This recipe for strawberry bread uses fresh strawberries, milk, and lemon zest to create a tender, fruity and delicious bread that is perfect when served with coffee or tea.

1/2 cup butter
3/4 cup granulated sugar
2 large eggs
1 teaspoon almond extract (or vanilla)
2 teaspoons lemon zest
1/2 cup milk
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups strawberries (washed, hulled and cut into smaller pieces)
1 tablespoon all-purpose flour
vanilla icing glaze

Steps:

  • Preheat your oven to 350 °F. Grease a standard loaf pan ( 9x5x3 inches approximately) and set aside.
  • In a large mixing bowl, beat together the butter and sugar until creamy and smooth. Beat in the eggs, one at a time until fully combined. Mix in the extract, lemon zest and milk until combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Add into the butter mixture and stir until mixed in well. Toss the strawberries in the flour then stir in the berries until they are just mixed in.
  • Spoon into the prepared loaf pan, smoothing out the top. bake for 55-60 minutes or until a cake tester or toothpick inserted into the middle comes out clean. Remove from the oven and let cool until you can touch the pan safely. Turn out onto a rack to cool completely.
  • Glaze with my Vanilla Icing Glaze when fully cooled.

This easy fresh strawberry bread is the perfect way to use up all those fresh strawberries of the season. The quick bread is delicate, tender, and moist. You'll love the flavors and texture!

2 cups all-purpose flour (spooned and leveled)
1 teaspoon baking soda
½ teaspoon salt
1 large egg (at room temperature)
¾ cup granulated sugar
⅓ cup vegetable oil
1 cup buttermilk, at room temperature (no substitutions)
1 teaspoon vanilla extract
Zest of 1 lemon
Butter to grease the pan
2 cups diced fresh strawberries (firm in texture and bright red)
1 ½ tablespoons all-purpose flour

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a 9x5 inch aluminum loaf pan with butter. Set aside.
  • Mix the dry ingredients: In a medium bowl, whisk 2 cups all-purpose flour, baking soda, and salt until evenly combined.
  • Mix the wet ingredients: In another large bowl, mix the egg, granulated sugar, vegetable oil, buttermilk, vanilla extract, and lemon zest until evenly combined.
  • Gradually, add the dry ingredients to the wet ingredients, whisking until no pockets of flour remain. Do not overmix.
  • Thoroughly pat dry the diced strawberries. Reserve about 3 tablespoons of strawberries for later and set aside. Toss the remaining diced strawberries with 1 ½ tablespoons all-purpose flour. Gently, fold in the flour-coated strawberries into the batter until just combined, leaving any excess flour behind.
  • Pour batter into the prepared loaf pan. Top with the reserved 3 tablespoons of diced strawberries, gently pushing them down into the batter but letting them still be visible. This will make the bread more beautiful.
  • Bake for about 60-65 minutes, or until a toothpick inserted in the middle comes out clean. About 40 minutes into the baking time, cover with aluminum foil to prevent it from browning too fast. Tip: To prevent the bread from sinking in the middle, only open it once when you need to cover it with foil, and when it's ready to check for doneness.
  • Remove from oven and let it cool for 20 minutes before removing from the pan. Then, carefully remove from the pan and let it cool a bit more before slicing. Note: The strawberries inside may look a little bit pale, that's normal. Using bright red and firm strawberries helps with that.

1/2 cup sour cream (or plain yogurt)
1/2 cup walnuts or pecans (coarsely chopped (optional))

Steps:

  • Preheat oven to 350F degrees and place the oven rack in the middle position.
  • Spray the bottom and sides of an 8-cup loaf pan (9x5x3-inch) with nonstick cooking spray.
  • In the bowl of your electric mixer, or with a hand mixer, beat the butter until softened.
  • Add the sugar and continue to beat until light and fluffy.

One 1.2-ounce package freeze-dried strawberries, finely crushed
3/4 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F. Grease an 8-by-4-inch loaf pan with butter and line the bottom and 2 sides with parchment paper.
  • In a medium bowl, combine the flour, baking powder, baking soda and salt. In a large bowl, cream together the granulated sugar and eggs. Stir in the mashed bananas, oil and vanilla. Stir in the flour mixture a third at a time and mix until just combined. Remove 1 cup batter to a separate bowl and stir in the strawberry preserves and half of the freeze-dried strawberries.
  • Pour the plain batter into the prepared pan, alternating occasionally with a spoonful of the strawberry batter. Use a skewer to swirl the batters. 1 cup 250 ml all-purpose flour
1 cup 250 ml old-fashioned oats
½ cup 125 ml whole wheat bread flour
1 tbsp 15 ml baking powder
¼ tsp 1 ml kosher salt
½ cup 125 ml whole milk
½ cup 125 ml honey
¼ cup 60 ml canola oil, or smooth-tasting olive oil
2 eggs
1 tsp 5 ml pure vanilla extract
1 cup 250 ml chopped rhubarb
1 cup 250 ml diced strawberries, (plus more sliced strawberries, for garnish (optional))

Steps:

  • Preheat oven to 350°F (175ºC). Generously grease a loaf pan and line with a sling of parchment paper. Set aside.
  • In a large bowl, combine the flours, oats, baking powder, and salt. In a second bowl, whisk together the milk, honey, oil, eggs, and vanilla extract. Pour over the dry ingredients and mix just to combine. Fold in the chopped rhubarb and the diced strawberries.
  • Transfer the batter in the prepared loaf pan and smooth out the top. If desired, slice additional strawberries and set them over the top of the cake for a pretty presentation.
  • Bake the cake for about 70 minutes, until the cake is deep golden brown and a toothpick inserted in the center of the cake comes out clean.   • Lightly grease two loaf pans. Approx. 8-1/2 x 4-1/2
  • Remove tops from berries, rinse well. Set aside.

  • Measure level cups of flour, place in a large mixing bowl.
  • Add the sugar.
