TEXAS BEEF BRISKET WITH SPICY SAUCE



Texas Beef Brisket with Spicy Sauce image

This Texas beef brisket recipe is divine served alone, on a sandwich, or Tex-Mex style in grilled tortillas with rice and beans. Add a spicy sauce and you have a match made in BBQ heaven.

1 5 to 6 lb beef brisket
Terrific 10 Rub
5 cups wood chips for smoking, soaked
1 1/2 cups Mop Sauce
1 cup ketchup
3 tbsp Worcestershire sauce
1/4 cup honey

Steps:

  • Let brisket stand at room temperature 1 hr. Rub all over with 3 tbsp of the rub and place fat-side up in an aluminum pan. Cover pan with foil.
  • Heat grill to medium low (250°F) for indirect cooking. Place brisket in the covered pan on grill away from heat. Cover grill and cook 1 hr. Remove foil cover and add smoker box or wood chips to the grill. Cover grill and cook until brisket is tender, 2 to 3 hr more.
  • Allow brisket to rest, covered, for 15 min before slicing. Stir together Mop Sauce, ketchup, Worcestershire, honey, and 1 1/2 tsp extra rub and serve with brisket.

2 teaspoons cumin
1 1/2 teaspoons chili powder
1 teaspoon garlic salt
4 boneless skinless chicken breast halves

Steps:

  • Heat grill to medium heat.
  • In a small bowl mix together the spices and then sprinkle over both sides of the chicken.
  • Spray the chicken with non stick cooking spray and place on preheated grill. Cover.
  • Grill 7-10 minutes or until no longer pink in the center, turning once.
  • Serve with avocado salsa or on a salad.
  • I like to pound the chicken to an even thickness for faster and more even cooking.

This is one of the best barbecue sauces I have tasted in a long time. It can be used as a marinade, a basting sauce and a dipping sauce. I used it for pork ribs but it would be good with chicken, too.

2 teaspoons vegetable oil
2 garlic cloves, minced
1/3 cup onion, minced
3/4 cup ketchup
1/3 cup water
2 tablespoons cider vinegar
4 teaspoons brown sugar, packed
1 teaspoon chili powder
1 teaspoon dried oregano
1 teaspoon Worcestershire sauce
1/2 teaspoon ground cumin
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon liquid smoke

Steps:

  • In a saucepan, heat the oil over medium heat; fry the garlic and onion, stirring occasionally, until softened, about 3 minutes.
  • Add the ketchup, water, vinegar, sugar, chili powder, oregano, Worcestershire sauce, cumin, mustard, salt and liquid smoke; bring to a boil.
  • Reduce the heat and simmer until slightly thickened, about 3 minutes.
  • Let cool before using for marinating or basting. If using as a dipping sauce, measure off the required amount, reheat and thin with a little water.

TEX-MEX TOMATO SOUP AND GRILLED CHEESE



Tex-Mex Tomato Soup and Grilled Cheese image

1 tablespoon olive oil
2 tablespoons butter, plus some butter at room temperature for the sandwiches
2 tablespoons fresh thyme leaves, chopped
4 cloves garlic, sliced or chopped
2 onions, chopped
1 chipotle pepper in adobo, seeded and chopped, plus 1 round tablespoon adobo sauce
Salt and pepper
Salt and pepper
2 tablespoons tomato paste
One 32-ounce can San Marzano tomatoes
3 cups chicken or vegetable stock
1/3 to 1/2 cup sour cream
8 slices white or whole wheat bread
8 slices pepper Jack cheese
1/4 cup chives, finely chopped, to garnish

Steps:

  • Preheat a griddle pan for the grilled cheese over medium heat.
  • Heat a medium soup pot over medium-high heat, add the olive oil and melt 2 tablespoons butter into the oil. Add the garlic, onions, chipotle, adobo sauce and some salt and pepper. Partially cover the pot and cook to soften, 10 minutes or so. Stir in the tomato paste and cook until fragrant, 2 minutes, then deglaze the pan with 2 cups of the chicken stock and transfer to a food processor. Add the tomatoes and process until smooth. Pour the soup back into pot and add the remainder of stock. Simmer at a low bubble while you make the grilled cheese.
  • Lightly butter 1 side of the bread slices. Make the cheese sandwiches with, and grill until crispy and the cheese melts.
  • Stir the sour cream into the tomato soup and serve in shallow bowls with chives to garnish, and grilled cheese on the side for dipping.

Tex-Mex seasoned shrimp with homemade smoky grilled salsa for dipping. I serve this as a main dish but it would make a great appetizer as well.

1 pound raw jumbo shrimp, peeled, tails left on
1 tablespoon olive oil
½ teaspoon paprika
½ teaspoon chili powder
¼ teaspoon ground cumin
4 Roma tomatoes
½ large onion
½ head head garlic
1 jalapeno pepper
1 tablespoon lime juice
1 teaspoon salt
¼ cup chopped fresh cilantro

Steps:

  • Combine shrimp, olive oil, paprika, chili powder, and cumin in a large bowl. Gently stir until evenly combined. Cover and refrigerate while you prepare the salsa.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Grill tomatoes, onion, garlic, and jalapeno for 4 minutes. Flip and grill until tomatoes and jalapenos are blistered, about 4 minutes more.
  • Cut tops off the tomatoes and discard. Cut jalapeno in half, scrape the skin off, and discard seeds. Quarter the onion. Squeeze garlic cloves from their skins.
  • Place the grilled vegetables in a blender. Add lime juice and salt; blend until smooth. Add cilantro and pulse until evenly blended.
  • Transfer shrimp to the hot grill and cook for 2 minutes per side. Serve with the salsa.
