1 tablespoons olive oil
1 tablespoon butter
4 fillets tilapia, (skinless)
salt, (to taste)
pepper, (to taste)
chopped fresh parsley, (for garnish)
2 tablespoons butter, (divided)
3 cloves garlic, (minced)
½ cup low sodium chicken broth, ((or dry white wine))
¼ cup heavy cream
2 tablespoons fresh lemon juice
salt, (to taste)
pepper, (to taste)

Steps:

  • Set a skillet over medium heat; heat up oil and 1 tablespoon butter.
  • Season fish with salt and pepper and add to skillet; cook for 3 minutes per side.
  • Remove fish from skillet and set aside.
  • Add 1 tablespoon butter to the same skillet and melt over medium-high heat.
  • Stir in garlic and cook for 20 seconds.
  • Slowly whisk in chicken broth and cook for 4 minutes, or until reduced by 1/3.
  • Reduce heat to medium-low and add remaining butter.
  • Slowly whisk in heavy cream.
  • Add lemon juice and whisk until everything is well combined. Make sure to whisk continually so that the heavy cream doesn't curdle.
  • Season with salt and pepper; taste the sauce and adjust accordingly.
  • Remove from heat.
  • Pour sauce over fish, or add fish back into the skillet; garnish with parsley, and serve.

salt and pepper to taste
1 tablespoon Cajun seasoning, or to taste
1 lemon, thinly sliced
¼ cup mayonnaise
½ cup sour cream
⅛ teaspoon garlic powder
1 teaspoon fresh lemon juice
2 tablespoons chopped fresh dill

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.

1 lemon, finely zested
2 lemons, juiced
1/2 cup dry white wine
1 shallot, thinly sliced
Splash heavy cream
1 stick unsalted butter, cut into cubes, at room temperature
Salt and freshly ground black pepper
4 (8-ounce) tilapia fillets
3 tablespoons olive oil
1/2 pound orzo, cooked al dente
1/4 cup chopped fresh flat-leaf parsley leaves
1/4 cup drained capers

Steps:

  • Combine the lemon zest, juice, wine and shallot in a small saucepan over high heat and cook until reduced by half. Remove from the heat and let cool. Whisk together the cream, butter and wine mixture in a small bowl and season with salt and pepper. Cover and refrigerate for 30 minutes. The lemon butter can be made 1 day in advance and refrigerated. Bring to room temperature before serving.
  • Heat the grill to high.
  • Brush the fish on both sides with the oil and season with salt and pepper. Grill the fish for 3 to 4 minutes per side or until lightly golden brown and slightly charred. Toss the orzo with a few tablespoons of the lemon butter and 2 tablespoons of the parsley and season with salt and pepper. Transfer the orzo to a platter. Remove from the grill and immediately place the fillets on the orzo and top each fillet with some of the lemon butter and capers. Garnish with the remaining parsley.

60 mL (1/4 cup) sour cream
30 mL (2 tbsp.) mayonnaise
15 mL (1 tbsp.) chopped fresh dill
15 mL (1 tbsp.) finely chopped fresh chives
5 mL (1 tsp.) capers, drained and chopped
450 g (1 lb.) tilapia
To taste, salt and pepper
30 mL (2 tbsp.) flour
15 mL (1 tbsp.) canola oil
Arugula
Basmati rice
Cherry tomatoes, sliced

Steps:

  • Grate zest and squeeze juice from one lemon half. Cut the remaining lemon half into four wedges and set aside. In a small bowl, stir the sour cream well with the mayonnaise, dill, chives, capers, and lemon zest and juice. Reserve. Cut the fish into 4 portions (if necessary). Season evenly with salt and pepper. Lightly coat each piece of fish with flour, shaking off excess. Heat canola oil in a large non-stick skillet set over medium-high heat. Pan-fry fish for about 2 minutes per side or until it is golden and flakes easily with a fork. Serve each piece of fish with a dollop of the sour cream mixture and a lemon wedge, accompanied by a salad of arugula and tomatoes drizzled with a thin stream of olive oil.

6 tilapia filets
1 large onion, chopped
1 large stalk celery, chopped
1 large leek, white part only, sliced and well cleaned
Olive oil
1/2 cup heavy cream ( I use half and half - it's rich enough)
Scant 1/4 cup lemon juice
1/4 cup fresh dill OR 1 Tbsp dried dill
2 slices bread processed into crumbs
4 Tbsp melted margarine
4 Tbsp grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees. Thaw fish in ziploc bag in cold water. Pat dry with paper towel once thawed. Grease casserole dish. Wash and slice onion, celery and leek. Saute in olive oil until leek is tender. Mix cream, lemon juice and dill and set aside. Mix up breadcrumbs, Parmesan and melted margarine mixture and set aside. ============================== Place sauteed veggies in bottom of greased casserole dish. Place fish on top. Salt and pepper to taste. Pour cream sauce over top of fish. Sprinkle on breadcrumb mixture. Bake covered for 15 minutes at 400*. Reduce oven to 300*, uncover dish and bake for further 5 minutes to brown top. Serve with rice and carrots.
