THE BEST NO-BAKE CHEESECAKE
Who doesn't love a dessert that can be made without turning on the oven? This no-bake cheesecake is light and fluffy, thanks to the whipped cream that gets folded into the cream-cheese mixture. Have no fear--it will have the signature creamy, tangy flavor of the classic.

- For the crust: Add the graham crackers, brown sugar and salt to a food processor and pulse to fine crumbs. Drizzle in the butter and pulse until the crumbs are completely coated with the butter.
- Press the crumb mixture firmly into the bottom and about 1 1/2 inches up the sides of a 10-inch springform pan, with a 1/4-inch thick rim around the border. (Use the bottom of a measuring cup to help make the crust even on the sides and bottom.) Freeze until firm, about 20 minutes.
- For the filling: Meanwhile, whip 3/4 cup of the cream in a medium bowl with a whisk until stiff, fluffy peaks form, 3 to 4 minutes (or 1 to 2 minutes using an electric mixer on medium speed); set aside.
- Beat the cream cheese and 1 cup granulated sugar in a stand mixer fitted with the paddle attachment on medium speed until light and fluffy, scraping down the sides of the bowl as needed, 3 to 4 minutes. Reduce the speed to medium-low and add the lemon juice, sour cream and vanilla-bean paste and beat until just combined, 1 to 2 minutes. Gently fold the whipped cream into the cream-cheese mixture with a large rubber spatula.
- Pour the batter into the springform pan and smooth the top with an offset spatula. Cover tightly and refrigerate until set, 8 hours and up to 24 hours.
- Just before serving, add the remaining 3/4 cup cream and 1/4 cup granulated sugar to a medium bowl and whip to soft peaks with a whisk, 3 to 4 minutes (or 1 to 2 minutes using an electric mixer on medium speed). Spoon the whipped cream into a piping bag fitted with a large star tip.
- Run a knife around the inside edge of the springform pan to loosen the cake, then open the clasps to release the pan ring. Pipe dollops of whipped cream around the border of the cheesecake and top with fresh berries.

- Graham Cracker Crust:
- Mix the graham cracker crumbs, brown sugar, and melted butter and press into the bottom of the springform pan and 1 inch up the sides.
- Add heavy cream to your stand mixer on low speed, raising it to a higher and higher speed and beat until stiff peaks form, about 3-4 minutes.
- Remove the whipped cream from the bowl and set aside.
- To your stand mixer add the cream cheese, sugar, almond extract, and lemon juice and beat until light and fluffy, about 2 minutes.
- On the lowest speed add in the whipped cream until just evenly combined.
- Spoon mixture over crust, spread evenly.
- Refrigerate, covered, overnight. The longer it refrigerates the firmer it will be.
- Pour Cherry Filling over cheesecake just before serving.

EASY NO BAKE CHERRY CHEESECAKE
My mom got this easy and delicious recipe from her sis-in-law....I'm sure glad she shared the recipe! It's not your ordinary cheesecake, this one is light & fluffy. Hope you enjoy it as much as my family does! This recipe makes exactly 2 pies. I usually prepare these at night because they need to be refrigerated overnight.

Steps:
- In med-large bowl mix together sour cream and cream cheese with mixer (if mixer is unavailable fork is easy but more time consuming) mix until smooth and set aside.
- On stove top melt stick of butter and mix in marshmallows little at a time until smooth.
- Quickly add marshmallow mix into the sour cream/cream cheese mix and quickly mix those together.
- Pour equal amount of "batter" into each of the ready pie crusts. Cover the pies with the plastic that came with the pie crusts, simply turn plastic upside down to cover. Place in fridge overnight.
- Once pie is firm you may top with cherry pie filling (our favorite) or any other fruit you may want to top pie with -- you also may play with pie crust and get Oreo pie crust for chocolate lovers!
EASY CHERRY CHEESECAKE
This is a simple cheesecake recipe that I sometimes bring to family occasions. I am posting this recipe for my cousin Amy since she requested the recipe.

- Preheat oven to 350 degrees.
- Place the cream cheese in a bowl in the microwave.
- Microwave it on the defrost setting for a couple of minutes to slightly soften the cream cheese (This is so that you don't kill your mixer when beating the cream cheese).
- Add sugar to cream cheese and beat it with an electric mixer until smooth.
- Add eggs and vanilla and blend until smooth.
- Pour into ready made crust.
- Bake at 350 degrees for 25 to 30 minutes.
- Note: The cheesecake is done when the sides are puffed- The center will not be as puffed- It will be possible to jiggle the center slightly but it will not be runny.
- Let cool.
- Top with cherry pie filling and chill.
