Steps:
- 1. Preheat oven to 375 degrees.
- 2. In a large mixing bowl, add ground chuck, sausage, onion, sweet pepper, half of the diced apples, ½ cup catsup, sea salt, pepper, chili pepper flakes, granulated garlic, Panko bread crumbs, and eggs. Using your hands, mix until combined, but do not over mix.

- 5. Carefully add cooled meatballs. Stir gently and continue to cook over low heat until meatballs are heated through. Place meatballs and sauce in crock pot on warm setting, or in other serving dish that can be kept warm. Serve with appetizer toothpicks on the side.Enjoy

TAILGATE 500 MEATBALLS
No, there aren't that many of them, though it is a big batch for a party-sized pit crew. With the Rolex 24, the Superbowl, and the Daytona 500 falling in the contest period we need some tailgating food! Fresh ginger and hot sauce rev it up while the corriander seed gives it that extra tenth of speed every team wants to find. But the kitchen crew chief won't be penalized for illegal flavor because the spicy-sweet, orange-teriyaki taste will fit the template perfectly.

Either hand roll meatballs using your favorite meatball recipe or purchase frozen prepared meatballs. If you use frozen, allow for more simmering time.

Steps:
- For Meatballs: Preheat oven to 400 degrees F. Spray a large baking sheet with non-stick cooking spray or cover your sheet with non-stick tinfoil. Mix ground turkey, egg, bread crumbs, black pepper, salt, thyme, oregano, dried basil, parsley, and red pepper flakes. Make into small meatballs and place on baking sheet. Bake in oven for 15-20 minutes, stirring once halfway, until cooked through. While meatballs are in the oven, put all the ingredients into the crockpot and mix well. Add the meatballs when cooked and stir to coat well. Either return pot to oven to reheat, use your crockpot (Warm setting) or place pot on outdoor grill to reheat. When fully cooked through and the meatballs have been soaking in the sauce, serve with toothpicks and small dinner rolls. Note: You can use frozen meatballs, Lil Smokies sausages or sliced smoked sausage instead of the homemade meatballs. Also, the recipe makes a lot of sauce, a good deal of which will be left over when the meatballs have been eaten. I've found that having a *lot* of sauce is of real benefit when making meatballs in the crockpot - the meat remains nice and moist.
PARTY MEATBALLS
You know that these will be a hit at your party, because they have the word "party" in the name. Millions of people in the 70s knew it wasn't a good time unless a chafing dish full of these meatballs was making an appearance. How many other dishes do you know that guarantee a good time?

Steps:
- For the meatballs: Preheat the oven to 425 degrees F. Line a sheet pan with aluminum foil, then place a wire rack over it.
- Grate the onion into a large bowl using a box grater. Add the ground beef and pork, tomato soup, panko, mustard powder, pepper, salt and minced garlic and knead together with your hands until thoroughly mixed. Use a tablespoon to help you make small meatballs, placing them close together but not touching on the prepared sheet pan. Bake until well browned, 15 to 20 minutes.
- For the sauce: Melt the butter a large saute pan over medium heat. Add the onion and cook until soft and translucent, 3 to 4 minutes. Stir in the flour until no raw bits are visible, then continue cooking for another minute. Whisk in the beef stock 1/2 cup at a time, allowing it to thicken between each addition, then whisk in the grape jelly until smooth. Cook until the sauce begins to bubble, then add the graham cracker crumbs, ketchup and vinegar. Reduce the heat to medium-low and continue cooking, stirring occasionally, until it thickens slightly, 3 to 5 minutes.
- Add the meatballs to the saute pan and gently toss to coat. Cook for another 3 minutes, then transfer to a chafing dish. Sprinkle with chopped parsley and serve warm.
