Easy tiramisu cups, the best twist on the classic Italian dessert. Layers of mascarpone and ladyfingers in a glass, this makes the perfect party dessert.

200 ml/ 7 fl.oz/ 1 scant cup coffee/espresso (Note 2)
12 tablespoons Amaretto (divided (Note 1))
400 ml/ 13.5 fl.oz/ 1 ¾ cups heavy cream
1 teaspoon pure vanilla extract
100 g/ 3.5 oz/ ½ cup sugar
450 g/ 1 lbs/ 2 cups mascarpone
18 ladyfingers (2 per jar)

Steps:

  • Brew the espresso or a very strong coffee. If making coffee use about the double amount of coffee powder you would normally use. Pour into a bowl and let cool slightly until needed. Add 2 tablespoons of the Amaretto to the coffee.
  • Beat the heavy cream until soft peaks form. Add the vanilla extract and gradually start adding the sugar while continuing to beat until the heavy cream is stiff.
  • In another bowl, gently stir the mascarpone and the remaining 10 tablespoons Amaretto until smooth. Don't overmix or the mascarpone will become runny.
  • Gently fold the whipped heavy cream into the mascarpone mixture.
  • Fill the mixture into a piping bag fitted with a large nozzle (alternatively use a spoon).
  • Pipe some of the mascarpone cream into the jars.
  • Break each ladyfinger into three pieces. Dip them for just a moment into the coffee and place them into the jars.
  • Cover with more mascarpone.
  • Add another broken and soaked ladyfinger on top and cover with more mascarpone.
  • Cover the jars with their lids or plastic wrap and refrigerate for at least 8 hours.
  • Sieve the unsweetened cocoa powder on top before serving.

This recipe came from the Washington Post Magazine's Plate Lab column, and was obtained from the Praline Bakery. I love making it in half-pint canning jars, which are cute to serve in, and can freeze safely.

3/4 cup heavy whipping cream
1 1/2 teaspoons vanilla extract
1/4 cup sugar
2 extra-large egg yolks
8 ounces mascarpone
1 1/2 teaspoons dark rum
2 tablespoons marsala wine
2 cups brewed coffee
1 1/2 tablespoons instant espresso powder
2 tablespoons dark rum
2 tablespoons marsala wine
4 ounces ladyfingers

Steps:

  • Whip cream to medium-firm peaks. Fold in vanilla extract, cover and refrigerate.
  • Break ladyfingers in half, so they will fit into the jars.
  • Whisk sugar and egg yolks in a double boiler over simmering water, until the mixture reaches 160 degrees F on an instant-read thermometer and it appears ribbony and lighter in color. Transfer to a stand mixture with a whisk attachment, and beat for 5 minutes until thoroughly lightened and cooled.
  • Place mascarpone into large mixing bowl. Stir in 2 TB. marsala and 1 ½ teasp. rum. Add a spoonful of the whipped cream and stir in gently to lighten the mixture. Fold in HALF of the remaining whipped cream.
  • Prepare soaking liquid: Combine cooled coffee and next 3 ingredients in a wide shallow dish.
  • To build individual portions, prepare six half-pint canning jars, and have lids and rings ready. Place mascarpone cream into a gallon-size zip top bag and snip off corner to make it easy to pipe into jars. (You will make 3 layers of mascarpone cream, 2 layers of dipped ladyfingers, and a layer of whipped cream on top.).
  • Pipe 1/4" mascarpone cream into bottom of jars. Quickly dunk ladyfinger halves into coffee mixture, and place 2 pieces side-by-side on top of the mascarpone layer. Pipe another layer of mascarpone on top of ladyfingers. Repeat the dunked ladyfingers layer, and top with another layer of mascarpone. Top with whipped cream, and smooth top with a small spatula. You should have enough ingredients to completely fill 6 jars. Place lids and rings on jars, and at this point you may freeze for future use, up to one month, or serve within 24 hours.
  • This may be built in a glass loaf pan instead of individual servings if desired. Prepare the same way, using whole ladyfingers instead of pieces.
  • Remove from freezer to refrigerator 1-3 hours before serving. Just before serving, remove lids, and dust tops with unsweetened cocoa. Garnish with a whole coffee bean.

