THREE-MEAT SPAGHETTI SAUCE

Three-Meat Spaghetti Sauce image

"I simmer this hearty sauce in large batches, freeze it and use it for spaghetti, lasagna, mostaccioli and pizza," writes Ellen Stringer of Fairmont, West Virginia. "I adapted the original recipe until I came up with the perfect sauce. I've received many compliments from friends and family. I simmer it in a large electric roaster instead of on the stovetop," she says.

THREE MEAT CANNELLONI BAKE

Three Meat Cannelloni Bake image

This dish is best made with fresh noodles. You can substitute one pound of cannelloni pasta cooked according to package directions, then proceed as directed.

Provided by MARBALET

Categories     Meat and Poultry Recipes     Pork     Ground Pork Recipes

Time 1h40m

Yield 6

Number Of Ingredients 25

1 cup minced onion
½ cup minced celery
⅓ cup minced carrot
2 tablespoons olive oil
2 cloves garlic, minced
12 ounces ground veal
12 ounces ground pork
12 ounces lean ground beef
½ cup white wine
1 cup beef broth
2 teaspoons chopped fresh rosemary
1 teaspoon Italian seasoning
1 bay leaf
salt to taste
ground black pepper to taste
2 egg yolks
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
¼ teaspoon freshly ground nutmeg
¾ cup grated Parmesan cheese
¼ cup chopped parsley
4 cups tomato sauce
½ cup heavy whipping cream
1 pound fresh pasta sheets

Steps:

  • Heat the olive oil in a deep skillet. Add onion, celery, and carrot, and cook over moderate heat until softened. Add the garlic, and cook 1 minute. Add veal, pork, and beef. Cook, stirring occasionally, until meat is no longer pink. Add wine, and reduce for 1 minute. Stir in broth. Add herbs, bay leaf, and salt and pepper. Bring the mixture to a boil. Reduce heat, cover, and simmer for 15 minutes. Uncover, and reduce until almost dry. Discard bay leaf. Set aside to cool.
  • Meanwhile, melt the butter or margarine in a saucepan set over moderately low heat. Whisk in flour for approximately 2 minutes. Whisk in milk, grated nutmeg, and salt and pepper. Simmer, stirring occasionally, for 5 minutes or until thickened. Stir in parsley and 1/2 cup Parmesan cheese.
  • Transfer the cooled meat mixture to a large bowl. Mix in egg yolks. Mix in the cheese and parsley sauce. Set aside.
  • Combine the tomato sauce and cream, set aside.
  • Cut the pasta sheets crosswise into 5 inch lengths. In a pot of boiling salted water, cook the noodles a few at a time until al dente. This should take only a minute or two with fresh pasta. Transfer to a bowl of cold water. Spread the noodles in one layer on paper towels to drain.
  • Spoon 1/4 cup of the filling down the center of one noodle, and roll the noodle to enclose the filing. Transfer the cannelloni, seam side down, to a well buttered gratin dish. Repeat with the remaining noodles and filling, arranging in single layer. Ladle the tomato sauce over the cannelloni, and sprinkle with the remaining Parmesan cheese.
  • Bake at 400 degrees F (205 degrees C) for 10 minutes, or until bubbling. Run under the broiler about 4 inches from the heat for 2 minutes, or until golden.

3 MEAT 3 CHEESE LASAGNA

3 Meat 3 Cheese Lasagna image

I have tried different combinations of meat, cheese and sauce, and this is the one my husband and I both love the most. Any other lasagna just doesn't compare. Occasionally I have had to use just ground beef, or just mozzarella, depending on what I had, but they just don't turn out as yummy as this combination.

