4 tablespoons butter
1 boneless, skinless chicken breast, cut into small bite-size pieces
3 cloves garlic, finely minced
1 medium onion, diced
1/4 cup all-purpose flour
1 heaping tablespoon curry powder
4 cups low-sodium chicken broth
2 cups half-and-half (can also use milk or coconut milk)
1 heaping tablespoon brown sugar, or to taste
Kosher salt and freshly ground black pepper
1 Granny Smith apple

Steps:

  • Add the butter to a pot over medium heat and let it melt. Add the chicken and cook, stirring occasionally, until golden. Add the garlic and onions and cook, stirring, for a couple of minutes. Sprinkle the flour over the chicken and onion mixture and stir to combine. Stir in the curry powder and cook for 1 minute, stirring constantly. Pour in the chicken broth and stir to combine; cook for another minute to thicken. Add the half-and-half, brown sugar and some salt and pepper and cook for 5 more minutes.
  • Meanwhile, peel and dice the apple. Add the apples to the pot and cook for another 5 minutes. Taste, adjust the seasonings and serve!

2 stalks celery, chopped
1 carrot, diced
¼ cup butter
1 ½ tablespoons all-purpose flour
1 ½ teaspoons curry powder
4 cups chicken broth
½ apple, cored and chopped

1 skinless, boneless chicken breast half - cut into cubes
salt to taste
ground black pepper to taste
1 pinch dried thyme
½ cup heavy cream, heated

Steps:

  • Saute onions, celery, carrot, and butter in a large soup pot. Add flour and curry, and cook 5 more minutes. Add chicken stock, mix well, and bring to a boil. Simmer about 1/2 hour.
  • Add apple, rice, chicken, salt, pepper, and thyme. Simmer 15-20 minutes, or until rice is done.
  • When serving, add hot cream.

1/2 cup yellow onions (chopped)
2 celery stalks (chopped)
2 small carrots (diced)
1 leek (thinly sliced (white part only))
1/2 stick butter ((unsalted))
2 Tbsp all-purpose flour
2 tsp mild curry powder (or medium / hot for more burn in your mouth)
5 cups chicken stock ((or chicken broth))
1/2 apple (cored and finely chopped)
1/4 cup white rice
Salt (to taste)
Freshly ground black pepper (to taste)
1/8 tsp ground nutmeg
1/8 tsp dried thyme
1 cup heavy cream (heated (optional))
Chopped fresh parsley

Steps:

  • Saute onions, celery, leek, carrots, and butter in a large pot over medium heat until they start to soften, about 8-10 minutes.
  • Add the flour and the curry, and cook over medium heat for 5 more minutes.
  • Add the chicken broth, mix well, and bring to a boil. Simmer for about 30 minutes.
  • Add the apple, rice, chicken, salt, pepper, nutmeg and thyme. Simmer for 15 minutes, or until the rice is done.

This vivid version includes chicken broth, coconut milk, lentils, and plenty of spices. This recipe has been adapted from "Curries & Bugles: A Memoir & Cookbook of the British Raj," by Jennifer Berman (HarperCollins; 1990).

1 tablespoon finely grated fresh ginger
1 teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper, or to taste
1 dried bay leaf
1 tablespoon vegetable oil
3 tablespoons ghee or unsalted butter
1 large onion, finely chopped (about 1 cup)
1 can (13 1/2 ounces) light coconut milk
1 quart homemade or low-sodium store-bought chicken stock
6 tablespoons masoor dal or split yellow peas
2 sprigs fresh cilantro
3 tablespoons basmati rice
1/2 teaspoon tamarind concentrate
Garam masala, for sprinkling (optional)

Steps:

  • Process garlic, ginger, turmeric, coriander, cumin, cayenne, bay leaf, and oil in a food processor to form a paste.
  • Melt ghee or butter in a saucepan over medium heat. Add onion, and cook until soft, 4 to 5 minutes. Add spice paste, and cook, stirring, 3 minutes.
  • Add coconut milk, and simmer 5 minutes. Stir in stock, masoor dal or split peas, and cilantro, then cover and bring to a boil. Reduce heat, and simmer 15 minutes. Add rice, and cook 15 minutes.
  • Pour through a fine sieve into a clean saucepan, pressing on solids to extract as much liquid as possible. Stir in tamarind concentrate, and bring to a simmer. Serve sprinkled with garam masala.

