1/2 head red cabbage
1 Granny Smith apple
2 tablespoons butter
1 teaspoon fennel seeds, crushed
Kosher salt and freshly ground black pepper
1/4 cup red wine
Splash apple cider vinegar

Steps:

  • Core and slice the cabbage into thin slices. Slice the cheeks off the apples and cut into thin wedges.
  • In a large saute pan, add the butter and melt over medium heat. Add the cabbage, apples, fennel and salt and pepper, to taste, and saute until the cabbage softens and wilts about 20 minutes. Deglaze with red wine and stir in a splash of cider vinegar. Transfer to a serving bowl and serve.

1 medium onion, chopped
1/4 cup butter
1 medium head red cabbage (2 pounds) , shredded
2 medium tart apples, peeled and chopped
1 cup apple cider or apple juice
1/4 cup packed brown sugar
2 tablespoons cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
2 bacon strips, cooked and crumbled
Minced fresh parsley, optional

Steps:

  • In a large skillet, saute onion in butter until golden and tender. Add the cabbage, apples, cider, sugar, vinegar, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for about 1 hour or until cabbage and apples are tender and the liquid is reduced. Sprinkle with bacon and parsley if desired.

3 teaspoons butter
1 onion, chopped
1 granny smith apple
1/2 cup water
2 teaspoons apple cider vinegar
2 tablespoons brown sugar

Steps:

  • Remove outside leaves of cabbage.
  • With a sharp knife, chop cabbage into small pieces. Throw into colander and rinse.
  • In large stovetop pot with lid, melt 2 teaspoons of butter at medium-high.
  • Add onion to pan and sauté.
  • Add chopped cabbage to pan.
  • Peel apples, chop and add to pan.
  • Combine water with vinegar, add brown sugar and bay leaves and stir.
  • Pour liquid over cabbage mixture.
  • Bring mixture to a boil then cover and reduce heat to a low simmer for 25-35 minutes.

1 ½kg red cabbage
2 onions, chopped
4 Granny Smiths apples, peeled and cored and chopped
zest 1 orange or 2 clementines
2 tsp ground mixed spice
100g light soft brown sugar
3 tbsp cider vinegar
300ml dry cider
25g butter

Steps:

  • Peel off the outer leaves from the cabbage and discard. Quarter the cabbage, removing the tough stem, then thinly slice. Arrange a layer of the cabbage on the bottom of a large saucepan, followed by some of the onions, apples, zest, mixed spice, sugar and seasoning. Continue to create layers until you have used up the ingredients.
  • Pour over the vinegar and cider and dot the butter on top. Bring to the boil then simmer with a lid on over low heat for 1½ hrs, until tender. The cabbage will keep for 2 days, covered, in the fridge or freeze for up to 1 month. Reheat in either a pan or in the microwave.

4 cups of thinly sliced red cabbage (about 1/2 a medium cabbage)
1 cup of shredded carrot (I used a pre-shredded bag from the store)
1/4 cup of sliced green onion
1/4 cup of finely chopped cilantro leaves (optional)
1 large jalapeno, quartered & thinly sliced (optional)
1 medium granny smith apple, cut into matchstick pieces (about 1 1/2 cups)
1 cup of homemade apple cider vinegar dressing (my whisked, non-creamy version)
Sea salt, to taste
Black pepper, to taste

Steps:

  • Prepare the apple cider vinegar dressing (this takes five minutes or less & should yield about 1 cup). Whisk or shake the dressing well and give it a taste. Is it as sweet or tangy as you like it for coleslaw? If not, add a bit more vinegar, sweetener, mustard OR oil until it tastes good to you, then set aside.
  • Combine the cabbage, carrot, green onion, cilantro, jalapeno, and apple in a large mixing bowl. Pour the dressing over everything and toss well with tongs or two forks to combine. Season with sea salt & black pepper to taste. Store leftovers in the fridge for up to 5 days for the best texture & taste.

Steps:

  • Heat coconut oil over medium heat in a large skillet; cook and stir bacon, onion, and garlic until fragrant, about 5 minutes. Stir cabbage into bacon mixture and toss to coat with oil. 2 tablespoons vegetable oil
1 onion, chopped
3 medium-sized tart cooking apples, peeled, cored and cut into 1/8-inch-thick wedges
5 cups boiling water
2/3 cup red wine vinegar
2 teaspoons salt
2 tablespoons sugar

Steps:

  • Wash the head of cabbage under cold running water, remove the tough outer leaves, and cut cabbage into quarters. To shred the cabbage, cut out the core and slice the quarters crosswise into 1/8?inch-wide strips.
  • In a heavy 4 to 5-quart casserole, heat the oil over moderate heat. Add chopped onions and cook, stirring frequently for 5 minutes, or until the onions are lightly browned. Add the cabbage, stir thoroughly, add the apples, and pour in the boiling water. Bring to a boil over high heat, stirring occasionally, and reduce the heat to very low. Add red wine vinegar, salt and sugar, stir to combine. Cover and simmer for 1 1/2 to 2 hours, or until the cabbage is tender. Check from time to time to make sure that the cabbage is moist and tender. If it seems dry, add a tablespoon of boiling water. Braised red cabbage goes with almost any winter dish. It takes minutes to prepare, then two hours of gentle cooking - you need do nothing except have a glass of wine and relax.

50g/2oz butter
1 medium onion, finely sliced
2 dessert apples, peeled, cored and sliced
1kg/2¼lb red cabbage, finely sliced
100g/4oz sultanas or raisins
200ml/7fl oz sherry vinegar
salt and freshly ground pepper

Steps:

  • Melt the butter in a stainless steel or flameproof casserole over a medium heat (an aluminium pan will not work for this).
  • Fry the onion in the butter for three minutes, then add the apple and cabbage.
  • Cook for five minutes or so, until softened, then add the sultanas and the sherry vinegar.
  • Place a lid on the pan and cook for one hour, until all the vegetables are just tender.
  • Season to taste with salt and freshly ground black pepper and replace the lid. Continue to cook until the cabbage is tender and all the liquid has evaporated. This dish will keep for several days, covered, in the fridge. Simply heat it up again when ready to serve.