Provided by thumbelina80

Categories     < 60 Mins

Time 1h

Yield 6 serving(s)

Number Of Ingredients 5

1 lb ground meat (I use the mix of beef, pork, and veal)
2 (680 ml) cans pasta sauce (I use Primo, one can of garlic and herb, one can of romano cheese and basil)
1 (380 g) package of kraft mozza-cheddar grated cheese
grated parmesan cheese, to preference
12 lasagna noodles (I use PC Blue Menu, whole wheat noodles)

Steps:

  • Brown the meat, and drain.
  • Add both cans of sauce to the meat mixture, and heat on low, covered, making sure to stir every few minutes.
  • While the sauce is heating, boil the noodles according to package directions, and preheat the oven to 350 degrees.
  • When the noodles are ready, drain them and run cold water over them so that they are not too hot to touch.
  • Put a little bit of the meat sauce on the bottom of a 9 x 13 baking dish.
  • Do 2 layers of: 4 noodles, meat sauce, parmesan cheese, mozza-cheddar cheese.
  • Final layer is 4 noodles, meat sauce, and parmesan cheese (mozza-cheddar layer gets added later, so it won't burn).
  • Bake in oven for 20-25 minutes.
  • Take out of the oven and put a final layer of mozza-cheddar cheese on top; bake another 10 minutes or until cheese is bubbly and just starting to brown, don't let it get overdone.
  • Let sit for 10 minutes before cutting.

MEAT SAUCE AND SPAGHETTI

Meat Sauce and Spaghetti image

Provided by Alton Brown

Categories     main-dish

Time 5h45m

Yield 6 to 8 servings

Number Of Ingredients 27

6 ounces thick sliced bacon, cut into 1-inch pieces
2 large onions, finely chopped
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 whole cloves
1 whole star anise pod
3 stalks celery, finely chopped
5 cloves garlic, 3 minced and 2 sliced
3 tablespoons olive oil, divided
8 ounces coarsely ground beef chuck
8 ounces coarsely ground pork butt
1 1/4 cups white wine, divided
3/4 cup evaporated milk
3 cups beef broth
1-ounce dried porcini mushrooms, finely chopped
2 (28-ounce) cans diced tomatoes
1 tablespoon dried oregano
2 teaspoons dried basil
2 teaspoons dried marjoram
2 tablespoons tomato paste
1 tablespoon ketchup
1 tablespoon sherry vinegar
1 teaspoon Worcestershire sauce
1/3 cup finely grated Parmesan
1 gallon water
2 tablespoons kosher salt
1/2 pound dry spaghetti

Steps:

  • For the meat sauce:
  • Place an 8-quart Dutch oven over low heat and add the bacon. Cook slowly until the bacon is crispy and has rendered its fat, 25 to 30 minutes. Remove the bacon from the pan for another use. Add the onion, salt, and pepper and stir to combine. Place the clove and star anise into a small spice bag, add to the Dutch oven and stir to combine. Cook, uncovered, over low heat, stirring occasionally, until the onions caramelize, 45 to 60 minutes. Add the celery and the 3 cloves of minced garlic to the pan and continue to cook over low heat until the celery is semi-translucent, approximately 30 minutes. Remove the spice bag from the pot.
  • Meanwhile, place a wide 4-quart saute pan, over high heat. Add 1 tablespoon of the olive oil and once it shimmers, add the beef chuck and the pork butt and cook, stirring frequently, until the meat is well browned, 4 to 5 minutes. Transfer the meat to a colander to drain. Return the pan to high heat, add 1/2 cup of the wine and deglaze the pan, scraping up any browned bits from the bottom of the pot. Transfer these bits and any remaining wine to the Dutch oven along with the meat.
  • Add another 1/2 cup of the wine, evaporated milk, beef broth, and mushrooms to the Dutch oven and stir to combine. Cover and cook over low heat, stirring occasionally, for 3 hours.
  • Once the sauce has been cooking for 1 1/2 hours, place the 4-quart saute pan over medium heat and add 1 tablespoon of olive oil. Once it shimmers, add the 2 cloves of sliced garlic and cook for 30 to 45 seconds or until fragrant. Do not allow the garlic to brown. Add the tomatoes, oregano, basil, and marjoram and cook until most of the liquid has evaporated, approximately 30 minutes. Add the remaining 1/4 cup wine, tomato paste, ketchup, vinegar, and Worcestershire sauce and stir to combine. Decrease the heat to low and simmer for 30 minutes. Increase the heat to medium high; add the remaining 1 tablespoon of olive oil, and cook, stirring constantly, for 2 to 3 minutes.
  • Transfer the tomato mixture to the meat mixture and stir to combine. Simmer the sauce, uncovered, over low heat, stirring occasionally, while preparing the pasta.
  • For the pasta:
  • Bring the water and salt to a boil over high heat. Carefully add the pasta, stirring quickly to separate. Cover and return to a boil, being careful that the water does not boil over. Once boiling again, uncover and continue to cook until slightly less than al dente, 5 to 6 minutes. Drain in a colander.
  • Add the pasta to the meat sauce and cook, over low heat, for another 2 to 3 minutes or until the pasta is al dente. Add the Parmesan cheese and toss to combine. Transfer pasta and sauce to a serving bowl or individual bowls and serve.