1 large onion, sliced

1 bay leaf

1 large Spanish onion, chopped
1/4 cup black mustard seeds
1 tablespoon garam masala
2 teaspoons tandoori spice mix
2 teaspoons curry powder
2 teaspoons kosher salt

1 (28 ounce) can whole tomatoes, drained and diced
6 cups vegetable stock
1 lb brown lentils, rinsed and picked over
1 cup coconut milk
1 bunch fresh spinach, rinsed well and chopped

Steps:

  • Puree the ginger and garlic in a blender or food processor.
  • Heat oil and add onion and ginger and garlic, until tender.

  • Add in garam masal, tandoor spice mix, curry salt, cardamom and cayenne and stir to coat onion, ginger and garlic.
  • Add the tomatoes and simmer for 5 minutes.
  • Add the stock and lentils and bring the mixture to a boil.
  • Reduce heat, partially cover and simmer for 1 hour, until the lentils are tender Stir in coconut milk and simmer 2 minutes.
  • Remove from heat and stir in spinach and lemon juice and sugar (optional).
  • Garnish with cilantro.

1 onion, chopped
4 cloves garlic, minced

  • Add carrot, apple, potato, dhal, and chicken stock to pan; simmer, covered, for about 15 minutes or until vegetables are just tender. Discard cardamom pods and curry leaves.
  • Blend or process soup mixture, in batches, until pureed; return to pan. Add tamarind, lemon juice, coconut milk and fresh coriander leaves; stir until heated through.

20g butter
2 tbsp olive oil
1 onion, finely chopped
2 celery sticks, chopped
3 carrots, peeled and chopped
1 parsnip, peeled and chopped
2 garlic cloves, chopped
1 thumb-sized piece ginger, peeled and grated
1 eating apple, cored and chopped
1½-2 tbsp medium curry powder
1 tsp ground cumin
¼ tsp sweet smoked paprika
1.2l hot chicken stock
1 tbsp tomato purée
100g basmati rice
1 tbsp mango chutney
½ lemon, juiced
½ small bunch of coriander, shredded
yogurt, to serve

Steps:

  • Heat the butter and olive oil in a casserole dish and fry the onion and celery with a pinch of salt for 10-12 mins, or until softened and translucent. Stir in the carrots, parsnip, garlic, ginger and apple and cook for 1 min more. Stir through the curry powder, cumin and paprika. Add the stock and tomato purée and season to taste. Reduce to a low simmer, cover and cook for 40 mins.
  • Rinse the rice and cook for 10 mins in boiling water. Blitz the soup until smooth with a blender. Drain the rice and stir through the soup with the mango chutney, lemon juice and half the coriander. Check for seasoning, then ladle into bowls and top with the remaining coriander and yogurt.

One half-pound of cooked chicken (finely diced or shredded)
Medium onion (finely chopped)
2 cloves garlic (minced)
3 teaspoons curry powder
2 tablespoons olive oil
Half of a tart apple (about ¼ cup's worth, peeled & finely chopped)
¼ cup carrot (very finely chopped)
¼ cup celery (very finely chopped)
2 Serrano chili peppers (finely chopped)
3 tablespoons flour
4 cups chicken broth
16- oz. can of tomatoes
1 tablespoon parsley (chopped)
2 teaspoons lemon juice
1 teaspoon sugar
2 whole cloves
salt & ground (black pepper, to taste)

Steps:

  • In a large saucepan, heat the oil until bubbling.
  • Saute the onion, garlic and curry powder in the heated oil, and season with salt & pepper to taste. Continue cooking until the onion turns a little translucent.
  • Mix in carrot, celery, chilis, and apple. Taste and test if you need to add any more salt and pepper.
  • Cook on medium-low heat for about 5 minutes, stirring consistently, until the vegetables soften.
  • Sprinkle the flour over the freshly-cooked mixture, and stir well until the flour is worked in and no white is shown.
  • Stir in the broth, a few ounces at a time, then add tomatoes and all tomato liquid (do not discard).
  • Add parsley, lemon juice, cloves, sugar, and bring to a boil.
  • Once it reaches a boil, bring down to simmer and add the chicken.
  • Stir every 15-20 minutes, and allow cooking between 90 minutes and four hours. The lower the temperature will require a longer cooking time.
  • Serve with warm naan bread.

