Italian Stuffed Chicken Roll-Ups image

These Italian stuffed chicken roll ups are so easy to make and are incredibly delicious. Made with provolone cheese and slices of prosciutto these are sure to please the whole family!

1.5 - 2 lbs. thinly-sliced chicken breasts
3 ounces thinly-sliced deli ham or prosciutto
4 slices or about 3 ounces provolone cheese
2/3 cup Italian seasoned breadcrumbs
½ cup grated Parmesan cheese
¼ cup minced fresh parsley (or 1-2 tablespoons of dried parsley flakes)
½ cup milk

Steps:

  • Preheat oven to 425F (220C). Spray a large baking sheet with cooking spray and set aside.
  • In a shallow bowl, combine breadcrumbs, Parmesan cheese, and parsley. Pour milk into a separate bowl.
  • Place a slice of ham and a slice of provolone cheese on each chicken breast. Depending on the size of your ham and cheese slices, you may need to trim them or cut them in half so that they are not hanging too far out of the roll-up.
  • Roll up chicken and secure with toothpicks.
  • Dip chicken rolls in milk, then coat with a light coating of the crumb mixture.
  • Place chicken seam-side down on prepared baking sheet.
  • Lightly spray chicken with cooking spray (this will help it turn golden brown!).
  • Bake, uncovered, for about 25 minutes or until chicken is cooked through. Remove toothpicks and serve!

2 cups spinach
½ cup ricotta cheese
¼ cup parmesan cheese
4 chicken breasts, thinly sliced
2 eggs, beaten
1 cup seasoned breadcrumbs
1 cup marinara sauce
4 slices mozzarella cheese
fresh basil, chopped
salt, to taste
pepper, to taste

Steps:

  • Sauté the garlic and spinach in oil until the spinach wilts. Add the ricotta, parmesan, salt, and pepper, and stir until heated.
  • Preheat oven to 450°F (230°C).
  • Salt and pepper the chicken breasts, add the cheese mixture, and roll 'em up.
  • Dip each chicken breast roll-up in the egg, then the breadcrumbs, and place in a 8×8 (20 x 20 cm) or 9×9 (22 x 22 cm) baking dish seam side down.
  • Bake for 25 minutes.
  • Remove from oven and top with marinara sauce and mozzarella. Bake an additional 5 minutes. Remove from oven and top with basil.

3 cups Italian-style tomato sauce
6 boneless skinless chicken breast halves
1/2 cup mozzarella cheese, set aside
spaghetti
1/2 cup low-fat ricotta cheese
3 tablespoons grated parmesan cheese
1 tablespoon snipped fresh parsley

Steps:

  • Preheat oven to 375 degrees.
  • Pound chicken breast halves until they are about 1/4 inch thick.
  • In a medium mixing bowl, combine the low-fat ricotta cheese, 3 Tbsp grated Parmesan cheese and 1 Tbsp snipped fresh parsley.
  • Spoon about 1 1/2 Tbsp of cheese mixture onto each chicken breast.
  • Fold in long sides and then roll from short end.
  • Place seam side down in sprayed 8 x 8 inch baking dish.
  • Measure out 1 cup of sauce; set aside.
  • Next pour remaining 2 cups of tomato sauce over stuffed chicken breast.

1/4 cup coarsely chopped onion
4 boneless skinless chicken breasts
4 slices mozzarella cheese

4 boneless skinless chicken breasts
1 teaspoon dried basil
1/4 teaspoon pepper
1/4 teaspoon salt
4 (1 ounce) part-skim mozzarella cheese, string
cooking spray
1 cup tomato sauce

Steps:

  • Preheat oven to 350°F.
  • Place each chicken breast between 2 pieces of heavy-duty plastic wrap, pound to 1/4 inch thickness using a meat mallet or rolling pin.
  • Combine basil, salt and pepper; sprinkle half of mixture evely over both sides of chicken.
  • Place 1 string cheese stick across the center of each flattened chicken breast. Roll up chicken jelly roll fashion, starting with short end. 8 ounces part-skim mozzarella cheese

8 ounces tomato sauce

Steps:

  • mix together the ricotta cheese, mozzarella (reserving 1/2), olives, and the herbs.

2 (8 ounce) packages Pillsbury Refrigerated Crescent Dinner Rolls (makes 16 rolls-low fat version is just as good)
2 cups skim milk or 2 cups low-fat milk
1 (8 ounce) bag shredded kraft sharp 2% cheddar cheese
1 1/2-2 lbs chicken breasts
2 (10 ounce) cans cream of chicken soup (reduced fat is just as good)

Steps:

  • Boil chicken until fully cooked.
  • Let cool; cut into small pieces.
  • Mix 1/2 cheese and chicken pieces together.
  • Unroll crescent rolls (1 package at a time, keep refrigerated until then or they get sticky).
  • Roll up chicken and cheese in side rolls.
  • Simmer 1 can cream of chicken soup, 1 cup of milk and 1 cup of cheese until cheese is melted.
