GLAZED SESAME SALMON

Add a punch to omega-3 rich salmon fillets with this tangy glaze - sprinkle with sesame seeds for added crunch and texture

2 tbsp chilli sauce (we used sriracha)
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp rice wine
1 garlic clove , crushed
2 tsp finely grated ginger
4 salmon fillets
1 tbsp sesame seeds
boiled rice , to serve
stir-fried vegetables , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a shallow dish, mix together the chilli sauce, soy, sesame oil, rice wine, garlic and ginger. Lay the pieces of salmon in the marinade, skin-side up, and set aside for 15 mins.
  • Put the marinated salmon on a baking tray, skin-side down, and spoon over a little of the leftover marinade. Sprinkle with the sesame seeds and roast in the oven for 15 mins, or until done to your liking. Serve with steamed rice and stir-fried vegetables.

1/2 cup toasted sesame oil
1/4 cup soy sauce or 1/4 cup tamari
2 tablespoons rice vinegar
1 tablespoon fresh ginger, grated
2 garlic cloves, finely minced
1 lime, zest and juice
2 tablespoons honey
1 1/2 lbs salmon fillets, without skin and cubed
2 tablespoons sesame seeds

Steps:

  • Mix all ingredients without salmon and sesame seeds.
  • Skewer the salmon cubes on skewers.
  • Put the skewers in the marinade and let marinate in the fridge for 2 hours.
  • Preheat oven to 450°F.
  • Remove the skewers from the marinade (keep it), then roll in the sesame seeds.
  • Cook in oven 12 to 15 minutes. While the salmon is cooking, boil the marinade for a few minutes.
  • When ready to serve, you can serve the skewers with the remaining marinade as sauce.

By using a centre cut of salmon your skewers will be equal in size and cook evenly. Let your wooden skewers soak in water for about 20 minutes to prevent flare-ups in the oven. 3 tablespoons soy sauce
2 tablespoons hoisin sauce
2 teaspoons rice vinegar
1 garlic clove, minced
1 salmon fillet, skinless, about 1 lb
1 green onion, finely chopped
toasted sesame seeds (optional)

Steps:

  • Whisk together soy and hoisin sauces, vinegar and garlic in a bowl.
  • Slice salmon fillet across the grain into thin strips. Add to soy mixture and let stand for 15 minutes, turning occasionally.
  • Thread each salmon strip onto small metal or soaked wooden skewers. Place skewers on baking sheet and broil, turning and basting with marinade once, for about 4 minutes or until golden and fish flakes easily when tested. Alternatively, cook skewers on oiled grill pan on grill.
  • Before serving, sprinkle with green onion and sesame seeds, if using.

  • n a medium bowl, combine the sesame oil, rice vinegar, brown sugar, soy sauce, garlic, ginger and freshly ground pepper. Add salmon cubes, cover and refrigerate for 15 minutes. (This is a good time to start some rice cooking, if you like. Also, if you're using wooden skewers, set them to soak).
  • Heat BBQ, grill pan or broiler to medium-high (for broiler, line a baking sheet with aluminum foil for skewers and have oven rack about 6-7 inches from broiler.
  • Once salmon has marinated, thread onto skewers, alternating with lemon slices (or vegetable pieces). Cook until just flaky and lightly charred, brushing with left-over marinade regularly. It should take about 5 minutes per side, but will depend on the thickness of your salmon pieces. Sprinkle with sesame seeds before serving.