THREE MEAT LASAGNA

Three Meat Lasagna image

This is just a variation of my own lasagna recipe. I say variation because I make it differently every time depending on what I have on hand and my mood. This is the first time I've written my lasagna recipe down. Although I have made literally thousands of pans of lasagna throughout my years (I worked as a cook), I find this one perfectly acceptable (and I consider myself a lasagna snob). So you should certainly enjoy this, if not make it the only lasagna recipe you make from now on.

BEST EVER SPAGHETTI AND MEAT SAUCE

Best Ever Spaghetti and Meat Sauce image

This Best Ever Spaghetti and Meat Sauce recipe is the perfect Italian-style weeknight family meal - a rich, meaty sauce served over your favourite pasta!

Provided by Chrissie (thebusybaker.ca)

Categories     Dinner     Main Course

Time 45m

Number Of Ingredients 12

2 pounds lean ground beef
1 large onion, finely diced
3 cloves garlic, minced
salt and pepper
2 teaspoons dried parsley
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1 cup red wine
9 cups canned crushed tomatoes (plain pureed tomato sauce, no salt or flavour added)
chopped fresh parsley and parmesan cheese, for garnish
spaghetti noodles, cooked according to package directions (I recommend Barilla brand - they're our family's favourite!)

Steps:

  • Heat a large dutch oven pot over medium high heat.
  • Add the ground beef and cook until almost completely browned, breaking it up with a wooden spoon.
  • Turn the heat to medium and add the onions, garlic, salt and pepper (to taste), parsley, basil, oregano and thyme. Saute with the beef until the onions are soft and translucent.
  • Add the wine and allow the liquid to evaporate while stirring the mixture regularly so the meat absorbs the flavour of the wine.
  • When the wine has almost evaporated, add the crushed tomatoes and stir to combine.
  • Cover and let simmer on medium-low heat for at least 30 minutes, or up to 2 hours (turn the heat to low if you plan to simmer for a long time). Stir regularly to ensure the sauce cooks evenly.
  • Prepare the pasta according to the package directions, cooking it in salted water for best results.
  • Serve the sauce over the pasta with a sprinkling of fresh parsley (if desired) and freshly grated parmesan cheese.

RACHAEL'S THREE-MEAT BOLOGNESE SAUCE

Rachael's Three-Meat Bolognese Sauce image

This recipe originally appeared on the Rachael Ray Show. For more recipes and videos from the show visit RachaelRayShow.com.

Provided by rachael-ray

Number Of Ingredients 1

About 2 tablespoons extra-virgin olive oil (EVOO)About 2 tablespoons butter for sauce, plus a few pats to toss with pasta1 onion, finely chopped1 rib celery with leafy tops, finely chopped1 carrot, finely chopped or grated2 fat cloves garlic, chopped1 pound ground beef½ pound ground veal½ pound ground porkSalt and finely ground black pepper1 bay leafHerb bundle of parsley, sage, thyme, a few stems of each, tied1 cup whole milkFreshly grated nutmeg, about ⅛ teaspoon1 cup white wineOne 15-ounce can crushed Italian tomatoes, 2 cups2 cups chicken stock2 cups beef stockA chunk of rind of Parmigiano-Reggiano cheese, plus 1 cup and more at table to serve1 pound pasta spaghetti, chitarra (square, guitar-string spaghetti) or bucatini, about 500 grams

Steps:

