dough by putting it in the fridge from the previous day. For the beginners at working with phyllo, check the handling tips before starting.
  • Prepare the filling for the tiropita. This traditional tiropita recipe, calls for three different kind of cheese for extra flavour! Use a fork to crumble the feta cheese into a large bowl and add the beaten eggs along with the rest of the grated cheese and heavy cream. Chop some fresh mint and add to the mixture. Season with freshly ground pepper and blend well with a spoon. Place the mixture in the refrigerator for 20-30 minutes.
  • For this tiropita recipe you will need a large baking tray, approx. 20*30 cm. Using a pastry brush, butter the bottom and sides of the tray. Place one sheet of phyllo at the bottom of the pan and with a cooking brush sprinkle some olive oil or melted butter. Repeat the procedure, adding 4-5 more sheets of phyllo dough. You will use 5-6 phyllo sheets for the bottom of the tiropita.
  • Pour in the feta cheese mixture and smooth with a spatula. With a knife trim some of the excessive phyllo, and fold the excess phyllo sheets flaps over the mixture. Top the tiropita with 4-5 more phyllo sheets, making sure to oil or butter each one, before adding the other; roll in the edges. Brush the top with oil or butter, sprinkle with water and sesame seeds. If using commercial phyllo dough to make this tiropita recipe make sure to scar the top with a sharp knife, to help release the steam.
  • Bake the tiropita in a preheated oven at 180C for 45-50 minutes, until the phyllo is crisp and golden. Let it cool down for a while before serving. Enjoy!

170g feta cheese, crumbled (6 oz.)
50g Gouda cheese, grated (2 oz.)

Steps:

  • For the beginners at working with phyllo, check the handling tips before starting.
  • To prepare the tiropitakia, start by preparing the filling. Crush the feta cheese into a large bowl and add the grated cheese, the egg, a splash of milk, the yoghurt and season with freshly ground pepper. Mix well with a spoon to combine the ingredients. (At this point you can add some chopped fresh herbs if you like; some fresh dill or mint will surely lift the flavour).
  • Preheat the oven at 180C and start preparing the tiropitakia.
  • Spread one sheet of the phyllo dough on the kitchen counter and with a cooking brush drizzle with some melted butter or olive oil. Spread one more sheet on top and drizzle with some more butter.
  • Cut the sheets into three or four lanes (depending on if you like the tiropitakia to be small or larger). At the end of each lane add one tablespoon of the filling. Fold one corner to form a triangle and continue folding the triangle upon itself, until the entire piece of phyllo is used. Continue with the rest phyllo sheets and filling.
  • Oil the bottom of a large baking tray, place the tiropitakia and brush them with some melted butter on top. Bake in preheated oven at 180C for 25-30 minutes, until golden and crispy.
  • Serve this delicious Greek feta cheese triangles as a great starter with some Greek salad aside.

1/2 pound feta, crumbled
1/2 pound ricotta
1/2 cup kasseri, grated
1/4 pound cream cheese
1/2 pound butter, melted
Chopped parsley to taste
Grating nutmeg, to taste
2 eggs, well beaten
1 package commercial phyllo pastry
White pepper, to taste

Steps:

  • To make the filling, combine the all the cheese together with the parsley, nutmeg, pepper, and eggs. Mix well and set aside for 1 hour, refrigerated. Preheat the oven to 350 degrees. Pull phyllo dough from the refrigerator and unroll. Make sure to keep the dough covered at all times while using, because it dries out quickly. Cut the phyllo into 4 strips. (If you want to make smaller tyropitakia, cut into 6 strips.) One strip at a time, brush with the melted butter and place a small dollop of cheese mix in the middle of the top of the strip. Folding the phyllo is like folding a flag, fold the right corner to the left to form a right angle and then upward. Continue folding at right angles until you reach the top and have a triangle. Place the triangles on a baking sheet and bake for about 20 minutes or until golden brown on each side.

