SKILLET TILAPIA WITH CREAMY LEMON SAUCE
This Skillet Tilapia with creamy lemon sauce tastes like summertime. The fresh garlic, herbs and tender flaky fish makes this the best tilapia recipe ever!

Steps:
- Set a skillet over medium heat; heat up oil and 1 tablespoon butter.
- Season fish with salt and pepper and add to skillet; cook for 3 minutes per side.
- Remove fish from skillet and set aside.
- Add 1 tablespoon butter to the same skillet and melt over medium-high heat.
- Stir in garlic and cook for 20 seconds.
- Slowly whisk in chicken broth and cook for 4 minutes, or until reduced by 1/3.
- Reduce heat to medium-low and add remaining butter.
- Slowly whisk in heavy cream.
- Add lemon juice and whisk until everything is well combined. Make sure to whisk continually so that the heavy cream doesn't curdle.
- Season with salt and pepper; taste the sauce and adjust accordingly.
- Remove from heat.
- Pour sauce over fish, or add fish back into the skillet; garnish with parsley, and serve.

HUDSON'S BAKED TILAPIA WITH DILL SAUCE

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- Season the tilapia fillets with salt, pepper and Cajun seasoning on both sides. Arrange the seasoned fillets in a single layer in the baking dish. Place a layer of lemon slices over the fish fillets. I usually use about 2 slices on each piece so that it covers most of the surface of the fish.
- Bake uncovered for 15 to 20 minutes in the preheated oven, or until fish flakes easily with a fork.
- While the fish is baking, mix together the mayonnaise, sour cream, garlic powder, lemon juice and dill in a small bowl. Serve with tilapia.

GRILLED TILAPIA WITH LEMON BUTTER, CAPERS AND ORZO

- Combine the lemon zest, juice, wine and shallot in a small saucepan over high heat and cook until reduced by half. Remove from the heat and let cool. Whisk together the cream, butter and wine mixture in a small bowl and season with salt and pepper. Cover and refrigerate for 30 minutes. The lemon butter can be made 1 day in advance and refrigerated. Bring to room temperature before serving.
- Heat the grill to high.
- Brush the fish on both sides with the oil and season with salt and pepper. Grill the fish for 3 to 4 minutes per side or until lightly golden brown and slightly charred. Toss the orzo with a few tablespoons of the lemon butter and 2 tablespoons of the parsley and season with salt and pepper. Transfer the orzo to a platter. Remove from the grill and immediately place the fillets on the orzo and top each fillet with some of the lemon butter and capers. Garnish with the remaining parsley.

- Grate zest and squeeze juice from one lemon half. Cut the remaining lemon half into four wedges and set aside. In a small bowl, stir the sour cream well with the mayonnaise, dill, chives, capers, and lemon zest and juice. Reserve. Cut the fish into 4 portions (if necessary). Season evenly with salt and pepper. Lightly coat each piece of fish with flour, shaking off excess. Heat canola oil in a large non-stick skillet set over medium-high heat. Pan-fry fish for about 2 minutes per side or until it is golden and flakes easily with a fork. Serve each piece of fish with a dollop of the sour cream mixture and a lemon wedge, accompanied by a salad of arugula and tomatoes drizzled with a thin stream of olive oil.

I got this from one of those recipe cards at the grocery store. It uses italian dressing and some cream cheese. I included the fat free ingredients but you could easily use the regular versions. You could also sub in any white fish fillet for the tilapia.

- Preheat oven to 400 degrees. Thaw fish in ziploc bag in cold water. Pat dry with paper towel once thawed. Grease casserole dish. Wash and slice onion, celery and leek. Saute in olive oil until leek is tender. Mix cream, lemon juice and dill and set aside. Mix up breadcrumbs, Parmesan and melted margarine mixture and set aside. ============================== Place sauteed veggies in bottom of greased casserole dish. Place fish on top.