  • In a Dutch oven, heat EVOO, 2 turns of the pot, over medium to medium-high heat, add butter to oil and when it foams, add onion, celery, and carrot, and cook, partially covered, 5-7 minutes to soften. Add garlic, stir, add ground meats and season with salt and finely ground black pepper. Break up the ground meats until they lose their pink color, then add bay, herbs, milk, season with a little freshly grated nutmeg and reduce heat to low simmer. Let milk absorb into meat completely, then add wine and let it absorb completely. Stir tomatoes into sauce, reduce heat to low, and simmer a few hours, low and slow.Meanwhile, heat stock or water with a chunk of rind to simmer, reduce heat to low. When the sauce looks like it may be drying out, add a few ladles of the warm liquid to moisten it, keeping the bolognese at a low bubble. To serve, remove bay leaf and herb bundle. If need be, add water to your stock blend to keep the sauce at bubble for at least 3 hours.Cook pasta in 6 quarts salted water about a minute, minute and a half less than the package directions. Reserve a half a mug full of starchy cooking water if you have used all of your stock or Parm-infused warm water. Drain pasta or remove from water with spider. Toss pasta with a few pats of butter and combine with sauce and a little stock or reserved water if necessary. Pass grated Parmigiano-Reggiano cheese at table.

THREE MEAT SPAGHETTI SAUCE

Three Meat Spaghetti Sauce image

This goes together quickly and just gets better the next day.

Provided by Dutch Reyveld

Time 4h15m

Number Of Ingredients 10

2 jar(s) 24oz spaghetti sauce of your choice. i use classico
1 can(s) 14 or 16oz crushed tomatoes
1 c chopped onions
2 Tbsp olive oil
1 lb ground beef
1 lb italian sausage, either bulk or casings removed
1/2 c pepperoni, chopped fine (hot or original, your choice)
1 tsp italian seasonings
4oz can(s) sliced mushrooms (optional)
3oz sliced black olives (optional)

Steps:

  • 1. Sautee onions in a large pot with about 2 tablespoons of olive oil. When onions have become translucent add the two jars of Spaghetti sauce, and can of chopped tomatoes. (I drain the tomatoes and reserve the juice for adding, if too thick)
  • 2. In a large skillet brown ground beef and Italian sausage until completely cooked, drain fat from meat, and add meat into the large pot with the sauce.
  • 3. Add chopped pepperoni to the sauce mixture. Add 1 teaspoon of Italian seasonings to mixture.
  • 4. You can simmer this for 30min, but I prefer to load it into my crock pot and let it go on low for 3~4hrs.
  • 5. Season w/ S&P at the end because of the spicy meats and add the sliced mushrooms and sliced black olives if you like.
  • 6. I use this basic sauce for Spaghetti, Lasagna and Italian casserole dishes. It freezes well and gets better in the fridge after a day or two. I often double this recipe, freeze in 1# containers and have a Spaghetti dinner quickly, any time I want it.

MEAT SAUCE

Meat Sauce image

Provided by Ree Drummond : Food Network

Time 2h15m

Yield 12 servings

Number Of Ingredients 22

3 pounds ground beef (I used ground round)
2 pounds sausage
3 tablespoons olive oil
2 large yellow onions, diced
2 green bell peppers, seeded and diced
6 cloves garlic, minced
1 cup white wine or stock (your choice)
Two 28-ounce cans crushed tomatoes
One 24-ounce jar good store-bought marinara sauce (you can use another jar if you like the sauce to be more saucy than meaty)
One 15-ounce can crushed tomatoes
One 6-ounce can tomato paste
2 tablespoons sugar
2 teaspoons kosher salt
1 teaspoon ground oregano
1 teaspoon ground thyme
1/4 teaspoon crushed red pepper, optional
4 bay leaves
1/4 cup finely minced fresh parsley or 3 tablespoons parsley flakes, plus more for serving
1 whole rind from 1 wedge Parmesan, optional
1/2 cup grated Parmesan, optional, plus more for serving
2 pounds spaghetti, cooked al dente and tossed with olive oil, for serving
Garlic-cheese bread, for serving

Steps:

  • In a large pot over medium-high heat, brown the ground beef and sausage until totally browned. Remove the meat from the pot with a slotted spoon and put it into a bowl. Set aside.
  • Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the onions and bell peppers. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
  • Pour in the wine and allow it to bubble up and reduce for about 1 1/2 minutes. Add the crushed tomatoes, marinara sauce and tomato paste. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper if using and bay leaves. Stir, and then add the cooked ground beef and sausage and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
  • After an hour, add the minced parsley and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
  • Serve a big bowl of oiled noodles and the meat sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.