1 1/2 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup milk
1 tablespoon instant espresso powder
1/2 teaspoon pure vanilla extract
6 tablespoons unsalted butter, at room temperature
3/4 cup granulated sugar
1 large egg
6 ounces mascarpone cheese, at room temperature
4 ounces cream cheese, at room temperature
1/3 cup confectioners' sugar, sifted, plus more for dusting
1/2 teaspoon pure vanilla extract
1 tablespoon coffee liqueur, such as Kahlua
1 teaspoon instant espresso powder

Steps:

  • Make the cookies: Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Whisk the flour, cocoa powder, baking powder, baking soda and salt in a medium bowl. Stir the milk, espresso powder and vanilla in a liquid measuring cup until dissolved. Beat the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and creamy, about 1 minute. Add the egg and beat until combined. Reduce the mixer speed to low; beat in half of the flour mixture, then the milk mixture, then the remaining flour mixture. Increase the mixer speed to medium and beat until smooth, about 1 minute.
  • Drop tablespoonfuls of dough about 2 inches apart on the prepared baking sheets (dip the spoon in water if the dough sticks); form into even mounds with damp fingers. Bake, switching the pans halfway through, until the cookies are set around the edges and the tops spring back when touched, about 10 minutes. Let cool 3 minutes on the baking sheets, then transfer to racks to cool completely.
  • Make the filling: Beat the mascarpone, cream cheese, 1/3 cup confectioners' sugar and the vanilla in a medium bowl with a mixer on medium speed until smooth and light, about 1 minute. Transfer half of the filling to a separate bowl. Stir the liqueur and espresso powder in a small bowl until dissolved, then add to the remaining filling and beat until combined. Transfer the fillings to separate large resealable plastic bags and snip a corner on each.
  • Flip over half of the cookies; pipe a circle of espresso filling around the edge of the cookies. Pipe the plain filling inside the circles and sandwich with the remaining cookies. Refrigerate until the filling is firm, about 1 hour. Dust with confectioners¿ sugar.

4 tablespoons unsalted butter, melted and cooled slightly, plus more for greasing
3/4 cup plus 2 tablespoons cake flour
3/4 teaspoon baking powder
1/4 teaspoon fine salt
2 large eggs
2/3 cup granulated sugar
1 tablespoon milk
3/4 teaspoon vanilla extract
1/2 cup confectioners' sugar
1/2 cup coffee liqueur, such as Tia Maria
1 tablespoon instant espresso powder
1 tablespoon unsweetened cocoa powder
1/4 cup hot water
1 cup mascarpone cheese, at room temperature
1/2 cup heavy cream
Cocoa powder or chocolate shavings, for garnish, optional

Steps:

  • Preheat the oven to 325 degrees F and place 6 lightly buttered oven-safe 4-ounce coffee cups on a rimmed baking sheet.
  • Sift the flour, baking powder and salt into a medium bowl and set aside. In the bowl of a stand mixer on medium-high speed, beat the eggs for 4 minutes. They will begin to lighten in color and become frothy. Add the granulated sugar and continue to beat for an additional 4 minutes. Reduce the mixer speed to low and stir in the flour mixture until just combined. Then mix in the melted butter, milk and 1/2 teaspoon of the vanilla. Divide the batter among the cups and bake until the tops are golden brown, lightly spring back to the touch and a toothpick inserted into the center comes out clean, 25 to 30 minutes.
  • While the cupcakes bake, mix together 1/4 cup of the confectioners' sugar, the liqueur, espresso powder, cocoa powder and hot water, and stir until dissolved.
  • When the cupcakes come out of the oven, poke 8 to 10 holes in each using a wooden skewer. Evenly but slowly spoon the coffee syrup over each cupcake. Let cool completely.
  • When the cupcakes are cool, beat the mascarpone with the heavy cream and the remaining 1/4 cup confectioners' sugar and remaining 1/4 teaspoon vanilla until soft peaks form. Divide among the cupcakes. Garnish each cupcake with a dusting of cocoa powder and/or chocolate shavings if using.

3 egg yolks
1/4 cup sugar
2 tablespoons Marsala wine
1/2 cup heavy cream
1 cup Mock Mascarpone, recipe follows
3/4 cup strong coffee, sweetened with 1 tablespoon sugar, cooled
8 (1/2-inch thick) slices store-bought pound cake, cut in thirds
2 tablespoons unsweetened cocoa, for dusting
8 ounces cream cheese, at room temperature
2 tablespoons vanilla Greek yogurt
1/4 teaspoon vanilla extract

Steps:

  • Place the egg yolks, sugar and wine into a metal bowl. Place the bowl on a pan of barely simmering water, making a double boiler. Whisk the mixture constantly until the mixture becomes foamy and then creamy, doubling in size, about 5 minutes. The mixture should be uncomfortably warm to the touch, but not burning. Remove from the heat and set aside.
  • In a small mixing bowl, whip the heavy cream until soft peaks form, about 2 minutes, and set aside.
  • In a medium bowl, mix the Mock Mascarpone cheese with the egg mixture using medium speed until well blended. Fold in the whipped cream.
  • Pour the coffee into a wide bowl; briefly dip 3 slices of the pound cake into the coffee, about 3 seconds each side. Transfer to a 6 to 8-ounce parfait glass to create the first layer. Top the slices of cake with a few spoonfuls of the cream filling mixture. Repeat the process with another 3 slices of cake and top with more filling mixture. Repeat the process for the remaining parfait glasses. Dust each dessert with the cocoa. Refrigerate for a couple of hours before serving.
  • In a small bowl, cream together the cream cheese, yogurt and vanilla extract with a mixer until well blended. Refrigerate if a firmer texture is desired. Use in recipes as an inexpensive alternative to mascarpone.

TIRAMISU CUPS

Coffee soaked ladyfinger biscuits layered with delicious melt-in-the-mouth mascarpone cream and served in individual cups. Simply irresistible!

5 oz savoiardi ladyfingers
9 oz mascarpone cheese
2 eggs
⅓ cup sugar
½ cup strong coffee (espresso)
2-3 tbsp rum/ brandy
dark cacao powder (unsweetened)
Pinch of salt

Steps:

  • Brew espresso coffee and let it cool. Best if you're using Moka - stovetop espresso maker.
  • Separate egg yolks from the egg whiles. Be very careful as you do that. You don't want even a teeny tiny spot of an egg yolk in egg whites, as it'll prevent egg whites from whipping.
  • Using a mixer beat egg yolks with approximately half of sugar. Beat on high speed at least for a few minutes until egg yolks become pale yellow and very creamy.
  • Add mascarpone cheese a few tablespoons at a time and continue beating once you get all smooth consistency.
  • In a separate bowl using clean whisk attachment beat egg whites with a pinch of sugar. Once they become really foamy add remaining sugar and continue beating until stiff peaks. When you lift the whisk the peaks do not curl and remain straight up.
  • Fold beaten egg whites into egg yolk/mascarpone mix. IMPORTANT: Add egg whites a few tablespoons at a time and perform a folding move from the bottom of the bowl curling over the top. Do this as gently as possible in order not to crush light and airy texture of the beaten egg whites.NOTE: you might not use ALL of the egg whites. Stop when you feel you've reached the desired consistency of the cream. It should not be too liquid.
  • Transfer the cream to a pastry bag and let it cool in the fridge for about 30-60. You can do without pastry bag too but I find it much easier that way.
  • Pour strong coffee into a shallow dish, add rum or brandy to taste.
  • In a dessert cup or an ice-cream bowl start to assemble tiramisu.
  • Pipe a thin layer of cream onto the bottom of the cup.
  • Cut a piece of savoiardi cookie to fit the bottom of the glass and deep it quickly in coffee.
  • Place on top of the cream. Pipe another layer on top of savoiardi and dust with dark cacao powder.
  • Again, deep a piece of savoiardi cookie in strong coffee, place on top, cover with a layer of cream and cacao powder.Repeat the process until you fill the cup.
  • Top layer should be finished with cream and dusted with cacao powder.
  • Let tiramisu cool in the fridge before serving.Dust with more cacao powder and decorate with coffee bean (optional).

4 sheets phyllo dough
6 ounces cream cheese or 6 ounces mascarpone cheese
1/3 cup confectioners' sugar
2 tablespoons unsweetened cocoa powder

2 tablespoons rum or 2 tablespoons Amaretto
1 teaspoon vanilla extract or 1 teaspoon almond extract
1/2 cup frozen non-dairy topping, thawed
3/4 cup mixed berry (optional)
1/4 cup semisweet chocolate, shavings or 1/4 cup chocolate curls
toasted slivered almonds, chopped (garnish)

Steps:

  • Preheat oven to 325F, for phyllo cups.
  • In a medium bowl, with an electric mixer at medium speed, beat the cream cheese ( or mascarpone cheese, if using), confectioner's sugar, cocoa powder, milk, vanilla or almond extract, and rum or Amaretto or brandy, with a rubber spatula, fold in the whipped topping.
  • Refrigerate for 1 hour.
  • Fill the phyllo cups with cocoa mixture; top with berries (if using) and sprinkle with chocolate shavings ot curls and slivered almond pieces.
  • Rather than dirty your pastry bag, snip a small hole in the corner of a plastic food storage bag and pipe the mixture into the cups.
  • Phyllo Cups:.
  • Layer 4 sheets of phyllo dough, brushing each layer with melted butter or oil.
  • To prepare cups for the chocolate mousse filling, sprinkle each layer with granulated sugar or confectioner's sugar after brushing with butter or oil.
  • Cut squares with scissors from the phyllo for various muffin pan sizes. (3-1/2 inch squares for mini cups; 5-1/2 inch for standard cups; 8-inch squares for jumbo cups).
  • Spray the muffin tins with vegetable spray.
  • Press the layered phyllo squares gently but firmly against the bottoms and sides of the muffin cups.
  • Bake the empty shells until they are crisp and golden about 7-10 minutes.
  • Remove them from oven and let them cool completely before filling.
  • The empty cups can also be frozen. Can be made and baked 2-3 days in advance and stored in airtight container.
  • Avoid filling them until just before serving. Moist contents will cause the phyllo to become soggy.

Very easy to put together. This is trifle, and not the same as the Tiramisu dish we all know. A high dish will give you three layers, in a low dish you will probably end up with two. The recipe I found in a magazine, the recipe there uses 2 cups of custard but I like to use three, it is really to taste. Here in the Netherlands we can buy the custard ready made in cartons (vanille vla) If that is not the case in your part of the world you will have to make the custard or use a vanilla instant pudding.

300 ml good strong coffee
6 fluid ounces amaretto liqueur
1 (500 g) container mascarpone cheese
2 -3 cups ready made custard
9 ounces sponge cake fingers
3 ounces dark chocolate (roughly chopped or grated coarsely) or 3 ounces milk chocolate, of a good quality (roughly chopped or grated coarsely)
3 -4 tablespoons toasted slivered almonds
2 tablespoons grated chocolate

Steps:

  • Mix the coffee and liqueur in a wide dish.
  • In another bowl mix the mascarpone with the custard until smooth using an electric hand mixer.
  • Take about a third of the sponge fingers and dip them in the coffee/liqueur mix and line the bottom of a glass dish with them, drizzle a bit more of the liquid over the sponge fingers.
  • Now sprinkle over a third of the chocolate followed with a layer of the Mascarpone/custard mix.
  • Repeat twice.
  • Chill for at least 2 hours or up to a day.
  • Just before serving sprinkle with the almonds and more chocolate.

1/2 cup hot water
2 (3 ounce) packages ladyfingers (about 25 ladyfingers)
1 (14 ounce) can sweetened condensed milk, divided
8 ounces mascarpone cheese, softened (or use one 8-ounce package softened cream cheese)
1 1/4 cups whipping cream (unwhipped)
1 1/2 teaspoons vanilla
1 cup mini chocolate chip, divided
1 cup whipping cream
2 tablespoons sugar
grated chocolate

Steps:

  • In a small bowl, dissolve the coffee granules in hot water; set aside about 1 tablespoon in a small cup.
  • Cut each ladyfinger crosswise into quarters.
  • Brush the remaining coffee mixture over the cut sides of the ladyfingers; set aside.
  • In a large bowl beat 3/4 cup condensed milk and the mascarpone or cream cheese (if using).
  • Add in 1-1/4 cups whipping cream, 1-1/2 teaspoons vanilla and the 1 tablespoon reserved coffee mixture; beat until soft peaks form.
  • Fold in 1/2 cup chocolate chips.
  • In a heavy saucepan over low heat, melt remaining 1/2 cup chocolate chips with the remaining condensed milk.
  • In 8 tall dessert glasses or parfait glasses, layer mascarpone mixture, chocolate mixture and the ladyfinger pieces, beginning and ending with the mascarpone mixture.
  • Cover and chill for a minimum of 4 hours.
  • Just before serving, in a medium bowl beat 1 cup whipping cream with 2 tablespoons sugar until soft peaks form.
  • To serve spoon/divide the whipped cream over the top of each dessert.
  • Grate chocolate over the whipped cream.

This heady, mood-elevating concoction is rich and deeply satisfying, yet remarkably light in texture. Yes, you can use regular cream cheese, but mascarpone is far superior.

