2 tablespoons butter or margarine
4 slices white bread
2 slices American cheese
1 roma (plum) tomato, thinly sliced
¼ small onion, chopped
1 jalapeno pepper, chopped

Steps:

  • Heat a large skillet over low heat. Spread butter or margarine onto one side of two slices of bread. Place both pieces buttered side down in the skillet. Lay a slice of cheese on each one, and top with slices of tomato, onion and jalapeno. Butter one side of the remaining slices of bread, and place on top buttered side up. When the bottom of the sandwiches are toasted, flip and fry until brown on the other side.

1/4 cup pecans
1 1/4 cups all-purpose flour
1 tablespoon cornstarch
2 cups shredded sharp cheddar cheese (see note)
8 tablespoons unsalted butter, cut into pieces and softened (1 stick)
1/4 teaspoon cayenne pepper
1/2 teaspoon salt

Steps:

  • Process pecans, flour, and cornstarch in food processor until finely ground. Add remaining ingredients and pulse until dough forms. Turn dough out onto lightly floured surface and roll into two 8-inch logs. Wrap tightly with plastic wrap and refrigerate until firm, at least 1 hour or up to 3 days.
  • Adjust oven racks to upper-middle and lower-middle positions and heat oven to 400 degrees. Line 2 baking sheets with parchment paper. Slice logs into 1/4-inch rounds and place 3/4 inch apart on prepared baking sheets. Bake until golden, about 15 minutes, switching and rotating baking sheets halfway through baking. Let cool 3 minutes on sheets, then transfer to wire rack and cool completely. Serve. (Rounds can be kept in airtight container at room temperature for up to 3 days.).
  • Make Ahead: At the end of step 1, logs can be wrapped in plastic, then foil, and frozen for up to 1 month. Defrost in refrigerator before proceeding with step 2.

2 slices sourdough bread
2 tablespoons mayonnaise
1 cup Jalapeno Pimento Cheese, recipe follows
4 ounces cream cheese, softened
1/2 cup mayonnaise
2 tablespoons adobo sauce from canned chipotles
1 tablespoon Dijon mustard
1/2 teaspoon freshly ground black pepper
Pinch of cayenne or dash of hot sauce
Pinch kosher salt
2 cups grated sharp Cheddar
2 cups grated smoked Gouda
4 ounces sliced pimentos
1/2 cup jarred sliced jalapenos, finely chopped
2 teaspoons chopped fresh dill
Crackers, for serving
1 cup Castelvetrano olives, for serving

Steps:

  • Heat a nonstick skillet over medium heat. Spread each slice of bread with 1 tablespoon of the mayonnaise. Place one piece of bread, mayonnaise-side down, into the skillet. Top with the Jalapeno Pimento Cheese. Place the second slice of bread, mayonnaise-side up, onto the cheese. Using a spatula, press together and cook until golden, about 2 minutes per side. Slice and serve.
  • Combine the cream cheese, mayonnaise, adobo sauce, Dijon mustard, black pepper, cayenne or hot sauce and salt in the bowl of a food processor. Process until combined. Add almost all of the Cheddar and Gouda, reserving about 2 tablespoons of each in a bowl, and pulse until well combined again. Add the contents of the blender to the reserved cheese and stir to combine. Fold in the pimentos, jalapenos and dill, then chill before serving.
  • Serve as a dip with crackers and olives.

6 small goat cheeses, 2 to 3 ounces each, or 1 log goat cheese, 10 to 12 ounces, cut into 6 pieces
2 teaspoons coriander seeds
2 teaspoons pink peppercorns
2 teaspoons black peppercorns
1 large sprig rosemary, cut into 6 pieces, or 1/2 teaspoon dried rosemary
2 or 3 bay leaves
2 or 3 strips lemon peel
2 to 3 cups extra-virgin olive oil
2 or 3 wide-mouth 1-pint or 1/2-liter jars

Steps:

  • Divide the cheeses between the jars. (It's not necessary for them to rest on the bottom.)
  • Divide the coriander, peppercorns, herbs and lemon peel on top of the cheeses. Gently pour in olive oil to fill the jars.
  • Close the jars tightly and refrigerate for about a week before serving.
  • Store in the refrigerator for up to two months. Serve the cheeses with toasts, crackers or salad. When the cheeses are gone, use the remaining oil in vinaigrettes.

4 slices jalapeño, to taste
1 ¼ cups shredded Cabot Pepper Jack Cheese, divided
2 tablespoons jalapeño, finely chopped
½ tablespoon habanero pepper, optional, finely chopped
1 tablespoon green onion, finely chopped
6 jalapeño-flavored potato chips, lightly crushed

Steps:

  • Heat a large nonstick skillet over medium heat. Hold a slice of bread over the skillet to measure the space for the cheese crust. Place 2-4 jalapeño slices in the skillet where the bread will go, then top with ¼ cup Cabot Pepper Jack Cheese roughly the shape and size of the slice of bread. Place the bread on top of the cheese and press down lightly so the melting cheese sticks to the bread.
  • Top the bread with ¾ cup Cabot Pepper Jack Cheese, the chopped jalapeño, habanero (if using), green onions, and potato chips. Cover with the other slice of bread. Cook for 2-3 minutes, or until the cheese on the bottom forms a browned crust.
  • Using a spatula, lift the sandwich out of the pan and layer the remaining jalapeño slices and Cabot Pepper Jack Cheese in the skillet. Place the sandwich on top of the cheese in the pan, cheese-crust side up, and press down lightly to adhere. Cook for 3-5 minutes, or until the cheese crust is well browned and the cheese in the middle of the sandwich is completely melted. Let the sandwich rest for 1 minute before slicing.

