1 tablespoon water
1 pound walnut halves
1 cup white sugar
½ teaspoon ground cinnamon
¼ teaspoon salt

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Beat egg white and water together in a bowl using an electric mixer until frothy. Add walnuts to egg white mixture and stir until coated.
  • Mix sugar, cinnamon, and salt together in a bowl; add to walnuts and stir until coated. Spread coated walnuts onto a baking sheet.
  • Bake in the preheated oven, stirring every 15 minutes, until walnuts are fragrant and crisp, about 1 hour.

1 1/2 cups all-purpose flour, (spooned and leveled), plus more for pan

2 large eggs
1 cup packed light-brown sugar
3/4 cup fresh orange juice
Confectioners' sugar, for garnish
1 cup low-fat Greek yogurt
2 tablespoons confectioners' sugar

Steps:

  • Preheat oven to 375 degrees. Brush cake pan with oil, line bottom with parchment; oil and flour parchment and pan. Place walnuts in food processor and pulse until finely ground (be careful not to overprocess); set aside.
  • In a large bowl, whisk together orange zest, flour, baking powder, salt, and ground walnuts. Make a well in the center of flour mixture and stir in eggs, brown sugar, orange juice, and oil until just moistened; do not overmix.
  • Pour batter into prepared pan and bake until a toothpick inserted in the center of the cake comes out clean, 40 to 45 minutes. Let cool in pan 10 minutes; transfer to a cooling rack to cool completely.
  • In a small bowl, stir together yogurt and confectioners' sugar. Before serving, dust cake with confectioners' sugar. Serve with sweet yogurt garnished with orange zest, if desired.

2 cups walnuts, chopped large

2 heads butter lettuce, washed and dried
16 ounces mandarin orange segments, 2 cans
1/2 red onion, very thinly sliced
2 avocados, chopped
2 tomatoes, chopped large
1 cup asian-style dressing (such as miso dressing or ginger dressing)

Steps:

  • Preheat oven to 375 degrees F.
  • Line a large cookie sheet with foil and spray with nonstick spray. In a 10-inch skillet over medium heat, add 6 tablespoons sugar and mandarine orange juice. Bring to a simmer, and then add walnuts. Cook until sugar is absorbed and mixture starts to caramelize around walnuts, stirring constantly, about 2 minutes.
  • In a small bowl, mix cinnamon and remaining 3 tablespoons sugar. Toss walnuts in cinnamon-sugar. Place walnuts in single layer on prepared cookie sheet. Bake until walnuts appear crystallized and toasted, about 8 minutes. Set aside

  • Preheat oven to 350 degrees. Place walnuts in oven and bake for 5 to 10 minutes, stirring occasionally, until they become fragrant and begin to color. Turn oven off but leave nuts inside to keep warm. Place remaining ingredients in a small saucepan over medium-high heat and heat to 236 degrees (soft ball stage)without stirring but occasionally shaking pan gently. Pay attention to pot and thermometer so mixture doesn't burn. Add nuts turn off heat and stir until nuts are evenly coated. 1/2 c corn syrup
2 Tbsp butter
1 tsp orange extract or emulsion (i prefer emulsion)
4 c walnuts , halves(the fresher, the better)

Steps:

  • 1. Recipe for making in the microwave:
  • 2. Place sugar, corn syrup and butter in a microwave-safe dish and cook on high for approximately 30 seconds.
  • 3. Add walnut pieces.
  • 4. Cook on high, checking every 30 seconds until walnuts are amber in color.
  • 5. Remove from microwave. Stir in extract.
  • 6. Pour onto a cookie sheet and cool completely. Store in an airtight container in a cool place.

You can use a lot of oranges for this recipe: Minneolas, tangerines, navels. You can also use tangerines if you prefer - whatever looks best at the supermarket. This is fun because you candy the nuts and clean the caramel off the pan by using it to make a tasty dressing. The sweetness is so good with the walnuts and bitter greens. Use endive, chicory, escarole, radicchio or whatever other bitter greens are good. Want to be dairy-free? Simply omit the blue cheese.

Kosher salt or flaky sea salt
Freshly ground black pepper
Nonstick cooking spray
1/3 cup sugar
2 tablespoons red wine vinegar
2 large oranges, 1 juiced (about 1/4 cup) and 1 peeled and supremed
2 tablespoons Dijon mustard
1 to 2 tablespoons extra-virgin olive oil
2 large yellow endives, leaves separated
1 small head radicchio, leaves separated
3/4 cup blue cheese crumbles
10 to 12 sprigs flat-leaf parsley, stemmed

Steps:

  • Preheat the oven to 350 degrees F.
  • Arrange the walnuts on a single layer on a rimmed baking sheet and place in the center of the oven. Toast until the nuts are golden brown, really toasted, 5 to 8 minutes. Sprinkle with salt and pepper and set aside.
  • Spray a parchment paper-lined baking sheet with nonstick spray. In a large saute pan, heat the sugar over medium heat until it melts and turns a light amber color, 5 to 8 minutes. Sprinkle the walnuts in a single layer over the caramel. Spray a rubber spatula with nonstick spray and stir the nuts, quickly but carefully, to coat with the caramel. Transfer the nuts from the pan onto the prepared baking sheet, sprinkling the nuts so they separate as they land on the parchment. Season with salt.
  • To the pan with the residual caramel, add the vinegar and orange juice. Warm the pan, whisking until the caramel, vinegar and orange juice are well combined. Remove from the heat. Whisk in the mustard and oil. Adjust the seasoning.
  • Arrange the endive and radicchio leaves in a single layer on a family-style large platter. Intersperse the orange segments and walnuts with the endive and radicchio. Season with salt to taste. Drizzle with all of the dressing. Top with the blue cheese and parsley. Serve immediately.

  • Sugared Walnuts: In a deep saucepan, combine the sugar, water, orange zest and cinnamon and bring to a boil. Add the walnuts and simmer, stirring, as the water evaporates. The glaze will be shiny and transparent at first, then turn opaque as the water cooks away. When the nuts are completely coated with sugar crystals, they are done. Spread them out on a sheet pan to cool. (To wash the saucepan, soak it overnight.) The walnuts can be made up to 2 weeks in advance and stored in an airtight container.
  • Sundae Cups: Spread the toasted walnuts out on a plate. Dip the rims of 6 coffee cups or mugs into the melted chocolate, then into the chopped walnuts. Turn them right side up and set aside. Dip 6 teaspoons in the chocolate and sprinkle with chopped walnuts. Let the cups and spoons cool at room temperature until set, about 2 hours. The cups can be made up to 2 days in advance.
  • To assemble sundae, scoop ice cream into each chocolate-dipped coffee cup and pour espresso over it. Top with a dollop of whipped cream and sugared walnuts. Place the cup on the saucer and rest a chocolate-dipped spoon alongside.