2 eggs, separated
2 tablespoons white sugar

1 tablespoon cocoa powder
½ ounce dark chocolate, grated

Steps:

  • Stir espresso and 2 tablespoons Marsala wine together in a shallow bowl.
  • Whisk egg yolks, 2 tablespoons plus 1 teaspoon sugar, and 1 tablespoon Marsala wine together in the top of a double boiler over simmering water, until thick, pale yellow, and creamy, 5 to 6 minutes.
  • Whisk egg yolk mixture, mascarpone cheese, vanilla extract, and salt together in a bowl until completely smooth.
  • Beat egg whites in a glass or metal bowl until stiff peaks form. Lift your beater or whisk straight up: the egg whites will form sharp peaks. Gently stir and fold 1/2 the egg whites into egg yolk mixture; fold in remaining 1/2 egg whites.
  • Place 1 heaping spoonful mascarpone mixture into a single-serving cup or glass. Dip 2 ladyfinger cookie halves briefly in espresso mixture and turn 3 to 4 times to coat. Place cookie halves in the bottom of the glass on top of mascarpone.
  • Fill the glass halfway with mascarpone mixture. Dip 5 ladyfinger halves in the espresso mixture and place vertically along the inside of the glass, dipping and placing more ladyfinger halves as necessary to fit the glass. Place 2 dipped ladyfinger halves horizontally on top of the mascarpone mixture. Fill glass to the top with mascarpone mixture. Repeat for the second serving glass.
  • Wrap both glasses in plastic wrap and refrigerate for at least 8 hours or overnight. Remove plastic wrap and dust tops with cocoa powder and grated chocolate.

2 oz. BAKER'S Semi-Sweet Chocolate, melted
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

1/4 cup hot water
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/2 cup powdered sugar
2 tsp. unsweetened cocoa powder

Steps:

  • Stir 1/2 tsp. coffee into melted chocolate until dissolved. Add 3/4 cup COOL WHIP; stir until dissolved and smooth mixture forms. Spread mixture over half the ladyfingers; top with remaining ladyfingers. Add remaining coffee to water; stir until dissolved. Brush ladyfingers with coffee mixture; cut in half. Set aside.
  • Beat cream cheese with mixer until smooth. Add sugar; mix until blended. Gently stir in remaining COOL WHIP.
  • Place 3 ladyfinger halves on the bottom of each of 8 dessert cups; top each with 2 Tbsp. cream cheese mixture. Repeat layers. Refrigerate several hours or until chilled. Sift cocoa over top of dessert just before serving.

½ cup thickened cream, whipped
1½ tablespoons brandy
2 teaspoons vanilla extract
6 sponge fingers, halved lengthways, quartered
1 tablespoon cocoa powder
extra whipped cream, chocolate curls, cocoa powder, to serve

Steps:

  • In a shallow dish, combine hot water and coffee, stirring until coffee dissolves.
  • In a bowl, mix a quarter of the mascarpone with chocolate. Stir quickly until well combined. Blend remaining mascarpone through. Fold cream, brandy and vanilla through mascarpone mixture.
  • Dip biscuits pieces, one at a time, into coffee mixture. Arrange in the base of 6 serving cups or glasses. Top with mascarpone mixture, followed by a dollop of extra cream. Chill until ready to serve.
  • Serve tiramasu topped with chocolate curls and a dusting of cocoa.

  • * These can be made in advance. Leave the final cream and chocolate decoration until you are ready to serve.
  • You can either make one large tiramasu or you can serve them individualy in a glass or coffee cup.

These easy tiramisu cups are prepared in a muffin tin with chocolate and instant coffee and served with fresh halved strawberries.

1 pkg. (4 oz.) BAKER'S Semi-Sweet Chocolate
1 Tbsp. butter or margarine
24 vanilla wafers, divided
1 Tbsp. MAXWELL HOUSE Instant Coffee
2 Tbsp. hot water
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/4 cup sugar
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
6 strawberries, halved

Steps:

  • Microwave chocolate and butter in microwaveable bowl on HIGH 1-1/2 min., stirring after 1 min. Stir until chocolate is completely melted and mixture is well blended. Spoon into 12 foil cup-lined muffin cups; brush chocolate onto bottom and halfway up side of each cup. Place 1 wafer in each cup. Refrigerate until ready to use.
  • Dissolve coffee in hot water. Whisk cream cheese and sugar in medium bowl until blended. Gradually whisk in coffee mixture. Stir in COOL WHIP. Spoon half the cream cheese mixture into prepared cups; top with remaining wafers and cream cheese mixture.
  • Refrigerate 4 hours or until firm. Remove liners; top with strawberries.
