½ cup evaporated milk
1 teaspoon white sugar
½ teaspoon salt
½ cup water
1 egg
1 cup sifted all-purpose flour
½ cup confectioners' sugar for dusting

Steps:

  • Heat oil in deep-fryer or heavy deep skillet to 375 degrees F (190 degrees C).
  • In a medium bowl, whisk together the evaporated milk, sugar, salt, water and egg. Gradually mix in the flour.
  • Dip a rosette iron into the batter, then into the hot oil. Fry until golden, and drain on paper towels. Dust with confectioners' sugar before completely cool.

1tbsp olive oil
½ small onion, chopped
½ leek, washed and chopped
1 clove garlic, crushed
30g fresh white breadcrumbs
35g pine nuts, whizzed in a blender until ground
finely grated zest and juice of ½ lemon
½tbsp each chopped fresh sage and thyme
½tbsp egg yolk
sage leaves to garnish

Steps:

  • Heat the oven to 180C. Heat oil in a large pan, add the onion and leek and cook gently for 8 mins, stirring until softened. Add the garlic and cook for a couple of mins. Cool, then tip into a large bowl.
  • Add the breadcrumbs, pine nuts, lemon zest and juice,sage and thyme and season with salt and ground black pepper. Add egg yolk and mix together.
  • Place eight 5cm rings on a parchment lined tray and spoon in the pine-nut mixture. Top each timbale with a sage leaf and cook for 15-20 minutes, until golden.

For timbales
1/2 pound mild soft goat cheese
1/2 stick (1/4 cup) unsalted butter, softened
4 large eggs
4 large egg whites
2 tablespoons freshly grated parmesan
2 teaspoons chopped fresh thyme
For salad
1 tablespoon fresh lemon juice
1 tablespoon finely chopped shallot
3 tablespoons extra-virgin olive oil
3 ounces mesclun (6 cups)
Special Equipment
6 (5-ounce) ramekins

Steps:

  • Make timbales:
  • Preheat oven to 350°F. Lightly oil ramekins and line bottoms with rounds of wax paper. oil paper.
  • Blend goat cheese and butter in a food processor until smooth. Add remaining timbale ingredients and salt and pepper to taste, then blend well. Pour into ramekins, filling them about three-quarters full.
  • Bake timbales in a water bath in middle of oven until pale golden and slightly puffed and a knife inserted in centers comes out clean, 25 to 30 minutes. Transfer ramekins to a rack and cool 10 minutes.
  • Prepare salad:
  • Whisk together lemon juice and shallot in a large bowl, then let stand 10 minutes. Add oil in a slow stream, whisking until well blended. Season with salt and pepper, then toss with mesclun. Divide salad among individual plates.
  • Run a knife around edge of each timbale to loosen, then invert each onto a salad. Remove paper from timbales and serve.

AUBERGINE TIMBALES WITH GOAT'S CHEESE

olive oil , for frying
2large aubergines , thinly sliced
1 red pepper , deseeded and finely chopped
1large courgette , yellow or green (or 1 small one of each colour), ends trimmed and finely chopped
6 shallots , halved and thinly sliced
2fat garlic cloves , chopped
2 tbsp balsamic vinegar
6large vine-ripened tomatoes , quartered
2 tbsp stoned black olive
1 tbsp caper
25g bunch basil , leaves only, shredded
80g vegetarian parmesan-style cheese , 25g grated, the rest in shavings
300g goat's cheese log (chèvre), sliced into 12
200g baby leaf spinach
6tbsp vinaigrette
50g pine nut , toasted

Steps:

  • Put oil in a large frying pan to cover the base, and heat. Fry the aubergine until softened, 2-3 mins . Season, then drain on paper towel. You may have to do this in batches.
  • For the filling, add 2-3 tbsp oil to the pan and fry the pepper, courgette, shallots and garlic over a high heat until they have a good colour, 3-5 mins. Stir in the balsamic vinegar and cook until evaporated. Add the tomatoes and season, then cook for 3 more mins stirring occasionally until the mixture is softened, but not too saucy. Remove from the heat, then mix in the olives, capers, half the shredded basil and the grated parmesan. Set aside to cool.
  • Grease the moulds and line the bases with aubergine slices to fit. Top with veg mixture, more aubergine slices (cut to fit if needed) and a slices of cheese. Repeat the layers, finishing with aubergine. Press lightly to firm. Can be covered with cling film and chilled for up to 1 day.
  • To cook and serve: heat oven to 200C/fan 180C/gas 6. Chilled cups will need to come to room temperature first. Place the cups on a tray, uncovered, and bake for 12-15 mins until bubbling. Allow to stand for 10 mins while you toss the spinach and remaining basil with vinaigrette and seasoning and divide between six dinner plates. Scatter over the nuts.
  • Loosen the tops of the timbales with a table knife and up-end into the centre of the salad on the plates, shaking the cups to help demould. Top with the parmesan shavings and serve.

1 small onion, minced
1 tablespoon olive oil

a rounded 1/4 teaspoon turmeric
1 cup chicken broth
2/3 cup water
1/3 cup dried currants or raisins
1/4 cup chopped drained canned tomatoes
1/2 teaspoon salt
3 tablespoons finely chopped fresh parsley leaves

Steps:

  • In a fine sieve rinsed the quinoa under cold water for 1 minute and drain it well. In a heavy saucepan cook the onion in the oil over moderately low heat, stirring, until it is softened, add the cumin, the cinnamon, and the turmeric, and cook the mixture, stirring, for 30 seconds. Add the quinoa and cook the mixture, stirring, for 1 minute. Add the broth, the water, the currants, the tomatoes, and the salt and simmer the mixture, covered, for 15 minutes, or until the liquid is absorbed. Remove the pan from the heat, let the mixture stand, covered, for 5 minutes, and stir in the parsley. Divide the quinoa mixture among 6 buttered 1/2-cup timbale molds, packing it, and invert the timbales onto a platter.
