I threw this dish of penne pasta, pancetta bacon, and mushrooms together one afternoon for lunch.

1 (12 ounce) package penne pasta
1 (3 ounce) package pancetta bacon, diced
2 tablespoons butter
1 (10 ounce) package sliced mushrooms
1 tablespoon minced garlic
½ cup heavy cream
¼ teaspoon Italian seasoning
¼ cup grated Parmesan cheese, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and set aside. Meanwhile, cook pancetta in a large skillet over medium heat until browned but not crispy, about 5 minutes. Drain on a paper towel-lined plate and set aside.
  • Pour pancetta grease out of the skillet, and add butter. Increase heat to medium-high and stir in sliced mushrooms. Cook and stir until the mushrooms have softened and released their liquid. Add the minced garlic, and cook 2 more minutes. Reduce heat to medium-low, then stir in cream and Italian seasoning. Simmer until the sauce has thickened slightly.
  • To serve, toss the cooked penne with the sauce, and sprinkle with Parmesan cheese.

3 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
1/2 teaspoon crushed red pepper flakes
Two 28-ounce cans plum tomatoes, crushed by hand
1 cup chopped fresh basil, plus 4 large fresh basil sprigs
1 pound dried rigatoni
1 pound spicy Italian sausage, casings removed
1 1/2 cups shredded mozzarella
1 1/2 cups shredded provolone
1 cup grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F.
  • Bring a large pot of salted water to a boil. Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of the tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil sprigs and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard basil and stir in the chopped basil. Season with salt and pepper.
  • While the sauce simmers, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes. Transfer the sausage to a large bowl with a slotted spoon.
  • Cook the rigatoni in the salted boiling water until very al dente, about 2 minutes less than the package directions instruct. Drain the pasta and add it to the large bowl.
  • Add the tomato sauce and half each of the mozzarella, provolone and Parmesan cheeses to the bowl and stir well to combine. Transfer the pasta-sausage mixture to a 3- to 4-quart baking dish and top with the remaining mozzarella, provolone and Parmesan cheeses. Bake, uncovered, until browned, about 15 minutes. Let the pasta rest about 10 minutes before serving.

A very simple dish that can be made ahead of time and popped into the refrigerator until you want to bake it. Equally, I find it a quick fix dinner if I'm in a rush. All I have to do is pick up a chicken on the way home!! Don't leave the curry powder out; it doesn't add heat, just an interesting twist to it.

1 cup sour cream
1 teaspoon curry powder
1 barbecued chicken

  • Preheat the oven to 180 degrees Celsius or 350 degrees Fahrenheit.
  • Cook the pasta until al dente; drain and return to the pan to keep warm.

2 T. minced red onions
1/4 cup chopped tomatoes

500 g. ground chicken breast
1 cup sliced button mushrooms
2 T. chopped red bell pepper
1/4 cup white wine
sugar
dash of salt and pepper
4 packs 250 g spaghetti sauce
2 T. Parmesan cheese
1 or 2 T. Romano
2 T. grated Cheddar cheese
or you can substitute 4 packs of 250 g. Three-Cheese Pasta Sauce for the 4 ingredients indicated by asterisk (*)*

Steps:

  • 1. Cook the pasta according to package instruction. 2. Saute garlic, onions, chopped tomatoes and red bell pepper in oil. Add a dash of sugar, salt and spice (finely ground black pepper)I usually do this to let the flavor out from the garlic, to caramelized the minced onions and make the tomatoes pasty. Add the dried basil leaves then the ground chicken breast. I usually buy the breast part and have it de-boned then ground but you can also use chicken sliced in small cubes.Saute until golden brown. 4. Pour table wine and the spaghetti sauce then sprinkle with the three-cheese or you can use the available and ready three-cheese pasta sauce. Bring to a boil and simmer for a few minutes. 5. Toss in cooked pasta and sprinkle with your choice of cheese. serves 6 to 8
