60 g butter
200 g milk
1 egg
1 teaspoon vanilla extract
190 g self raising flour
100 g sugar
1/2 teaspoon salt
1 apple, peeled cored and sliced

Steps:

  • Preheat the oven to 375 degrees F.
  • Grease an 8 inch round cake pan.
  • Melt the butter 2 minutes/90 degrees/Speed 1.
  • Add milk, vanilla and egg. Mix 5 seconds/Speed 7.
  • Add flour, sugar and salt. Mix 10 seconds/Speed 5.
  • Tip batter into the cake pan. Poke apple slices into the batter. It won't matter if bits stick out here and there.
  • Bake 30-35 minutes.

This is not a rich or heavy cake. It is a simple cake that is great served with tea or coffee - either cold or warm, with cream if desired. Eat within 2 days. Australian measurements used. (Aust. Women's Weekly)

125 g butter (room temperature)
2/3 cup caster sugar
2 eggs
1/2 cup self raising flour, sifted
1/2 cup plain flour, sifted
1/3 cup milk
1 apple, peeled & grated
1/4 cup slivered almonds

Steps:

  • Pre-heat oven to 180 Deg C (350 Deg F or Gas Mark 4). Grease then line a 20cm deep round cake pan with baking paper.
  • Using an electric mixer cream butter and sugar in a small bowl, until pale in colour and light and fluffy.
  • Beat in eggs, one at a time, until combined.
  • Transfer mixture to a large bowl. Stir in half of the milk and half of the sifted flours. Then stir in the remaining milk and flour.
  • Spread into prepared pan. Sprinkle evenly with the apple then top with the almonds.
  • Bake for about 45 minutes or until a skewer inserted into the cake comes out clean. Stand for 5 minutes then carefully turn onto a wire rack to cool.

60 g butter
100 g sugar
150 g self raising flour
1 egg
1/4 cup lemon juice
100 g sugar
1 egg
60 g butter

Steps:

  • Preheat oven to 350 degrees F.
  • Butter a round 8 inch cake pan.
  • For the base: Cream 60 grams butter and 100 grams sugar for 15 seconds/speed 5. Add the egg. Mix 15 seconds/speed 5. Add the flour. Mix 30 seconds/bread dough speed. This should result in a crumbly mixture which will hold together when pressed.
  • Press 2/3 of the mixture into the buttered pan. Set 1/3 aside.
  • For the filling: place all remaining ingredients in TM bowl (There is no need to wash the bowl first, just wipe it out well). Press turbo several times to combine ingredients. Cook 6 minutes/Varoma/Reverse/Speed 1. The mixture should be creamy. Pour over base. Sprinkle remaining base mixture over filling. Bake 25 minutes.

110 g brown sugar
2 eggs
4 bananas, over ripe is best
200 g self raising flour
65 g milk
1 teaspoon vanilla extract
1 teaspoon baking soda

Steps:

  • Grease an 8 inch round baking pan.
  • Insert the butterfly whisk.
  • Cream the butter and sugar 1 minute/speed 4. Scrape down as necessary.
  • Add eggs and bananas. Mix 10 sec/speed 4. Scrape down.
  • Add flour, milk, vanilla and baking soda.Mix 20 seconds/speed 3. Scrape down.
  • Spoon mixture into the prepared pan. Bake for 50 minutes at 350, or until a knife inserted in the center of the cake comes out clean.

1 1/2 cups self raising flour
1 pinch salt
1/2 cup lukewarm milk

cinnamon

Steps:

  • Preheat the oven to 180Celcius (350 Fahrenheit) and grease and flour a 9 inch baking pan.
  • Retain 2 tbsp butter, cream the remainder with sugar.
  • Beat in the eggs separately, then stir in flour, salt and milk.
  • Stir in pineapple pieces.
  • Pour the batter into the pan.
  • Bake for about 50 minutes.
  • While still hot, turn out and spread with reserved butter and sprinkle with a mixture of brown sugar and cinnamon.