16 sheets fillo pastry
150 g butter (melted)
200 g ricotta cheese (fresh)
200 g feta cheese (crumbled)
50 g Pecorino (grated )
1 tsp nutmeg (freshly grated )
1 pinch white pepper
5 eggs ((2 for the filling and 3 for the coating))
200 g sesame seeds
chili infused honey ( to drizzle)

Steps:

  • Preheat your oven to 180 deg C and line a baking tray with baking paper.
  • In a large bowl combine the ricotta, feta, Pecorino, nutmeg, pepper and 2 eggs. Mix thoroughly to combine and set aside.
  • Take one sheet of fillo, lay it out width wise on a clean bench, brush with melted butter and layer another sheet of fillo on top. Proceed until you have a stack of 4 fillo sheets all brushed with butter. Cut out 5 vertical strips form the pastry (each should measure approximately 8cms)
  • Place one heaped tablespoon of the cheese mixture on the very top of the sheet allowing a few cms of space and press down lightly. Fold diagonally to form a triangle, then continue folding ensuring you keep a triangular shape. (Any excess fillo that remains can be "tucked in" by brushing it with a little extra butter).
  • Continue with the remaining fillo and filling until you end up with 20 pies. Dip each pie in the beaten eggs, drain any excess and then place onto a plate filled with sesame seeds. Cover each pie with the sesame seeds until all are done and bake in the oven for approx. 15 mins until golden.
  • When the pies come out of the oven allow them to cool for 5 minutes before drizzling them with the chilli infused honey.

5 eggs, beaten
8 ounces feta cheese, crumbled
1 cup butter, melted
1 (16 ounce) package frozen phyllo pastry, thawed in refrigerator

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • In a large bowl, mix together the cottage cheese, eggs and feta cheese until well blended. 17 ounces 500 grams feta
9 ounces 250 grams fresh anthotiro or ricotta
2 tablespoons fresh chopped mint (or 1 tablespoon dry)
2 tablespoons fresh chopped dill (or 1 tablespoon dry)
Freshly ground pepper
3 eggs
1 tablespoon olive oil plus more for brushing
12 phyllo sheets defrosted
sesame seeds (optional)

Steps:

  • Preheat oven at 350 F (180 C)
  • Grease (with olive oil) a 9X13 inch (25X35 cm)casserole dish or pan
  • In a large bowl smash the feta and anthotiro with a fork.
  • Add the mint, dill and pepper and mix.
  • In a small bowl beat the eggs and add them to the cheese mixture along with one tablespoon olive oil. Mix well.
  • Prepare your working area so that you have space to spread the phyllo.
  • Remove your first phyllo sheet carefully and spread it on the bottom of the pan. If it is too big you can scrunch it to fit. Brush with olive oil. I often use an olive oil spray bottle instead. Place the second phyllo on top of the first phyllo and brush with olive oil and continue until you have spread 6 sheets of phyllo.
  • Spread the cheese mixture over the phyllo making sure it is spread evenly.
  • Cover with 5-6 more phyllo sheets repeating the same process (brushing with olive oil). Make sure that you do not scrunch the final 2-3 phyllo sheets.
  • Brush the top layer with olive oil and score. Cut only through the phyllo (not all the way down).
  • Sprinkle with sesame seeds, splash a bit of water on top with your fingers and place in the oven.
  • Bake for about 40 minutes. Lift side slightly to make sure the bottom is baked. Place on the bottom of the oven for another 5 minutes.
  • Let it cool for 15 minutes and cut in pieces.
  • Keep in refrigerator. You may reheat it at about 280 degrees or you can eat it at room temperature.

