BAKED PITA CHIPS WITH CHARRED THREE ONION DIP
To me, there's nothing that says party like potato chips and dip. Take the typical chips and dip to a new level with smoky baked pita chips and my charred three onion dip. Better make a double batch!

Steps:
- Preheat the oven to 400 degrees F.
- Combine the olive oil, 1/2 tablespoon salt, smoked paprika, garlic powder and pepper in a small bowl. Whisk together. Brush the seasoned oil on the first pita, stack another pita on top and repeat until you have 3 pitas. Repeat, making a second stack.
- Use a knife to cut the stack into 8 wedges. Repeat with the second stack. Arrange the chips in a single layer on a baking sheet. Bake for 10 minutes. Flip and bake until golden and toasted, another 2 to 3 minutes. Sprinkle the chips with the remaining 1/2 tablespoon salt as soon as you remove them from the oven. Serve with the Charred Three Onion Dip.
- Slice the onion into 4 wedges. Heat a grill pan over medium-high heat. Brush the scallions and onions with olive oil. Grill until they are softened and the outside is charred, about 5 minutes for the scallions and 10 minutes for the onions. Chop the scallions and slice the onions very thin. Put in a bowl. Add the sour cream, mascarpone, Worcestershire, lemon juice, salt, pepper, chives and hot sauce and mix together. Chill for at least 30 minutes before serving.
THREE ONION DIP
I've forgotten which magazine I found this recipe in, but the dip is a step above the usual onion dip. The original recipe also called for 2 teaspoons of sherry vinegar. I thought that made the dip a little too tart for my tastes so it is not included in this recipe.

- Melt butter in large skillet.
- Add onions, leeks and garlic.
- Saute until caramelized.
- Let cool.
- Mix all ingredients together in bowl.
- Serve at room temperature with crackers or breadsticks.

BAKED CARAMELIZED ONION TRIPLE CHEESE DIP
Steps:
- Preheat the oven to 425 degrees F.
- Heat the butter in a small cast-iron skillet over medium-high heat. Add the onion and cook, stirring occasionally, until softened and starting to brown, about 8 minutes. Add the garlic and cook, stirring, for 30 seconds. Top the onion mixture with the cheeses. Add the milk and stir everything to combine.
- Place the skillet inside a roasting pan or baking dish and fill the pan with enough hot water to come halfway up the sides of the skillet. Transfer to the oven and bake until the cheese is melted and gooey, 20 to 25 minutes. Sprinkle with chives and serve immediately with crackers.
3 INGREDIENT EASY ONION DIP
My mother's simple onion dip. Adjust the green onion according to onion strength and taste. It's wonderful with potato chips.

- In a food processor or blender add the cream cheese,1 tablespoon of water, and 1 green onion (less if the onion is really strong). Blend well. Add more water to desired texture. Add more onion if needed to desired taste. Serve or chill until serving. :).

THREE ONION PANADE
This is like a really thick french onion soup that bakes in one big casserole dish in the oven. Make sure to choose a dense chewy bread and a wide casserole dish.

Steps:
- Melt 4 tbsp butter in a large heavy pot over medium low heat. Add the onions, leeks, shallots and a couple pinches of salt. Stir, and then cover pot and cook for 1 hour, stirring a few times. Onions will reduce by half and be very limp.
- Take lid off pot, add in sugar and crank pot up to high heat. Cook, stirring frequently, for about 15 minutes. The juices will brown and stick to the sides of the pot. Use a wooden spoon to scrape browned bits back into the onions, making sure to scrape the bottom of the pot as well. Once the onions have turned creamy and light brown in color turn the heat off and cover the pot.
- Heat oven to 350.
- Spread the cubed bread onto a baking sheet and bake until lightly toasted, about 15 minutes.
- Bring the stock to a boil. Add the bread to the onions and stir. Scrape bread and onion mixture into a wide casserole. Use the stock to rinse out the onion pot and then pour the stock into the casserole dish. Let rest for 5 minutes. The bread will have absorbed some of the stock, but there should still be enough to barely cover the bread. If not, add in some hot water.
- Spread the cheese over the top and sprinkle with brandy. Dot with the remaining butter. Bake in oven for 1 hour, or until cheese has formed a rich, dark crust.
- Spoon into bowls and serve hot.
THREE ONION CASSEROLE
From the Silver Palate Good Times Cookbook, this dish is a wonderfully rich and fragrant side dish for a festive meal. It is wonderful as an accompaniment to a roast of beef or poultry.

Steps:
- Preheat oven to 350°F
- Butter an 8 cup baking dish with 1 tablespoon of butter.
- Make a layer in the baking dish, using a third each of the yellow onions, red onions and leeks.
- Sprinkle the layer sparingly with salt and pepper and top with the Havarti.
- Make another layer of the onions and leeks. Add a little more pepper.
- Top this layer with the Boursin.
- Layer the remaining onions and leeks and top with the Gruyere.
- Dot the top with the remaining 2
- tablespoons butter.
- Pour the wine over all.
- Bake for 1 hour.
- Cover the top with aluminum foil,
- if it gets too brown.
- Serve immediately.
