2 Ancho Chilies (dried, de-seeded and boiled.)
3 dried Guajillo or Anaheim Pepper (de-seeded and boiled.)
4 Fresh tomatoes (lightly grilled)
2 cloves of garlic (lightly grilled)
1/4 onion (lightly grilled)
3 Tablespoons of sour cream
1/4 cup of heavy whipping cream
1 Chicken Breast (cooked and shredded)
4 Ounces of Cream Cheese
1/4 red onion (chopped)
Cilantro
Salt and Pepper to Taste

Steps:

  • Combine all of the ingredients for the sauce except for the heavy whipping cream, and blend until smooth.
  • Strain out any seeds and add to a skillet, bringing to a slight boil.
  • Add the heavy whipping cream, and let boil for 5 additional minutes. Reduce heat to low.
  • In a hot skillet, add a small amount of olive oil and then add the shredded chicken, the onion, and the cilantro.
  • After about 5 minutes, add the cream cheese, and stir in with the chicken until well incorporated.
  • Season with salt and pepper and let cook for an additional five minutes.
  • Lightly fry the corn tortillas in oil and pay dry.
  • Dip each tortilla in the red enchilada sauce, covering both sides completely.
  • Fill each tortilla with some of the chicken filling, and some cheese if desired.
  • At this point you can add them to a baking dish, top with mozzarella cheese and bake at 400 degrees for 15 minutes.
  • If you do not want to bake them, just put them on a plate, top with lettuce, cheese, and radish and serve immediately.

THE LAST RED ENCHILADA SAUCE YOU'LL NEED

The Last Red Enchilada Sauce You'll Need image

This is the tastiest red enchilada sauce I have ever had! I could literally just eat it with a spoon. The secret is cocoa powder, do not miss that step! I found it on the Texas Monthly cooking forum. A lot of times I double the recipe since its so good. Serve it over enchiladas, burritos, or grab a straw! Its scrumptious!!

Categories     Sauces

Time 20m

Yield 4 cups, 6-8 serving(s)

Number Of Ingredients 8

3 tablespoons chili powder
3 tablespoons flour
1 tablespoon chicken bouillon
1 teaspoon cocoa powder
1/2 teaspoon garlic salt
1 teaspoon oregano
3 cups water
1 (8 ounce) can tomato sauce

Steps:

  • Combine all dry ingredients in a small bowl.
  • Stirring constantly, slowly add enough of the water to make a thin paste.
  • Pour into pan and add rest of water.
  • Cook over medium heat, stirring constantly, until mixture thickens.
  • Stir in tomato sauce.
  • Use in your favorite enchilada recipe.
  • The amounts on the ingredients are very flexible.
  • For instance, if I am feeding my kids who do not like"spicy", I will halve the chili powder and double the tomato sauce.
  • Experiment to suit your taste, but don't leave out the cocoa.

  • Pour in chicken broth, whisking the entire time and until there are no more clumps. Heat for about 15 minutes or until sauce is thickened.