3/4 cup butter, melted
1/2 cup sesame seeds
1 egg yolk
1 cup emmenthaler cheese (Swiss) or 1 cup similar cheese, grated
1/2 cup feta
4 ounces ricotta cheese or 4 ounces cottage cheese
2 eggs, beaten lightly
2 tablespoons parsley, chopped
2 tablespoons of fresh mint, chopped
1/2 teaspoon fresh ground black pepper

Steps:

  • Remove the filo pastry from the refrigerator and let stand at room temperature about 1 hour.
  • Make the filling by mashing the feta until it crumbles.
  • Add to this the eggs, Emmenthal cheese, ricotta, parsley, mint and pepper and blend well.
  • Cut each filo leaf into a strip 6 x 12" (15 x 30 cm).
  • Brush each leaf with the melted butter.
  • Fold the leaves in half lengthwise making strips 3 x l1" (6 x 30 cm).
  • Again brush with butter and place 1 Tbsp.
  • of the filling at the bottom of each leaf.
  • Fold over to form a triangle (like you were folding a flag) and continue folding until the strip is completed.
  • Repeat with each of the strips and place the completed triangles on a well greased cookie sheet.
  • Preheat oven to 375 degrees F.
  • Brush the tops of each triangle with butter and then with a mixture of the egg yolk and 2 Tbsp of water.
  • Sprinkle over with the sesame seeds and bake in a medium oven until the pastries are golden brown and flaky (about 20- 30 minutes).
  • Serve hot or cool.
  • Yields 16- 24 pastries.

I love most everything with phyllo dough and this one did not disappoint me. These were so savory, creamy and delicate. Just delish!

1 pkg phyllo dough defrosted overnight in fridge
1 1/2 c feta cheese crumbled
3/4 c cottage cheese ( i used lowfat)
1 1/2 Tbsp fresh parsley diced
1/2 tsp salt
3/4 tsp dried dill
1/2 tsp black pepper
2 eggs beaten
1 stick butter (has to be butter for this dish)

Steps:

  • 1. Preheat your oven to 375F. In a small bowl, add your cheeses, your herbs, spices and beaten eggs. Mix thoroughly, set aside.
  • 2. On a clean flat surface, bring out your phyllo dough.
  • 3. Open it flat.
  • 4. Preserving your phyllo dough so it doesn't dry out is very important. We have found that a long piece of wax paper is just as good (actually better, because the dough doesn't get soggy). You place a long piece of wax paper over the dough strips or whatever length you need.
  • 5. If your not going to work with your dough right away. Still place the piece(s) of wax paper over you dough. Wet a couple of pieces of paper towel, wring out excess moisture. Place over the wax paper. This will ensure your dough will not dry out.
  • 6. When you are ready to make the tiropitakia, divide your dough into strips.
  • 7. It's much easier to do all the cutting at once, then cover the dough and take out what you need.
  • 8. If you can't work with your strips immediately, don't panic. Roll the strips into a ball. Wrap with the wax paper and then place into a ziplock bag, seal and place in fridge for up to 2 days.
  • 9. To make the tiropitakia; Melt your butter. I use the microwave, and usually do 1/2 c at a time. Take 2-3 strips of phyllo dough, baste with melted butter. Add 1tbls or so of filling.
  • 10. You can decide which side you work with, I alway's start with the right top corner for some reason. Starting at the top right corner, bring your phyllo dough over the filling making a triangle. Flatten slightly to ensure all the pastry will have filling in it.
  • 11. Now take the top LEFT pointy corner of your filled pastry, and bring it down on the left hand side.
  • 12. Working again with the LEFT pointy part, bring your triangle over to the RIGHT.
  • 13. Working now with the RIGHT top pointy part, bring it down straight on the right.
  • 14. Continue doing this till you reach the end of the dough. At this point, just cut off the excess piece. Place on a plate till ready to use.
  • 15. When you are ready to bake, line a cookie sheet with aluminum foil (easier clean up), spray with non stick cooking spray, baste the tiropitakia with melted butter. Bake in a preheated 375F oven for 18-22 minutes, till nicely golden.
  • 16. These can be eaten as is, totally addicting, and so elegant on a plate. The various uses of this wonderful pastry dough is next to none. You can make them savory or sweet.   • Lay one sheet of fillo horizontally oriented in front of you on your cutting board. Brush it with butter. Run a knife down the piece of dough every two inches or so — this should yield six to seven strips. (See photo above.)
  • Place one teaspoon of cheese mixture at the end of each strip. Fold over corner to make a triangle. Continue folding from side to side till you get to the end of the strip. (See photos above.)