Steps:

  • In a large stockpot, over medium, add the onions, carrots, celery stalks and butter. Cook until tender, but do not burn them. Stir in the flour and curry and cook for 3 minutes. Pour in 8 cups of chicken stock and let simmer for 30 minutes. Then add in the remaining ingredients, except the hot cream. Let simmer for 15 minutes and then add in 1 cup hot cream. Ladle into serving bowls and serve.

This soup is a British-Indian cuisine hybrid, the result of colonizers' encounters with rasam - a spiced, soupy dish often enriched with lentils, sometimes served over rice - from Tamil Nadu, a region in southern India. "Milagu tannir," which means pepper water, was how Tamil people described some versions of rasam; it morphed into mulligatawny when the British made it thick, chunky and meaty. In the cookbook "Classic Indian Cooking," the author Julie Sahni wrote that she fell in love with mulligatawny when she first encountered it in Germany. "The present version bears no resemblance whatever to the traditional rasam," she said, adding, "Because of its unorthodox origin, Indian cooks have had a field day exercising their creative genius with it." This version is thickened with a roux, masoor dal and coconut milk, and bolstered with chicken thighs and tart apple. Curry powder is not a traditional Indian ingredient, but it reflects the dish's British influence.

Steps:

  • Warm the oil in a large pot or Dutch oven over medium-high heat. Add the onion, season with salt and cook, stirring occasionally, until translucent and shrunken, about 8 minutes. Add the garlic and ginger, and cook, stirring, until fragrant and softened, about 2 minutes. Add the mustard seeds, turmeric, curry powder, cayenne and cumin seeds, and cook, stirring constantly, until the mustard seeds pop and sizzle, about 90 seconds. Add the carrot, celery and apple, and cook, stirring, until just starting to soften, about 2 minutes. Stir in the tomato paste, then the flour, and cook, stirring well, to uniformly coat all the ingredients, about 2 minutes.
  • Add the chicken, masoor dal and chicken broth. Season lightly with salt. Bring to a boil, stirring to scrape up any browned bits sticking to the bottom of the pot. Reduce the heat to maintain a simmer.
  • Cover the pot and cook for 10 minutes, then uncover and simmer for 15 to 20 minutes more, until the chicken and carrots are tender, the soup is creamy, and the flavors have blended.
  • Stir in the coconut milk and squeeze in the lime juice. Serve in bowls topped with a dusting of cayenne, if desired.

  • Boil the water, add the stock cubes and, once the stock cubes have dissolved, add the rest of the basic ingredients. Cover the pan and bring back to the boil, then simmer for 10 minutes with the pan still covered. Add the fried onions, chutney and salt and pepper. Continue to simmer for another 5 minutes (pan still covered). Leave to cool for a while and then blend the soup in order to incorporate the onions fully.
  • Adjust the seasoning if required, e.g. spices, lime, chutney, salt & pepper. If you prefer a thicker consistency, simmer the soup until it reduces as required. Serve the soup and add the bacon bits and the chopped cucumber and tomatoes into each bowl, garnish with some fresh coriander. Alternatively, serve the flavourings in separate bowls so that each person can add what they like.
  • If you'd like a more substantial meal you use additional flavouring ingredients, e.g. quartered hard-boiled eggs, boiled rice, prawns, chopped spring onions, sliced chillies etc.

  • Start with the remains of your roast chicken. You need to do this about 2 hours before you want to make the mulligatawny. Strip all the good meat off the carcass, remove the skin but don’t discard it, and put the meat in a bowl in the refrigerator.
  • Fill a good-sized saucepan with two pints water and three heaped teaspoons ground sea salt. Break the carcass apart with your hands, add all the pieces together with the skin to the pan and set it on a high heat. As soon as it starts to boil, reduce the heat to low, cover the pan and let it simmer away for two hours with an occasional stir. Drain the stock through a sieve into a bowl and set it aside – stock done.
  • Heat the coconut oil in a good-sized saucepan on a medium heat. Add the roughly chopped onions, give them a good stir and turn the heat down to medium-low. You want the onions to soften and to get themselves a good golden color – not crisply browned – but a good golden color. That’ll take about ten minutes with some attentive stirring.