1/2 cup butter
1 1/2 cups all-purpose flour
1/2 teaspoon salt

Steps:

  • Using a mixer beat together all the ingredients until a dough ball forms. The dough will look shaggy. Put the dough onto a clean, floured work surface and roll into a 15-inch long log that measures about 1 ½-inches in diameter. Wrap the log in plastic wrap and freeze for 1 hour.
  • Preheat the oven to 400 degrees. Unwrap chilled dough and slice into very thin (1/8-inch thick) coins. Arrange the cheese rounds in a single layer slightly apart on an ungreased baking sheet. Bake for 12-15 minutes, until the rounds begin to brown on the edges. Allow them to cool slightly before serving.

This is a recipe that I absolutely love to make and people just can't seem to get enough of. I've modified this so many times over the last 25-30 years to keep up with my enjoyment of spicy foods. Be warned that this current version - if ingredients are followed exactly - is quite spicy. Modify for your spicyness level. Keep warm in a crackpot or other warming dish. Serve with tortilla chips (I like the round ones because they don't seem to break as easily). Leftovers (if you have any) warm up nicely in the microwave and make an excellent midnight snack with tortilla chips!

1 lb ground beef
4 garlic cloves, diced
1 teaspoon dry basil
1 teaspoon dry oregano
1 teaspoon montreal seasoning for beef (or more to taste)
1 (10 ounce) can rotel, with habenero
2 (4 ounce) cans hatch diced green chilies
10 serrano peppers, stems removed and finely Diced with seeds
4 jalapeno peppers, stems removed and finely Diced with seeds
2 (8 ounce) packages cream cheese, at room temperature
1 (2 lb) package velveta type processed cheese, I use store brand
1/4 teaspoon salt (optional to taste)
1 (2 lb) package round corn tortilla chips

Steps:

  • Open cans of peppers and rotel and pour in a strainer, let drain until called for - swishing around every once in awhile to promote drainage.
  • In a medium sized (4-6 qt) Dutch oven or casserole stove top pan (non-stick makes cleanup easier), brown the ground beef with the basil, oregano and Montreal seasoning on medium heat. I use a flat wooden scraper type thingy to stir so I can scrape the pan bottom- especially useful when cheese is added.
  • When browned, drain (or not depending on fat content - your choice) and return to pan. Add garlic and fresh (diced) hot peppers (Jalapeño and Serrano) and stir for 2-3 minutes. In a few moments you should have a very spicy smell in the kitchen - be careful breathing in the fumes if you aren't used to them, it can burn a bit.
  • Turn heat to medium low. Add cream cheese and processed cheese (Velveeta type) in small chunks to promote melting stirring almost constantly to avoid sticking - depending on your stove, you may have to turn down to low heat.
  • When cheeses are mostly melted, Add canned chilies and rotel and continue to stir until cheese is completely melted. Taste and add salt if necessary - some store brands of cheese have more salt than others.
  • If this needs to be held for a party etc, put in a warmer or crockpot on lowest setting to keep warm - in a low/hi crockpot check/stir routinely that sauce isn't burning/sticking to crockpot. My crockpot has a keep warm setting that works great. Serve with round tortilla chips - the round ones seem to not break as easy with this thick dip.
  • For individual service (midnight snack), scoop into a small bowl, grab bag of chips and enjoy.
  • To rewarm leftovers, I put a small bowl of dip (from fridge) in microwave and use the re-warm function when finished, stir and if necessary nuke a bit longer until warmed up.
  • Every once in awhile (I really don't know why), the dip is way to thick - maybe the moisture in the fresh peppers. If this looks more like day old oatmeal than a cheese dip add a small amount of regular milk. Maybe an 1/8 cup at a time. You want this to be thick so it will stay on the chip and off of your floor during a party.
  • Enjoy!

8 ounces extra-sharp cheddar cheese, grated (Use orange for these, even if you normally buy white cheddar.)
2 cups flour
1/2 teaspoon cayenne (more to taste)
pecan halves (You want pretty ones ( save the broken ones for something else.)

Steps:

  • Preheat oven to 350°.
  • Cream together butter/margarine and the grated cheese.
  • Add flour and cayenne; mix until thoroughly blended.
  • Roll into marble-sized balls and place on ungreased cookie sheet. These barely spread at all, so fairly close spacing is OK.
  • Press a pecan half onto the top of each dough ball to flatten to about 3/8 inch think.
  • Bake 15 - 17 minutes.
  • Cool completely before eating!
