Grilled Monster Pork Chops with Tomatillo and Green Apple Sauce image

For pork chops
3 tablespoons ground coriander
3 tablespoons ground cumin
2 1/2 tablespoons kosher salt
1 1/2 tablespoons black pepper
3 tablespoons olive oil
4 (2-inch-thick) loin pork chops (each about 1 lb)
For tomatillo and green apple sauce
1/2 lb fresh tomatillos (about 5), husks discarded and tomatillos rinsed
2 Granny Smith apples
1/2 cup loosely packed fresh cilantro sprigs
1 garlic clove, minced
1 teaspoon ground cumin
1/4 cup apple juice
1 tablespoon fresh lime juice
1 tablespoon mild honey
1 teaspoon minced canned chipotle chiles in adobo
Special Equipment
a large chimney starter (if using charcoal); a 17- by 12 1/2- by 3 1/2-inch disposable aluminum roasting pan (if using charcoal); an instant-read thermometer

Steps:

  • Marinate chops:
  • Stir together coriander, cumin, salt, and pepper in a small bowl, then add oil and stir until combined well. Rub spice mixture all over chops. Let chops marinate while making sauce and preparing grill.
  • Make sauce:
  • Simmer tomatillos and 3 cups water in a 2 1/2- to 3-quart saucepan, uncovered, stirring occasionally, until tomatillos are just soft, 8 to 10 minutes. Drain and cool 15 minutes.
  • While tomatillos are cooling, core apples and cut into 1/4-inch dice. Purée tomatillos with remaining sauce ingredients except apples in a food processor. Transfer to a bowl and stir in apples.
  • To cook pork using a charcoal grill:
  • Open vents on bottom of grill. Light charcoal (80 to 100 briquettes) in chimney starter. Leaving about one quarter of grill free of charcoal, bank lit charcoal across rest of grill so that coals are about three times higher on opposite side.
  • Charcoal fire is medium-hot when you can hold your hand 5 inches above rack over area where coals are piled highest for 3 to 4 seconds. Sear pork on lightly oiled grill rack directly over hottest part of coals, uncovered, turning over once and, if necessary, moving around grill to avoid flare-ups, until well browned, 10 to 12 minutes total. Move pork to coolest part of grill, then cover with inverted roasting pan and grill, turning pork over once, until thermometer inserted diagonally into center of each chop (avoid bone) registers 150°F, 10 to 12 minutes total. Transfer pork to a cutting board and let stand, loosely covered with foil, 15 minutes (temperature will rise to 155°F).
  • To cook pork using a gas grill:
  • Preheat all burners on high, covered, 10 minutes. Sear pork on lightly oiled grill rack, covered with lid, turning over once, until well browned, 10 to 12 minutes total. Turn off 1 burner (middle burner if there are 3) and put pork above shut off burner. Reduce heat on remaining burner(s) to moderate and grill pork, covered with lid, until thermometer inserted diagonally into center (avoid bone) registers 150°F, 12 to 16 minutes. Transfer pork to a cutting board and let stand, loosely covered with foil, 15 minutes (temperature will rise to 155°F).
  • Serve pork:
  • Cut pork away from bone, then thinly slice and serve with sauce.

Simple recipe that doesn't need a lot of time to marinade. The pork chops turn out tender with a bit of sweetness from the brown sugar and apple juice. I grilled the meat, but it would work well on a skillet as well. Hope you like it.

1/4 cup soy sauce
1/4 cup apple juice
2 tablespoons brown sugar
1/2 teaspoon onion powder

Steps:

  • Combine ingredients in a plastic bag or bowl.
  • Marinade pork chops in refrigerator (anywhere from an hour to overnight).
  • Grill over direct medium heat for 10-12 minutes, turning once.
  • Serve with rice (if desired).

4 pork chops
3 large firm sweet apples, cored, peeled and sliced into 12 slices
2 tablespoons butter
2 tablespoons brown sugar
1/2 teaspoon cinnamon
1/4 cup apple juice
1/4 cup Licor 43 (vanilla liqueur)
1 teaspoon pure vanilla extract (or to taste)
salt and pepper

Steps:

  • Grill pork chops until barely done. Place on a platter in a warm oven.
  • Add butter, brown sugar and cinnamon to pan over medium heat. Stir to blend well and to allow to caramelize slightly.
  • Add apple juice, Licor 43 and apple slices. Cook apples just until done, then remove with a slotted spoon and set apples aside.
  • Reduce the pan juices to two to three tablespoons. Remove from heat and add vanilla, salt and pepper. Add apple slices and return to heat until the apples are hot. Pour over the pork chops. Serve with rice or potatoes.

This delicious grilled pork is an especially nice dish to do in the fall, when there's an abundance of fresh apples. Prep time doesn't include marinating time.

4 pork chops, 1 inch thick
1 cup apple juice
2 tablespoons lemon juice
1 teaspoon sage
2 tablespoons brown sugar
1 onion, minced
2 -3 firm apples (I use Granny Smith for this)
salt & freshly ground black pepper

Steps:

  • Place meat in a plastic bag.
  • In a small bowl, mix apple and lemon juices, sage, brown sugar and onion and stir until sugar is dissolved.
  • Pour over meat.
  • Close bag tightly and turn to coat chops well.
  • Place in a bowl and refrigerate several hours or overnight.
  • Remove chops from marinade and drain well.
  • Place marinade in a small saucepan, bring to a boil and continue to boil for one full minute.
  • Grill chops over hot coals for 20 minutes, turning and basting with marinade occasionally.
  • Core apples but do not peel.
  • Cut into thick rings.
  • Brush apples with marinade and place on grill around pork.
  • Continue grilling pork and apples until pork is done as desired and apples are tender, about 15 minutes.
  • Remove from grill and sprinkle lightly with salt and pepper.
