This is an easy mix-it-up-in-one-bowl-and-cook recipe. I make it for every brunch I attend. You may substitute chopped spinach for the broccoli if you wish.

4 eggs
¾ cup biscuit baking mix
¼ cup butter, softened
1 cup grated Parmesan cheese
1 (10 ounce) package chopped frozen broccoli, thawed and drained
1 cup cubed cooked ham
8 ounces shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 10 inch quiche dish.
  • In a large bowl, beat together milk, eggs, baking mix, butter and parmesan cheese. Batter will be lumpy. Stir in broccoli, ham and Cheddar cheese. Pour into prepared quiche dish.
  • Bake in preheated oven for 50 minutes, until eggs are set and top is golden brown.

2 tablespoons olive oil
2 medium onions, chopped
Kosher salt and black pepper
1 cup fresh flat-leaf parsley, chopped
4 large eggs
0.75 cup half-and-half
0.13 teaspoon ground nutmeg
8 ounces Gruyère, grated
4 cups mixed greens

Steps:

  • Heat your oven to 375°F. Fit the crust into a 9-inch pie plate. Place on a baking sheet.
  • Heat 1 tablespoon of the oil in a large skillet over medium-low heat. Add the onions and ½ teaspoon each of salt and pepper and cook, stirring occasionally, until soft, 5 to 7 minutes. Stir in the parsley.
  • In a large bowl, whisk together the eggs, half-and-half, nutmeg, and ¼ teaspoon salt. Stir in the onion mixture and the Gruyère.
  • Pour the egg mixture into the crust. Bake until a knife inserted in the center comes out clean, 35 to 40 minutes. Let sit for 5 minutes. Drizzle the greens with the remaining tablespoon of oil and sprinkle with ¼ teaspoon each salt and pepper. Serve with the quiche.

1 dash hot sauce
1 dash Dijon mustard

1 1/2 cups sharp cheddar cheese, shredded
3 tablespoons shallots, minced and sauteed until tender
1/4 cup tomatoes, seeded and diced

  • 1. Mix eggs and milk well. Add salt, pepper, herbs as desired.
  • 2. Put additional ingredients in pie shell (any veggies, meats or cheeses.) Pour egg mixture over it. It may seem ready to overflow. If you have a lot in the pie shell, tap it down to let the egg settle around your ingredients. If it still seems too full, discard the additional egg mix (or use it for an omlette)

  • Pre-heat the oven to 425ºF. Whisk the eggs in a large bowl and add the milk and half-and-half or cream. Whisk together thoroughly and then stir in the shredded cheese and herbs. 2 Pre-made or homemade pie crust (pie crust pre-made)
5 Eggs
1-1/4 cup Half and Half

1 tsp. Italian Herb Seasonings

  • Saute chopped onion, garlic, mushrooms with a tablespoon of butter, a little olive oil, dash of salt and pepper. Set to side until needed.
  • Whisk 5 eggs and cream slightly with half n half. Add the veggies. Add the 2 cups broccoli cuts (frozen) Add all the cheese. Salt Add 1 tsp. Italian Herbs, a dash more salt and pepper. Mix gently Then: Pour dividing into pre- baked pie crust and bake at 350* until center is set about 30 - 45 minutes. Tent if necessary towards end to prevent crust from burning.