  • Once meat is browned, drain any juices in the pot. Return to heat and pour in the crushed tomatoes and tomato sauce. add a little water to the jars, shake a bit and pour into the pot.
  • Add tomato paste, sugar, salt, pepper, dried basil, Italian Seasoning, fennel seeds and red pepper flakes. Stir to make sure everything is combined. Turn the heat to low and simmer for at least 1 and ½ to 2 hours to reduce the water and enhance the flavour. Skim the fat on top and stir occasionally, tasting the sauce and adjusting the seasonings to your preference. Use for lasagna, spaghetti and more!

  • Put the oil, butter, and chopped onion in the pot, and turn the heat on to medium. Cook and stir the onion until it has become translucent, then add the chopped celery and carrot. Cook for about 2 minutes, stirring the vegetables to coat them well.
  • Add the ground beef, a large pinch of salt, and a few grindings of pepper. Crumble the meat with a fork, stir well, and cook until the beef has lost its raw, red color.
  • Add the milk and let it simmer gently, stirring frequently, until it has bubbled away completely. Add a tiny grating—about 1/8 teaspoon—of nutmeg, and stir.
  • Add the wine, let it simmer until it has evaporated, then add the tomatoes and stir thoroughly to coat all ingredients well. When the tomatoes begin to bubble, turn the heat down so that the sauce cooks at the laziest of simmers, with just an intermittent bubble breaking through to the surface. Cook, uncovered for 3 hours or more, stirring from time to time. While the sauce is cooking, you are likely to find that it begins to dry out and the fat separates from the meat. To keep it from sticking, continue the cooking, adding 1/2 cup of water whenever necessary. At the end, however, no water at all must be left and the fat must separate from the sauce. Taste and correct for salt.

  • Magic Summer Sauce. Equal parts creamy and punchy, this bold-flavored sauce is for summer and beyond. It’s perfect for drizzling over everything from meat pulled from the grill and roasted vegetables, to grain bowls and just about anything else.
  • 3-Ingredient Roasted Lemon Sauce. Rich and sweet, with a faint bitter edge, this is the sauce you’ll want to drizzle over grilled chicken breast, pork, and salmon.
  • Super-Quick 3-Ingredient Pizza Sauce. Start with some good-quality tomatoes, add a splash of vinegar and some garlic, and you’ll instantly see why making your own pizza sauce totally beats the store-bought stuff.
  • 3-Ingredient Green Tahini Sauce. This is my absolute favorite sauce of all time! Use any herbs you have handy and the result is a bright, fresh sauce with nutty undertones that also doubles as a dip.
  • 3-Ingredient Roasted Tomatillo Sauce. I’m convinced this sauce has the power to make anyone fall in love with tomatillos. This sauce has a sweet smokiness that makes it a good match for just about everything you pull off the grill, from chicken and pork, to fish and vegetables.
  • Whatever-You-Have Pesto. This super-simple pesto starts with whatever green things you have in the fridge, be it wilted herbs or leftovers leafy greens, like spinach, arugula, or kale.
  • Brown Butter Vinaigrette Sauce. You just need three ingredients to pull off a bold, punchy sauce you’ll want to eat with everything. If you have some fresh parsley hanging out in the fridge, it’s a fun extra to toss in.
  • 3-Ingredient Honey-Lime Sauce. When you want a sauce that doubles as a marinade, this one really delivers. It’s just the right balance of sweet, salty, and sour, and also works well with stir-fries.
  • 3-Ingredient Buttery White Wine Pasta Sauce. Take three basic ingredients (you get pasta water and salt as freebies), plus some comfort-food inspiration, and you’ve got a grown-up version of buttered noodles that’s light with just a hint of indulgence.
  • 3-Ingredient Maple-Mustard Onion Sauce. The next time you’re ready to call cheese and bread (or a sleeve of crackers) dinner, this sweet and tangy sauce is the one thing you’ll want to have on hand.
